This is a wonderful baked tomatoes recipe. It is studded with bits of garlic and savory with chopped fresh herbs.

6 tomatoes (medium)
2 to 3 cloves garlic (minced)
1 tablespoon fresh basil (minced)
1 tablespoon fresh parsley (minced)
salt to taste
pepper to taste
2 tablespoons butter ( or olive oil)

Steps:

  • Preheat the oven to 350°F.
  • Cut off the stem ends and a thin slice from both ends of the tomatoes. Cut each tomato into two or three thick slices. Arrange the slices in a well-greased shallow baking dish. Sprinkle with garlic, the fresh basil and parsley, salt and pepper. Dot with butter or sprinkle with the olive oil.
  • Bake at 350°F for 20 - 30 minutes or until the tomatoes are soft, but still hold their shape.

1 garlic clove, minced
1 tablespoon olive oil
1/2 cup soft bread crumbs
2 large tomatoes
4 fresh basil leaves, chopped
1/8 teaspoon coarsely ground pepper

Steps:

  • In a small skillet, saute garlic in oil for 1 minute. Add bread crumbs; cook and stir until lightly browned. Remove from the heat., Cut tomatoes in half widthwise. Place cut side up in an 8-in. square baking dish. Sprinkle with basil and pepper; top with bread crumb mixture. Bake at 325° for 15-20 minutes or until tomatoes are slightly softened.

4 tomatoes
150 g italian breadcrumbs or panko breadcrumbs
4 tablespoon fresh basil (chopped)
1 garlic clove (finely minced)
2 tablespoon extra-virgin olive oil
2 tbsp Parmesan cheese or mozzarella (grated, optional)
salt and black pepper

Steps:

  • Preheat oven to 375F/190C.
  • Cut each tomato in half horizontally and lay them out on a baking tray.
  • In a bowl mix together breadcrumb, basil, garlic, and extra-virgin olive oil.
  • Next, add the seasoned breadcrumbs to the halved tomatoes. You can sprinkle some Parmesan cheese on mozzarella on top.
  • Pop them in the oven and let them bake until softened and crispy on top. They only take about 10 minutes to bake.
  • Serve warm or at room temperature with your favorite main or with a salad and toasted bread on the side.

1 sprig fresh rosemary, leaves stripped and finely chopped
1 clove garlic, minced

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Brush baking sheet with about 1 tablespoon olive oil.
  • Arrange tomato slices on the baking sheet. Sprinkle rosemary and garlic over tomatoes and brush with remaining olive oil; season with salt and pepper.
  • Bake in the preheated oven until tomatoes are tender, 5 to 10 minutes.

This is my favorite recipe for cod, but you can prepare any type of white fish this way. Baked in the oven, cod develops a great flavor and becomes extra tender.

3 pounds cod - scaled, gutted, and head removed
3 sprigs fresh rosemary, divided
salt and freshly ground black pepper to taste
5 large beefsteak tomatoes
2 tablespoons black olives
2 tablespoons green olives
3 cloves garlic, minced, or more to taste
1 teaspoon fennel seeds, or to taste
2 tablespoons olive oil, or to taste
2 teaspoons balsamic vinegar, or to taste

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a casserole dish.
  • Wash cod and pat dry with paper towels. Place 2 rosemary sprigs inside the belly of the cod. Season inside and outside of cod with salt and pepper; place in the prepared casserole dish.
  • Bring a pot of water to a boil. Cut an 'X' into the bottom of 4 of the tomatoes and submerge in boiling water for 20 seconds. Remove from the hot water and peel off skin. Cut in half horizontally and place tomato halves around the cod. Dice remaining tomato and scatter between the cod and the tomato halves. Season with salt and pepper.
  • Sprinkle remaining rosemary, black olives, green olives, garlic, and fennel seeds over cod and tomatoes. Drizzle olive oil on top.
  • Bake in the middle of the preheated oven until cod flakes easily with a fork, about 25 minutes. Drizzle balsamic vinegar over tomatoes before serving.

  • Preheat the oven to 450 degrees F.
  • Slice the tomatoes from core to core. Remove and discard the seeds and juice, and add the tomatoes to a casserole dish. Drizzle with olive oil and sprinkle with salt and pepper.

  • In hot olive oil, fry onions and garlic on low, until soft.
  • Add tomato paste, bay leaves, smoked paprika, salt and pepper. Cook for a minute.
  • Add Mutti tomatoes and a little water by rinsing out the tin.
  • Cook for 20mins or until the sauce is thick and rich.
  • Add beans and cook for a couple of minutes until beans are heated through.
  • Serve baked beans in tomato sauce on your choice of toast with a sprinkling of fresh herbs.
