1 ½ pounds lean ground beef
½ onion, finely chopped
½ cup shredded Colby Jack or Cheddar cheese
1 teaspoon soy sauce
1 teaspoon Worcestershire sauce
1 egg
1 (1 ounce) envelope dry onion soup mix
1 clove garlic, minced
1 tablespoon garlic powder
1 teaspoon dried parsley
1 teaspoon dried basil
1 teaspoon dried oregano
½ teaspoon crushed dried rosemary
salt and pepper to taste

Steps:

  • Preheat a grill for high heat.
  • In a large bowl, mix together the ground beef, onion, cheese, soy sauce, Worcestershire sauce, egg, onion soup mix, garlic, garlic powder, parsley, basil, oregano, rosemary, salt, and pepper. Form into 4 patties.
  • Grill patties for 5 minutes per side on the hot grill, or until well done. Serve on buns with your favorite condiments.

We keep homemade hamburgers simple and use quality meat, salt and pepper. When forming the hamburger patties, be careful not to over work the mixture since this can make the burgers tough when cooked.

Yield Makes 3 (1/3 pound) hamburgers

1 pound (450 grams) ground beef chuck or round
Salt and fresh ground black pepper
Butter, as needed

Steps:

  • Take the beef out of the refrigerator and allow it to sit at room temperature for about 5 minutes before forming the patties. Form beef into three 5 to 6 ounce hamburger patties. Use your thumb to imprint a dimple into the middle of each burger. (This prevents the middle of the burgers from puffing up while cooking). Season both sides of the hamburgers with salt and pepper.
  • Melt 1 tablespoon of butter in a cast iron pan over medium heat. Cook hamburger patties 3 to 4 minutes on each side, depending on how well done you like it.
  • Rest burgers covered loosely with aluminum foil for 5 minutes then serve on a buttered bun with lettuce, tomatoes and onion (or how you like it).

2 pounds Angus ground beef or lean ground beef
½ onion (minced)
1 tablespoon garlic powder
1 tablespoon dried rosemary
1 tablespoon dried basil
2 tablespoons olive oil
2 eggs
salt and pepper to taste

Steps:

  • In a large bowl, combine the ground beef, minced onion, garlic powder, basil, rosemary, salt and pepper to taste.
  • In a smaller bowl, whisk together the eggs before adding to the ground beef mixture. Add the olive oil to the mixture and combine well.
  • In a large tray lined with wax or parchment paper, measure 4 ounces or 10 patties and set in the tray. Let the patties marinate for 2 hours or overnight. You can use a kitchen food scale to measure the patties.
  • Grill the burger patties for 3-4 minutes on each side over high heat. Enjoy!

2 medium sweet potatoes, peeled and cubed
1 (15 ounce) can red kidney beans, rinsed and drained
¼ red onion, grated
1 clove garlic, grated
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon ground cumin
1 teaspoon paprika
½ teaspoon cayenne pepper
¾ cup cooked quinoa
1 tablespoon olive oil, or as needed

Steps:

  • Place sweet potatoes into a large pot and cover with water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and place into a bowl.
  • Mash sweet potatoes, kidney beans, onion, and garlic together until it comes together. Mix in salt, black pepper, cumin, paprika, and cayenne. Add cooked quinoa and combine. Shape mixture into patties.

2 Tbsp chia seeds
Spices (I like 1 tsp paprika, 1 tsp oregano, 1 tsp onion flakes, ½ teaspoon garlic powder. )
Salt and pepper

Steps:

  • Place all ingredients in a bowl, mix thoroughly with your hands preferably
  • Roll into balls, portioning based on the size of the final patty or meatball you want
  • Place the balls on a plate and refrigerate for 20-30 mins
  • Heat a frying pan or bbq to a medium heat
  • Press the refrigerated balls flat into patty shapes and cook over a medium heat, until browned and cooked through, for small patties like pictured this was around 5 minutes each side.
