EASY APPLE TURNOVERS
Apple pie fans will love this easy twist on the classic in turnover form! Made with Pillsbury™ pie crust and fresh apples, every bite delivers on the flavors you enjoy in a novel way.

Steps:
- In 2-quart saucepan, mix apples, brown sugar, 1 tablespoon of the water and the lemon juice. Cook over medium heat, stirring occasionally, until bubbly. Reduce heat to low; cover and cook 6 to 8 minutes, stirring occasionally, until apples are tender.
- In small bowl, mix flour, granulated sugar and salt. Gradually stir into apple mixture, cooking and stirring until mixture thickens. Remove from heat; stir in butter and vanilla. Cool 15 minutes.
- Meanwhile, heat oven to 375°F. Let pie crust pouch stand at room temperature for 15 minutes.
- Remove pie crust from pouch; unroll crust on ungreased cookie sheet. Spoon cooled fruit mixture evenly onto half of crust to within 1/2 inch of edge.
- In small bowl, beat egg and 1 tablespoon water; brush over edge of crust. Fold untopped half of crust over apple mixture; firmly press edge to seal. Flute edge; cut small slits in several places in top crust. Brush top with remaining egg mixture.
- Bake 25 to 35 minutes or until crust is golden brown. Serve warm or cool.

EASY WEEKNIGHT CHICKEN POT PIE TURNOVERS

- Heat oven to 400°F.
- In 2-quart saucepan, melt butter over medium heat. Stir in frozen vegetables; cook 3 minutes. Sprinkle flour over vegetables; stir well. Cook 1 minute.
- Beat broth into vegetable mixture with whisk; cook over medium-high heat, beating constantly, 2 to 3 minutes or until thickened.
- Stir in chicken, whipping cream, salt and pepper; continue cooking 2 minutes. Remove from heat; cool 10 minutes.
- Meanwhile, unroll crusts on work surface; lightly roll crusts to make slightly larger. Cut 5-inch diameter circles in crust, reserving scraps to reroll to cut a total of 8 circles. Place on 2 ungreased large cookie sheets.
- Spoon 2 to 3 tablespoons chicken filling into each crust; fold over. Press with fork to seal.
- Bake about 15 minutes or until golden brown.

- Preheat oven to 375°. Unroll crescent dough and separate into four rectangles; place on an ungreased baking sheet. Press perforations to seal. Place 1/4 cup pie filling on one half of each rectangle. Fold dough over filling; pinch edges to seal. Bake 10-12 minutes or until golden. , Place confectioners' sugar in a small bowl; stir in enough milk to achieve a drizzling consistency. Drizzle over turnovers. Serve warm.

- Preheat oven to 425 degrees F (220 degrees C).
- Spread pie crust pastries onto a flat surface and cut rounds from the dough using a 5-inch round cutter. Spoon 1 tablespoon blueberries into the center of each round; sprinkle 1/4 teaspoon sugar over each portion of blueberries. Dust blueberries with cinnamon.
- Fold dough over the filling and seal edges by pressing with a fork. Arrange pies onto a baking sheet. Brush tops of hand pies with beaten egg. Sprinkle turbinado sugar over the pies.
- Bake in preheated oven until browned, 18 to 20 minutes.

Try any fresh or frozen fruit for these handheld pies (we used blueberries). A little cinnamon is great with apples and pears. If using frozen fruit, increase sugar to 1/2 cup.

- In a medium bowl, combine sugar, cornstarch, and salt. Add fruit and lemon zest; toss to coat. On a lightly floured work surface, roll each sheet of pastry into an 11-by-18-inch rectangle and cut into eight 4 1/2-by-5 1/2-inch rectangles.
- Dividing evenly, place filling lengthwise on one half of each rectangle, leaving a 1/2-inch border. Combine 1 egg yolk with 1 teaspoon water. Brush border with egg wash; fold dough over filling and press edges to seal well. With the tip of a sharp knife, cut vents into pastry. Freeze turnovers.
- To serve, preheat oven to 400, with rack in lower third. Place desired number of frozen turnovers on a parchment-lined baking sheet. Combine 1 egg yolk with 1 teaspoon water; brush egg wash onto turnovers and sprinkle with coarse sugar (if using). Bake until turnovers are deep golden brown and juices are bubbling, 15 to 17 minutes, rotating sheet halfway through.

- Heat oven to 425°F. Line large cookie sheet with cooking parchment paper. Remove pie crusts from pouches; unroll crusts into 11-inch circles onto cutting board. Stack crusts on top of each other. With pizza cutter or sharp knife, cut stacked crusts into 6 wedges; separate into 6 stacks of two.
- Spoon pie filling evenly in center of 6 of the wedges. Moisten edges of pie crust with water. Top each with matching pie crust wedge, firmly pressing edges. Press edges with fork to seal. Place turnovers on cookie sheet.
- In small bowl, mix sugar and cinnamon. Brush tops of turnovers lightly with water; sprinkle tops with sugar-cinnamon mixture.

- Sprinkle your work surface liberally with flour, and add a bit on the baking pan as well. This will keep the pie crust from sticking.
- Roll out your pie crust, and use a round shape (cookie cutter, cup, bowl) to cut the dough in a circle. Don’t go smaller than about 3 ½ inches, or you won’t be able to fit a tablespoonful of filling inside. A five-inch circle should fit two tablespoons of pie.
- Spoon in your cherry pie filling, then fold your circle over and crimp the edges shut. If you prefer round turnovers, you can use a bit more cherry pie filling and place a second circle on top of your first, crimping shut all around.
- If you’d like to fry your turnovers small sizes are ideal. To fry, lower gently into the skillet of hot oil. Fry at 350 degrees for 1-2 minutes, turning as needed so both sides cook evenly. Drain on a paper towel.
