2 packages (8.8 ounces each) ready-to-serve long grain and wild rice
1/4 cup butter, cubed
2 celery ribs, chopped
1 medium onion, chopped
3 tablespoons all-purpose flour
1-1/2 cups half-and-half cream
1 teaspoon seafood seasoning
3/4 teaspoon salt
1/2 teaspoon hot pepper sauce
1/4 teaspoon pepper
1-1/2 pounds uncooked shrimp (31-40 per pound), peeled and deveined
2 cans (6 ounces each) lump crabmeat, drained
1 cup shredded Colby-Monterey Jack cheese

Steps:

  • Preheat oven to 350°. Spread rice into a greased 13x9-in. baking dish. In a large skillet, heat butter over medium-high heat. Add celery and onion; cook and stir until tender, 6-8 minutes. Stir in flour until blended; gradually whisk in cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes., Stir in seafood seasoning, salt, pepper sauce and pepper. Fold in shrimp and crab. Spoon over rice. Sprinkle with cheese. Bake, covered, until shrimp turn pink, 40-45 minutes. Let stand 5 minutes. To Make Ahead: Can be made a day in advance. Prepare recipe as directed, cooling sauce slightly before adding shrimp and crab. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake as directed.

1 cup uncooked white rice
1 pound crab meat
2 (12 ounce) packages frozen shrimp, thawed
2 cups mayonnaise
1 cup chopped onion
2 cups milk
1 teaspoon hot pepper sauce
½ cup sliced almonds
10 buttery round crackers, crushed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 3 quart casserole dish.
  • In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes.
  • Combine crab meat, shrimp, rice, mayonnaise, onion, milk, hot sauce, and almonds in casserole dish. Mix well.
  • Cover top of casserole with crumbled crackers. Bake, uncovered, in preheated oven for 30 to 40 minutes, or until casserole is bubbling.

1 medium onion, chopped (about 1/2 cup)
1 cup chopped celery
1 (6 1/2 ounce) can crabmeat, drained or 1 1/2 cups cooked crabmeat, with cartilage removed
1 (4 1/2 ounce) can shrimp, rinsed and drained or 1 cup cleaned cooked shrimp
1 cup mayonnaise
1 teaspoon Worcestershire sauce
1/2 teaspoon salt
1/8 teaspoon pepper
1 cup dry breadcrumbs
2 teaspoons butter or 2 teaspoons margarine, melted

Steps:

  • Heat oven to 350 degrees.
  • Mix all ingredients except bread crumbs and melted butter.
  • Pour mixture into ungreased 1-quart casserole or 6 individual baking shells.

1 teaspoon Worcestershire sauce
3 tablespoons ketchup
1 chopped onions
1 large green bell pepper, chopped
1 ½ cups cooked crabmeat
1 (4 ounce) can small shrimp, drained
1 cup diced celery
salt and pepper to taste
¼ cup dry bread crumbs

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large pot of salted boiling water, cook pasta until al dente. Drain, and transfer to a large bowl.
  • Add mayonnaise, Worcestershire sauce, ketchup, and onion to the noodles; mix well. Stir in green pepper, crab, shrimp and celery. Salt and pepper to taste. Spoon mixture into an 8x8 inch casserole dish. Sprinkle bread crumbs to taste over the casserole.
  • Bake 35 minutes in the preheated oven, until brown and bubbly.

This is from my mother-in-law. She got the recipe from a friend and we have it quite often. It is great served over rice with a nice green vegetable. When I serve it people always ask for seconds (and some for third helpings!).

2 lbs cooked crabmeat
2 lbs cooked shrimp
1/2-1 cup butter
1/2 cup flour
1 (8 ounce) jar Cheese Whiz
3 cups milk
2 tablespoons good quality sherry wine
1 (4 ounce) package Ritz crackers
2 tablespoons butter, melted

Steps:

  • Melt stick of butter over low heat, add flour and stir until well blended.
  • Remove from heat and gradually stir in milk and return to heat.
  • Cook stirring constantly until thick and smooth.
  • Stir in cheese whiz and sherry and remove from heat.
  • Fold in crab and shrimp and pour into buttered casserole dish.
  • Crush the crackers and stir into the 2 tbsp of melted butter.
  • Sprinkle the buttered cracker crumbs over the top of the casserole and sprinkle with paprika if desired.
  • Bake at 350 degrees until crumbs are lightly browned and casserole is bubbly.
  • Note: 3 1/2 lbs raw shrimp= 2 lbs cooked shrimp.
  • Also you can make this ahead of time and freeze minus the cracker topping until ready to use and thaw completely before baking.
  • Because it makes such a large amount you can also divide in half and use one now and freeze the other dish.
