EASY COD AND SHRIMP CROQUETTES

Easy Cod and Shrimp Croquettes image

These croquettes have been prepared by cooks in Spain and Portugal for centuries. This version is baked to cut down on the overall fat.

Provided by LydiaF

Categories     Appetizer     Main     Tapas

Number Of Ingredients 10

1 lb cooked white fish (broken into small pieces (I used cod))
4 oz cooked shrimp (cut into small pieces)
2-3 medium potatoes (fist sized, cooked and mashed (between 1 ½ - 2 cups))
1/4 cup minced onion (I used it raw, but saute them to mellow the flavor if you prefer)
Salt and pepper to taste
1/4 cup chopped fresh parsley
2 eggs (beaten with a little water)
1/2 cup flour (seasoned with a little salt, pepper and paprika (to taste), for dredging)
1 cup plain bread crumbs (for dredging)
cooking spray (I use olive oil in a spritzer)

Steps:

  • Preheat the oven to 450°F/230°C. Prepare a baking tray with cooking spray. Set up a breading station with seasoned flour, beaten egg and bread crumbs.
  • Mix the fish, shrimp, onion, parsley, salt and pepper together in a large bowl. Add a tablespoon of milk if the mix doesn't hold together. Taste and adjust the seasoning before forming them into small balls or oblong shapes. You should have two dozen, depending on the amount of mix you use.
  • After the croquettes have been formed, bread them by dipping first into the flour, then the egg, then the bread crumbs. Arrange on the prepared baking sheet.
  • Spray the tops of the croquettes with cooking spray and transfer to the hot oven.
  • Bake for 20 - 30 minutes or until they take on a nice color. Flip the croquettes once or twice and apply more cooking spray as needed.
  • Serve with your favorite tartar sauce, ketchup and aioli

CINDY'S SHRIMP AND CRAB CROQUETTES

Cindy's Shrimp and Crab Croquettes image

Provided by Food Network

Categories     appetizer

Time 3h10m

Yield 4 servings

Number Of Ingredients 32

2 cups water
1 cup long-grain rice (recommended: Zatarain's)
4 tablespoons butter
1 pound fresh shrimp, peeled, deveined and finely chopped
8 ounces crabmeat
1 cup finely chopped green onions
1/2 cup finely chopped seeded jalapenos
4 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon Essence, recipe follows
1/2 cup all-purpose flour
4 eggs, lightly beaten
Vegetable oil or peanut oil for frying
White saltine cracker crumbs
Garlic Aioli, recipe follows
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
4 egg yolks
2 tablespoons Dijon mustard (recommended: Grey Poupon) or Creole mustard
10 cloves garlic
1 1/2 cups extra virgin olive oil
2 tablespoons fresh lemon juice
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon cayenne pepper

Steps:

  • Bring 2 cups salted water to a boil in a medium pot. Add the rice, reduce heat to medium-low and cook until done, about 20 to 25 minutes. Remove pot from the heat and add the butter to the warm rice and stir to incorporate. Next, add the shrimp, crab, onions, jalapenos, lemon juice, salt, pepper and Essence and stir to combine. Stir in flour and eggs. Be careful not to break up the crabmeat when mixing the ingredients. Transfer the mixture to a storage container and refrigerate for 2 hours.
  • In a large heavy-bottomed sauce pan, pour enough oil to fill the pan about a 1/3 of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 360 degrees F. (If you don't have a thermometer, a cube of bread will brown in about 3 minutes.)
  • Remove the croquette mixture from refrigerator and shape into 1/2-inch to 3/4-inch thick patties and coat with white cracker crumbs. Use an ice cream scoop to keep portion sizes the same.
  • Fry the croquettes until golden brown on both sides. Drain on paper towels and season with salt. Serve with Garlic Aioli.
  • Combine all ingredients thoroughly.
  • Recipe from "New New Orleans Cooking," by Emeril Lagasse and Jessie Tirsch Published by William Morrow, 1993.
  • Combine the egg yolks, mustard and garlic cloves in a food processor. While processing, add 1 cup of the olive oil in a fine stream to make an emulsion. Add lemon juice, salt, black pepper and cayenne, and then the remaining oil. Process until thick and smooth.

SALT-COD CROQUETTES

Salt-Cod Croquettes image

These croquettes are made from bacalhau, the dried-fishstaple of Latin America and Western Europe.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers     Finger Food Recipes

Yield Makes about 4 dozen

Number Of Ingredients 11

1 pound salt cod
1 pound Yukon gold potatoes, peeled and cut into 1-inch chunks
Coarse salt
5 tablespoons olive oil
1 cup finely chopped onion
2 garlic cloves, minced
1/4 cup finely chopped fresh flat-leaf parsley
Freshly ground pepper
2 large eggs, lightly beaten
1 cup plain dried breadcrumbs
1 1/2 quarts canola oil

Steps:

  • Cover cod with cold water in a large bowl; cover with plastic wrap. Refrigerate 12 hours, changing water twice.
  • Drain and rinse cod. Transfer to a large saucepan; cover with cold water. Bring to a boil. Reduce heat; simmer 5 minutes. Drain and rinse cod. Wrap in a clean kitchen towel, and roll back and forth until cod is dry and finely shredded. Shake into a small bowl; set aside.
  • Cover potatoes with cold water in a clean large saucepan; season with salt. Bring to a boil; reduce heat, and simmer until tender, about 15 minutes. Drain potatoes, then mash in saucepan; set aside.
  • Heat olive oil in a large skillet over medium heat until hot but not smoking. Add onion and garlic; cook, stirring occasionally, until onion is translucent, about 3 minutes. Reduce heat to medium-low; stir in cod. Cook until it looks dry, about 3 minutes. Stir in parsley. Season with salt and pepper. Transfer to a bowl; let cool.
  • Stir eggs and reserved potatoes into cod mixture, mashing ingredients to combine. Mold about 1 tablespoon mixture into a log (slightly taper ends) about 2 inches long. Repeat with remaining cod mixture. Roll logs in breadcrumbs.
  • Heat canola oil in a large saucepan over medium-high heat until it registers 360 degrees on a deep-fry thermometer. Line a baking sheet with paper towels. Working in batches to avoid crowding, fry logs, turning occasionally, until just golden brown, about 1 minute. With a slotted spoon, transfer to lined sheet to drain. (Adjust heat between batches as necessary to keep oil at a steady temperature.) If not serving immediately, keep warm in a 275 degree oven up to 30 minutes.
