CREAMED ONIONS
This dish is a perfect addition to the traditional holiday turkey dinner. In my family, neither Thanksgiving or Christmas dinner would be complete without serving creamed onions.

Steps:
- Fill a large stock pot with water and heat to a rolling boil.
- Add unpeeled onions and blanch for about 3 minutes.
- Drain and allow onions to cool.
- Re-fill stock pot with water and again heat to boiling temperature.
- Peel each onion by cutting the root end, not the tail end) and then squeezing the onion from its skin.
- Add the onions to the boiling water and cook until fork tender but not mushy.
- Meanwhile, stir together all remaining recipe ingredients in a medium saucepan and cook over medium heat, stirring constantly, until boiling. Continue to cook and stir about one more minute, until sauce has thickened.
- Combine the fork tender cooked onions with the sauce and sprinkle with paprika.

- Bring water and salt to a boil in a small saucepan; cook onions in the boiling water until just tender, 5 to 10 minutes. Drain, reserving 1/2 cup water in saucepan, and return onions to pan. Add butter to onions.
- Mix milk and quick-mixing flour together in a bowl; add to onion mixture. Cook and stir over medium-low heat until thickened, 10 to 15 minutes. Stir in more quick-mixing flour if mixture is too thin.

SIMPLE CREAMED ONIONS
Steps:
- Gather the ingredients.
- Peel the onions and place them in a large saucepan. Add 1/2 teaspoon of the salt and enough water to cover.
- Place the pan over high heat and bring the onions to a boil. Reduce the heat to low and cover the pan; cook for 20 to 25 minutes. Drain and set aside.
- Melt the butter in a medium saucepan over medium-low heat; add the flour and the remaining 1/2 teaspoon salt. Cook the flour and butter slurry for about 2 minutes, stirring constantly.
- Gradually add the milk; cook until the mixture thickens and comes to a boil, stirring constantly. Add the hot sauce, if using, and stir to blend. Taste and adjust seasonings.
- Add the drained onions to the sauce; heat through and garnish with fresh chopped chives or parsley, if desired.
- Serve and enjoy!

CREAMED PEARL ONIONS

- Thaw pearl onions and then saute in butter until golden brown. Deglaze by adding a little water at a time. Finish with heavy cream and reduce until you achieve a smooth consistency. Season, to taste, with salt and pepper and serve immediately.
WW LOW FAT CREAMY BACON AND ONION PASTA
This is a great substitute if you're craving creamy sauces but can't have the calories. The original recipe (from a supermarket recipe card) calls for creme fraiche but I'm sure lite sour cream would be just fine. This is also quick and easy on the budget.

Steps:
- Dice the bacon and onions and finely chop the parsley.
- Start to cook the pasta according to package directions (if using quick-cook pasta, wait a little before starting it so the rest is ready).
- Spray a skillet with a little low fat cooking spray and cook the bacon for 1 minute.
- Add the onions and Cavenders Greek seasoning. Cook until the bacon is fully cooked and the onions are soft- about 10 minutes.
- Add the creme fraiche and chopped parsley to the skillet and stir. Heat it through.
- Drain the pasta when it is cooked. Add it to the skillet and stir to mix well.
- Serve hot and topped with a sprig of fresh parsley.

This is a wonderful recipe I use which calls for fresh pearl onions and fresh or frozen peas. Quick and tasty!

- Fill a saucepan with water, and bring to a boil. Cook pearl onions in boiling water for 3 minutes, drain, and rinse in cold water. Peel onions, and remove the ends.
- Place onions with peas in the saucepan, and fill with enough water to just cover the vegetables. Simmer until tender, about 10 to 12 minutes. Drain, and place vegetables in a bowl.
- Melt margarine in the saucepan over medium-high heat. Pour in cream, and season with salt, pepper, onion powder, and garlic powder. Bring to a boil; cook until thick, stirring constantly. Stir peas and onions into the sauce to coat. Serve immediately.

EASY SOUR CREAM AND ONION FISH
In this quick and easy weeknight fish recipe, the fish is the chip. Coat fish fillets with sour cream and panko breadcrumbs, then bake until crisp and golden brown.

- Heat the oven to 450°F. In a medium bowl, stir together 1½ cups sour cream and 2 tablespoons onion powder. Zest 1 lemon into the bowl. Snip ¾ of 1 small bunch of chives into the bowl with scissors (hold on to the rest). Stir to combine and season to taste with salt and pepper. In a small bowl, stir together ½ cup panko breadcrumbs and 2 tablespoons olive oil. Season with salt and pepper.
- Pat dry four 6 oz. fish fillets (cod, salmon, halibut, trout) that are max 1½ inches thick. Transfer to a parchment-lined sheet pan, season with salt and pepper, and cover the flesh with a thin layer of the sour cream mixture (reserve the rest). Press the panko mixture on top, then bake until the fish flakes easily and the panko is browned, 10 to 12 minutes per inch of thickness. (If your fish is cooked through before the panko's browned, broil for a minute or two.)
- Meanwhile, squeeze the juice from half the lemon (about 1½ tablespoons) into the remaining sour cream mixture. Slice 1 big head crisp lettuce (romaine, iceberg).
- Divide the lettuce between plates and season with salt and pepper. Drizzle with olive oil and the juice from the remaining lemon. Add the fish to the plates, then snip the remaining chives over. Eat with the sour cream and onion dip.
