Ingredients

5 large russet potatoes (peeled and diced)
1 small onion (diced)
4 cups chicken broth
4 tablespoons butter
1 teaspoon minced garlic
1 teaspoon salt
1 teaspoon pepper
1 cup heavy cream
1/3 cup sour cream
1 tablespoon Xanthan Gum

Steps:

Add the potatoes, diced onions, chicken broth, seasonings, and butter to your slow cooker.
Cook on low 4 to 6 hours, or on high 3-4 hours - until potatoes are soft.
About 30 to an hour minutes before it is done, in a small mixing bowl whisk the heavy cream, sour cream, and the xanthan gum together. This will get thick.
Stir into the soup.
Cook the soup on high for 20 to 30 minutes until the soup thickens slightly.

2 cans pork and beans (30 oz total)
2 cans kidney beans (30 oz total, rinsed and drained)
2 cans northern beans (drained and rinsed)
1 lb ground beef (or spicy ground sausage is great)
1 onion (diced)
8 slices bacon (cooked and chopped)
1 c ketchup
1 tbsp liquid smoke
3 tbsp white vinegar
1/2 c brown sugar
1 c broth (or water)
salt and pepper (to taste)

Steps:

In a pan on the stovetop brown ground beef with onions until no longer pink, dump into slow cooker.
Add in all other ingredients and stir together.
Close lid and cook on low for 6 hours.
