GLUTEN-FREE BAKED OATMEAL

Number Of Ingredients 11

3 cups Bob's Red Mill gluten-free oats
1/2 cup pure maple syrup
1 tsp. baking soda
1 tsp. cream of tartar
1/4 cup ground flaxseed meal
2 tsp. ground cinnamon
1 1/2 cups organic coconut milk (or water )
2 large organic, pasture-raised eggs (room temperature )
1/4 cup organic coconut oil (or butter )
1 tsp. pure vanilla extract
2 T. organic molasses (optional )

Steps:

  • Preheat the oven to 350° F. Lightly spread coconut oil into a 8x8" glass baking dish.
  • Melt the coconut oil in a small saucepan over medium heat.
  • Gently stir together all of the dry ingredients in a large mixing bowl, then add the wet ingredients. Stir until combined.
  • Spread in the glass baking dish. Bake for 28-30 minutes. The edges should be lightly browned.
  • Cut and serve or store in the fridge for later!

1/2 cup raisins
1-1/2 cups boiling water
2 cups gluten-free old-fashioned oats
1/3 cup packed brown sugar
1 teaspoon pumpkin pie spice
1/4 teaspoon salt
1-1/4 cups fat-free milk
1 medium apple, peeled and finely chopped
2 tablespoons butter, melted
1/4 cup chopped walnuts

Steps:

  • Place raisins in a small bowl. Cover with boiling water; let stand for 5 minutes., Meanwhile, in a large bowl, combine the oats, brown sugar, pie spice and salt. Stir in the milk, apple and butter. Let stand for 5 minutes. Drain raisins; stir into oat mixture., Transfer to an 8-in. square baking dish coated with cooking spray. Sprinkle with walnuts. Bake, uncovered, at 350° for 30-35 minutes or until a knife inserted in the center comes out clean.

3 cups rolled oats, gluten-free*1 cup almond milk1/2 cup sugar1/3 cup dairy-free buttery spread, melted**2 eggs2 teaspoons baking powder1 teaspoon vanilla extract3/4 teaspoon salt

Steps:

  • Preheat oven to 350°. Grease a 9″ x 13″ or 9″ baking pan with cooking spray.
  • In a large bowl mix the melted buttery spread and all of the rest of the ingredients together until combined. Spread into the baking pan.
  • Bake the 9″ x 13″ baking dish for 30 minutes or if using a 9″ dish bake it for 45 minutes.
  • Serve warm.
