EASY BUCKEYE RECIPE (PEANUT BUTTER BALLS)
Steps:
- In a mixing bowl, add peanut butter, butter and vanilla extract and mix everything until smooth.
- Add powdered sugar and protein powder gradually and continue mixing.
- Freeze this mixture for about 20 minutes so that it's easier to handle.
- Scoop out small portions of the mixture and roll them into balls.
- Place them on a cookie tray, lined with wax paper and stick a toothpick in the center of each ball. You may need to chill the tray in the freezer for another 10 minutes if the balls have started to become too soft and the toothpick is not sticking securely.
- Dip each ball three quarters of the way into a bowl of melted chocolate and place them on a cookie tray, lined with wax paper.
- Optional: Dip the ball in chocolate first and then roll them around in a bowl of chopped nuts and then place them on wax paper.
- Remove the toothpicks gently and smooth out the hole with your fingers and enjoy!

BUCKEYE BARS
Great recipe my mom got at her office! It's an easy way to get the delicious taste of a buckeye with a little less work. I usually keep these in the fridge to keep them from getting too soft or melted.

- Spray the casserole dish lightly with non-stick cooking spray, or coat the inside with a little butter or neutral oil.
- Using a stand mixer, combine the peanut butter, powdered sugar, melted butter, vanilla extract and salt. Start on the lowest setting (so powdered sugar doesn't fly everywhere!) and combine until everything is mixed evenly.
- Pat the peanut butter mixture evenly into the casserole dish, reaching into all the corners and smoothing the top as best you can.
- Place the chocolate chips and 2 tsp butter in a microwave-safe bowl. Microwave for approximately 90 seconds, stopping every 30 seconds to stir the mixture, until all the chips are melted and the chocolate is smooth.
