CREAMY PEPPER SAUCE | SLIMMING & WEIGHT WATCHERS FRIENDLY
This Creamy Pepper Sauce is the best slimming friendly accompaniment to steak - especially if you're counting calories or following a diet plan like Weight Watchers.

Steps:
- Mist a large frying pan with low calorie cooking spray and heat up. Throw in the onions and mushrooms, and cook until browned
- Add the pepper and Worcestershire sauce and cook for a further minute
- Add the stock to the pan and cook for a further 3 minutes
- Remove the pan from the heat and add the quark. Keep stirring until it's fully incorporated
- Place 200ml of the sauce into a jug and whisk in the xanthan gum a 1/4 of a tsp at a time. You will need to whisk well - and keep whisking!
- Return the sauce to the pan and stir well - it will thicken it a bit more.
- Gradually raise the heat, making sure to stir the sauce till it's bubbling. Taste and check the seasoning. Add more salt and pepper to taste and then serve!

PEPPER CREAM SAUCE FOR STEAKS, PASTA OR STROGANOFF
I always use this sauce when I make beef tenderloin but I have also used a variation of it on pasta. You could also use this for stroganoff instead of a canned cream of mushroom soup-based sauce.

Steps:
- Add the butter to an 8-10 inch skillet on medium heat.
- When butter is melted add minced shallot and garlic to pan and saute until shallots are tender. If using mushrooms add them now also.
- Add cracked pepper, beef stock, and heavy cream to pan. If using cheese add it now.
- Reduce heat to low and simmer 15 minutes, stirring occasionally.

SIMPLE ROASTED RED PEPPER CREAM SAUCE
Three (3) ingredients (I considered salt and pepper as one ingredient), is all you need for this great sauce. It goes great over chicken, pork, grilled fish, or tossed with pasta. This is the recipe that I first made the sauce for Recipe #384935, and still one of my favorites. You can make your own roasted red peppers, or you can buy a jar of them. They are certainly not hard to make, but both work equally well.

- Peppers -- Simply add the peppers to a food processor and puree.
- Sauce -- In a small sauce pan, add the cream, peppers and simmer on medium low for about 15-20 minutes. It will naturally thicken. Season with salt and pepper.

- Roast Peppers: (Optional: Skip this step if using jarred roasted red peppers)Oven: Preheat oven to 500 degrees F. Line a rimmed baking sheet with aluminum foil for easy clean up. Add peppers to prepared baking sheet, laying then on their sides. Roast, flipping over halfway through baking, for 25-30 minutes, or until the outsides are charred. Transfer charred pepper to a large bowl.-OR- Gas Stove Top: Place a red pepper directly over an open flame on a gas burner set to medium-high. Cook, using tongs to rotate the pepper a quarter or a turn every 2 minutes or as necessary, until charred all over. Transfer charred pepper to a large bowl. Repeat with remaining peppers.
- Steam Peppers: (Optional: Skip this step if using jarred roasted red peppers) Add garlic cloves to the bowl with the peppers and cover with plastic wrap or a tight-fitting lid. Let the peppers steam for 15-20 minutes. Remove cover from bowl. Transfer peppers to a clean work surface. Remove the charred skin, stems and seeds; discard. Roughly chop the peppers into medium dice. Roughly chop the garlic.
- Cook vegetables: Heat oil in a heavy saucepan over medium heat. Add the shallot and garlic. Season with a generous pinch of salt and pepper. Cook, stirring often, until softened and slightly golden, about 4-5 minutes. Add the Italian seasoning, paprika and red pepper flakes. Cook for 1 minute, stirring the combine. Add in the tomato paste and cook, stirring, until caramelized and paste coats the vegetables, about 2 minutes.
- Add peppers: Add the roasted red peppers to the pot, along with any juices that have collected. Stir, using the moisture from the peppers to deglaze the pan, scraping up any browned bits from the bottom of the pan. Cook for 1 minute and then remove pot from heat.
