PEANUT BUTTER CHOCOLATE CHIP ZUCCHINI CAKE
Years ago, I added some zucchini to a peanut butter bar I had created, and this time I wanted to try it with a cake. The zucchini makes it super moist but doesn't get in the way of the chocolate and peanut butter goodness.-Marilyn Blankschien, Clintonville, Wisconsin

- Preheat oven to 350°. In a large bowl, cream peanut butter, butter and brown sugar until blended. In another bowl, whisk 1-1/4 cups flour, salt and baking soda; add to creamed mixture. Beat just until mixture is sandy. Remove 1/2 cup crumb mixture for topping., To remaining mixture, beat in remaining flour, egg, vanilla and buttermilk. Stir in zucchini. Spread into a greased 9-in. round baking pan. Stir cinnamon into reserved topping. Sprinkle over batter; top with chocolate chips., Bake until a toothpick inserted in center comes out with moist crumbs, 20-25 minutes. Cool in pan on a wire rack.

- Preheat the oven to 350 degrees F (175 degrees C).
- Combine oats, whole wheat flour, brown sugar, cinnamon, baking powder, and baking soda in a large bowl. Stir in peanut butter, margarine, and egg. Add shredded zucchini and mix thoroughly.
- Drop spoonfuls of cookie dough onto ungreased cookie sheets.
- Bake in the preheated oven until edges are lightly browned, about 12 minutes. Cool for 3 minutes before transferring to wire racks.

QUICK & EASY CHOCOLATE PEANUT BUTTER CAKE
This recipe came from a lady who used to make this for a bingo consession stand. It is soo good and soo easy. The hardest part is finding plain chocolate cake mix in a box! But I am sure you substitute a homemade chocolate cake as well. Just make sure it is plain chocolate because anything else (devils food, double choc, etc.) may be too rich. If you want, you could substitute light or sugar free items in order to be a little healthier.

- Make cake as directed on box. (I always use the 13x9 pan.).
- FROSTING:.
- In a medium bowl, mix the cool whip, pudding, and peanut butter until smooth.
- Frost the cooled cake with the frosting. Put in the refrigerator for an hour or so (to give the frosting time to set up).
- * Optional- If you like, you may drizzle chocolate syrup across the top for a pretty presentation.
- ** Cooking time includes chill time.

- Preheat the oven to 325 degrees F (165 degrees C). Line a 12-cup muffin tin with paper liners.
- Mix graham cracker crumbs, butter, and brown sugar together in a bowl. Spoon evenly into the prepared muffin cups and press to flatten.
- Beat cream cheese in a mixing bowl with an electric mixer until smooth and creamy. Mix in white sugar and vanilla until fluffy. Mix in milk, then eggs, one at a time; mix until smooth. Transfer 1/2 of the batter to a separate bowl.
- Add peanut butter to one bowl of the cream cheese mixture; beat until well blended. Divide mixture among the muffin cups.
- Add melted chocolate chips to the remaining cream cheese mixture and beat until creamy and smooth. Pour into the muffin cups and sprinkle chopped peanuts over top.
- Bake in the preheated oven until almost set, 20 to 25 minutes. Remove from the oven and place on a wire rack until completely cooled. Enjoy immediately or refrigerate before serving.
