EASY NO KNEAD DUTCH OVEN CRUSTY BREAD

Easy No Knead Dutch Oven Crusty Bread image

This is a no knead, dutch oven bread recipe that peeked my interest in the Dec/Jan'o8 Mother Earth News magazine. The end result is a brick oven type of crust that I've never gotten with home bread baking before, the results are wonderful -believe it or not!

Provided by Antifreesz

Categories     Yeast Breads

Time P1DT50m

Yield 1 half pound loaf

Number Of Ingredients 5

1/4 teaspoon active dry yeast
1 1/2 cups warm water
3 cups all-purpose flour, plus more for dusting, white, whole wheat, a combination of the two can be used also
1 1/2 teaspoons salt
cornmeal or wheat bran, for dusting

Steps:

  • In a large bowl, dissolve yeast in water. Add the flour and salt, stirring until blended.
  • The dough will be shaggy and sticky.
  • Cover bowl with plastic wrap.
  • Let the dough rest at least 8 hours, preferably 12 to 18, at warm room temperature, about 70 degrees.
  • The dough is ready when its surface is dotted with bubbles.
  • Lightly flour a work surface and place dough on it.
  • Sprinkle it with a little more flour and fold it over on itself once or twice.
  • Cover loosely with plastic wrap and let it rest for about 15 minutes.
  • Using just enough flour to keep the dough from sticking to the work surface or to your fingers, gently shape it into a ball. Generously coat a clean dish towel with flour, wheat bran or cornmeal.
  • Put the seam side of the dough down on the towel and dust with more flour, bran or cornmeal.
  • Cover with another towel and let rise for about 1 to 2 hours.
  • When it's ready, the dough will have doubled in size and will not readily spring back when poked with a finger.
  • At least 20 minutes before the dough is ready, heat oven to 475 degrees.
  • Put a 6- to 8-quart heavy covered pot (cast iron, enamel, Pyrex or ceramic) in the oven as it heats.
  • When the dough is ready, carefully remove the pot from the oven and lift off the lid. Slide your hand under the towel and turn the dough over into the pot, seam side up.
  • The dough will lose its shape a bit in the process, but that's OK. Give the pan a firm shake or two to help distribute the dough evenly, but don't worry if it's not perfect; it will straighten out as it bakes.
  • Cover and bake for 30 minutes.
  • Remove the lid and bake another 15 to 20 minutes, until the loaf is beautifully browned.
  • Remove the bread from the Dutch oven and let it cool on a rack for at least 1 hour before slicing.

HOMEMADE DUTCH OVEN BREAD RECIPE BY TASTY

Homemade Dutch Oven Bread Recipe by Tasty image

Here's what you need: lukewarm water, active dry yeast, all-purpose flour, kosher salt, olive oil

Provided by Jordan Kenna

Categories     Bakery Goods

Yield 8 servings

Number Of Ingredients 5

2 cups lukewarm water, between 90˚-110˚F (30˚-40˚C)
1 envelope active dry yeast
4 cups all-purpose flour, lightly packed and leveled off, plus more for dusting
1 ½ teaspoons kosher salt
1 teaspoon olive oil

Steps:

  • Stir the yeast into the water and allow the yeast to bloom until foamy.
  • In a large bowl, mix together the flour and salt by hand. Once incorporated, create a small well in the middle and pour in the water and yeast mixture.
  • Mix by hand, wetting your working hand before mixing so the dough doesn't stick to your fingers. The water and flour should come together and a form rough dough that pulls away from the sides of the bowl. If the dough is too sticky, add more flour in small increments, about 1 tablespoon at a time. If the dough is too dry, add more water, 1 tablespoon at a time.
  • Once the dough comes together, cover and let rise until doubled in size (about 1 ½-2 hours).
  • Uncover the dough and give it a few pokes with your finger. If the dough has risen properly, it should indent under the pressure of your finger and slowly deflate.
  • Using your hand or a rubber spatula, start from the rim of the bowl to work the dough loose from the sides and fold it up and towards the center of the bowl. Turn the bowl 90 degrees, and repeat until all the dough has been pulled from the sides and folded towards the center.
  • Once finished, cover and let the dough rise again for another 1 ½-2 hours.
  • Once the dough has doubled in size again, gently transfer it from the bowl to a lightly floured surface.
  • Sprinkle a bit of flour on top of the dough. Using your hands, begin to shape it into a loaf. Fold the dough under itself several times to form a ball, then pinch together the seams of dough underneath.
  • Place the dough seam-side down in a clean bowl that has been lightly coated with olive oil and dusted with flour.
  • Cover and let rise for 1 hour.
  • Meanwhile, place a 6-quart Dutch oven (or heavy cooking pot with oven-safe lid) inside the oven. Preheat the oven to 450˚F (230˚C) with the pot inside for 45 minutes-1 hour.
  • Carefully remove the pot from the oven and place it on a trivet or heat-safe surface. (Be careful! It'll be VERY HOT.)
  • Turn the proofed dough over onto a lightly floured surface and carefully place it inside the pot.
  • Cover with the lid and return the pot to the oven.
  • Bake for 45 minutes, removing the lid for the last 15 minutes.
  • Remove bread from pot, cover, and let cool for 10 minutes before slicing.
  • Enjoy!

EASY DUTCH OVEN BREAD RECIPE

Easy Dutch Oven Bread Recipe image

Making Dutch Oven Bread is surprisingly easy - no kneading required! All you need are a few pantry staples and a mixing bowl to make a bakery-quality bread. This one is done in less than 3 hours and most of that is just rising time.

Provided by Natasha of NatashasKitchen.com

Categories     Easy

Time 3h25m

Number Of Ingredients 11

1 1/2 cups 12 oz warm water (100˚F)
2 Tbsp honey
1/2 Tbsp salt
3/4 Tbsp active dry yeast
3 cups bread flour (plus extra flour for dusting*)
2 Tbsp sunflower seeds (toasted plus more for top of bread)
2 Tbsp pumpkin seeds (toasted plus more for top of bread)
1 Tbsp sesame seeds (toasted)
1 Tbsp flax seeds
1 tsp poppy seeds
1 Tbsp corn meal or semolina to dust parchment (optional)

Steps:

  • Line work surface with parchment paper and trim the corners to fit better in the dutch oven. Sprinkle the center 9" of parchment with 1 Tbsp cornmeal or semolina and set aside.
  • In a large bowl, combine 1 1/2 cups warm water, 2 Tbsp honey and 1/2 Tbsp salt. Stir until honey dissolves then sprinkle with 3/4 Tbsp yeast. Let sit at room temp 5 min. Stir in 3 cups flour and all the seeds. Stir with spatula until it comes together and seeds are incorporated (no kneading required). Dough will be very sticky. Cover bowl with lid or plastic wrap and rest at room temp (70˚F) for 2 hours or until tripled in volume.
  • Sprinkle dough with flour and use a spatula to fold dough in half then fold in half again. Sprinkle generously again with flour and with well floured hands, lift up the dough and form a ball in your hands. Place over the center of your prepared parchment paper with the folded seam side down. sprinkle the top with extra seeds if desired. Let rise uncovered at room temp for 40 min.
  • Place the empty dutch oven and lid inside the oven and preheat the oven to 450˚F. Once preheated, remove dutch oven and place on the stove. Be careful not to touch the dutch oven or lid without oven mitts because it will be blazing hot. Lift bread with the parchment paper and set it in the center of HOT dutch oven. Cover with lid and bake at 450˚F for 30 min. Carefully remove hot lid and bake another 2- 5 min or until top is golden brown. Remove bread from dutch oven with the help of parchment paper and place bread directly on wire rack. Cool until it's nearly room temperature before slicing.***

EASY CRUSTY FRENCH BREAD

Easy Crusty French Bread image

Easy dutch oven bread ready in just a few hours - no overnight rise needed.

Provided by Jessie

Categories     Bread

Time 2h30m

Number Of Ingredients 5

2 1/4 teaspoons active dry yeast (9 grams)
1 teaspoon sugar (4 grams) (use honey if you prefer)
1 1/4 cups warm water (300 grams)
1 1/4 teaspoons (8 grams) kosher salt
2 1/2 to 3 1/2 cups All-Purpose Flour (400 grams) plus extra for dusting (see recipe notes)

Steps:

  • Combine yeast, sugar, and warm water in a large mixing bowl (you can also use a stand mixer fitted with a dough hook).
  • Let the yeast proof for about 5 minutes, until the mixture is foamy.
  • Add flour to bowl. Mix with a sturdy spatula until the dough starts to come together, then add salt and mix until all ingredients are incorporated. For best results, mix until no dry bits of flour remain. Note: This is a relatively slack (wet) dough, so it may seem a bit shaggy and sticky at this point. Don't worry - it will become more smooth and elastic as we go!
  • Cover bowl with a clean tea towel and let rise on the counter for about 1 hour, until dough has doubled in size.
  • When dough has risen, lightly flour a large cutting board.
  • Tip the dough out of the bowl and onto the cutting board. DO NOT PUNCH THE DOUGH DOWN - you want to keep all those nice air bubbles intact so you have an airy, delicious loaf of bread. (Note: If the dough is sticking to the bowl a little bit, wet your hand with a bit of cold water and gently separate the dough from the bowl to get it all out).
  • Shape the dough into a round loaf: Pull each corner of the dough in towards the center (like you're folding an envelope) and repeat until the dough feels tight and begins to resist your folds. Flip the dough over and pull it into a round loaf. Watch the video(s) above to see exactly how we do this!
  • Flour a proofing basket or a medium bowl and place your loaf into it seam-side down. Cover with a tea towel and let rise another 30 minutes or so while you preheat the oven. Note: I like to line my proofing basket or mixing bowl with a clean linen napkin to distribute the flour more evenly and help with cleanup.
  • While bread is rising, place an empty dutch oven (with the lid on) in your oven and heat to 460 degrees Fahrenheit.
  • When the oven is hot, you're ready to go! Use oven mitts to pull the dutch oven out and remove the lid.
  • Lay a piece of parchment paper down on your counter or cutting board (optional - it makes transferring the bread easier!)
  • Tip your bread dough gently out of the proofing basket onto the parchment paper. Make sure the seam side is up this time - this is what will create those beautiful cracks on top of the bread!
  • VERY CAREFULLY (without burning yourself!) use the sides of the parchment to lift the bread up and place it into the hot Dutch oven.
  • Put your oven mitts back on, place the dutch oven lid back on the pot, and slide the whole thing back into your hot oven.
  • Cook bread for 30 minutes.
  • After 30 minutes, remove the lid from your dutch oven. The bread should be taller, crusty, and very lightly browned. Continue cooking the bread, uncovered, for 10-15 minutes more until the bread has deepened in color and you have a beautiful brown crust.
  • When bread is done, use oven mitts to pull the pot out of your oven.
  • Use a long spatula or the corners of your parchment paper to lift the bread out of the dutch oven and onto a cooling rack. Let cool for at least 30 minutes before cutting into it.
  • Slice, slather with butter, and enjoy!

EASY NO KNEAD BREAD (DUTCH OVEN BREAD)

Easy No Knead Bread (Dutch Oven Bread) image

Easy Dutch Oven No Knead Bread recipe is made with only 4 ingredients and takes 5 minutes of prep time! If you want to make delicious homemade bread that looks & tastes like it came from a fancy bakery but actually takes very little effort, this dutch oven bread recipe is for you!

Provided by Laura

Categories     bread     Side Dish

Time P1DT55m

Number Of Ingredients 4

3 cups all-purpose flour
2 tsp active dry yeast
1 ½ tsp sea salt
1 ½ cups warm water (105 degrees F)

Steps:

  • Combine the flour, yeast, and salt in a large bowl and stir to combine.
  • Add the water and mix until the dough forms a ball.
  • Cover the bowl with plastic wrap (sprayed with cooking spray) and a damp tea towel.
  • Let dough sit covered at room temperature for 18-24 hours.
  • After 24 hours (or at least 1 hour before you want to serve) preheat the oven to 450 degrees F.
  • Place a 2 3/4 quart dutch oven (or a 2.4L baking dish) with a lid in the oven while it is preheating. (Note: Readers have used a 5 qt. dutch oven with success).
  • While oven is preheating, transfer the dough from the bowl onto a floured surface.
  • Form the dough into a ball, adding a few TBS more flour if needed. The dough should still be slightly loose. Then cover it with a floured towel while the oven is preheating. (Important note: The dough ball will be loose and "floppy." That is how it should be as this is a very moist bread which is what makes it so irresistible. You will not have a firm ball, it will look a little flat).
  • Carefully remove the hot baking dish from the oven. Remove the lid and spray the dish with cooking spray or line it with parchment paper.
  • Gently put the dough ball into the baking dish so it's evenly distributed.
  • Cover and bake for 30 minutes.
  • Remove the lid and bake for an additional 15 minutes, or until the loaf is golden brown.
  • Remove the loaf from the baking dish and let it cool on a rack before slicing. To keep it warm, cover with a tea towel.

DUTCH OVEN SOURDOUGH BREAD

Dutch Oven Sourdough Bread image

Fluffy, tender and perfectly tangy dutch oven sourdough bread. This classic no knead sourdough recipe uses 4 simple ingredients, including all-purpose flour, for a perfect loaf every time!

Provided by Renae

Categories     Appetizer     Snack     Bread

Time 9h30m

Number Of Ingredients 4

1/4 cup (60g) sourdough starter, room temperature ((fed within 12-24 hours))
1 1/2 cups (350ml) warm filtered water ((95º to 100º F))
4 cups (540g) all-purpose flour ((see notes for bread flour and whole wheat flour))
1 ½ teaspoons (9g) sea salt

Steps:

  • In a large bowl, add the sourdough starter. Mix in the water, stirring until it is completely dissolved. Add the flour and salt. Stir with a dough whisk or wooden spoon until a thick, shaggy dough forms. If the dough is too thick to stir, finish mixing dough by hand. Cover with a clean, damp kitchen towel and let the dough rest for 30 minutes.
  • Stretch and fold the dough for 15 seconds within the bowl. Grab the edge of the dough, stretch it up and press it down into the center of the dough, then turn the dough 1/4 a turn (see video) and continue stretching the dough in a clockwise rotation. Cover the bowl with a damp towel, and let rise in a warm area (75º to 85º F) for 6-8 hours. The dough should double in size and look bubbly on the surface and under the dough.
  • Lightly flour your countertop and pull the dough from the bowl onto the countertop. Shape the dough by stretching and folding it again as you did before. Let the dough rest for 10 minutes.
  • Line a medium bowl with a towel or use a banneton with linen cover, and dust heavily with flour. Let dough rise for 30 - 60 minutes.
  • Preheat your oven to 450º (without the dutch oven). Cover the dough bowl with a long piece of parchment paper, and turn it over onto the countertop so that the dough is on top of the parchment paper.
  • Slash the top of the loaf with a lame or sharp serrated knife. Gently lower the parchment paper dough into the dutch oven.
  • Place the dutch oven in the oven and bake with the bread covered for 30 minutes. Remove the lid and bake for 20 more minutes. Using oven mitts, carefully remove the bread from inside the pot and bake it directly on the oven rack for 10 minutes to crisp the exterior.
  • Let cool for at least 1 hour before serving.

  • When ready to cook, preheat oven to 450 degrees with the dutch oven in the oven when heating up. This is essential. I have preheated it up to 45 minutes and haven't seen a drastic difference in the outcome of the bread, so I just heat up in the oven as the temperature comes up.
  • While the oven is heating up, remove the dough from the bowl and form into a ball. It may be a bit sticky which is fine. Don't work it, just form a big ball. Depending on the humidity in the air, I will add a teaspoon or so of flour to get it to work into a ball. Don't over do it though.
