Best Homemade Lemon Bread image

A delicious Lemony Sweet bread with a simple glaze.

1 tablespoon grated lemon zest ((zest from 1 lemon))
2 1/4 cups all purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon salt*
1 1/4 cups granulated sugar
3/4 cup butter softened*
3 eggs (large)
3/4 cup milk I used 2%)
4 1/2 teaspoons lemon juice (I used 1 medium lemon)
2 tablespoons granulated sugar

Steps:

  • Pre-heat oven to 350° (180° celsius), grease and flour a 9x5 inch loaf pan.
  • In a large bowl whisk together the flour, baking powder, salt and 1 1/4 cups of sugar, add the softened butter and with a pastry blender or fork blend together until the mixture resembles coarse crumbs. Stir in the lemon zest.
  • In a small bowl add the eggs and beat lightly with a fork, add the milk and beat until combined. Pour the wet ingredients into the dry ingredients and stir just until the flour is moistened. Do not over mix.
  • In prepared loaf pan add the batter and bake for approximately 60 minutes, (this all depends on the oven, could be a little more or a little less) or until tooth pick comes out clean. Cool 15 - 20 minutes then move to a wire rack to cool completely.

1 cup (140g) all-purpose flour
¾ cup (143g) granulated sugar
2 teaspoons baking powder
½ teaspoon salt
2 large eggs
½ cup (118ml) vegetable oil
½ cup (118ml) sour cream
1 tablespoons (30ml) lemon juice
1 large lemon, zested
1 teaspoon (5ml) lemon extract
1 - 1 ½ cups (130-195g) powdered sugar, sifted
2-4 tablespoons (30-120ml) milk
Additional lemon zest

Steps:

  • . Generously grease a 9-inch loaf pan and set aside. You can also line the pan with parchment paper if desired.
  • in a large mixing bowl: flour, sugar, baking powder and salt. Whisk to combine.
  • eggs, oil, sour cream, lemon juice, zest and extract. Beat all the ingredients together until well combined. Set aside.
  • at 350°F for 40-45 minutes or until a toothpick inserted in the center of the loaf comes out clean. Cool for at least 1 hour before slicing.
  • Combined 1 cup powdered sugar with 2 tablespoons milk and whisk to combine. Add additional milk to thin it out until desired consistency. If it becomes too thin, add additional powdered sugar. Add additional lemon zest on top if desired.

Number Of Ingredients 10

1/2 cup margarine or 1/2 cup shortening (We prefer butter)
1 cup sugar
2 eggs
1/2 cup milk, 2% is fine
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 lemon, rind of
1 lemon, juice of
1/4 cup sugar

Steps:

  • In a large bowl, cream butter and sugar.
  • Add eggs, one at a time, beating until creamy.
  • Blend in milk.
  • In another bowl, mix together flour, baking powder, salt and lemon rind.
  • Pour into batter.
  • Stir to moisten.
  • Scrape into greased 9 x 5 inch loaf pan.
  • Bake in 350f degree oven for 55 to 60 minutes.
  • Cool in pan for 5 minutes.
  • Remove to rack and while still hot, with a toothpick poke holes all over the top of the loaf, and spoon glaze evenly over.
  • Cool.
  • Glaze: Combine lemon juice and sugar in saucepan.
  • Stir and heat till sugar is dissolved.
  • Spoon evenly over top of hot loaf.

2 containers (6 oz each) Yoplait® Original yogurt lemon burst
1/2 cup butter, melted
1 tablespoon grated lemon peel
2 eggs
2 teaspoons coarse sugar, if desired

Steps:

  • Heat oven to 350°F. Grease 9x5-inch loaf pan with shortening; lightly sprinkle with flour.
  • In large bowl, beat cake mix, yogurt, melted butter, lemon peel and eggs with electric mixer on low speed until ingredients are moistened; scrape bottom and side of bowl. Beat 2 minutes on medium speed. Pour batter in pan. Sprinkle with coarse sugar.
  • Bake 40 to 50 minutes or until toothpick inserted in center of loaf comes out clean. Cool in pan on cooling rack 10 minutes; run metal spatula around edge of loaf to loosen. Remove from pan to cooling rack. Cool completely, about 1 hour.

1 cup sugar
2 large eggs, room temperature
1 tablespoon grated lemon zest
2 tablespoons lemon juice

1/8 teaspoon salt

GLAZE:
1/2 cup confectioners' sugar
2 tablespoons lemon juice

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs, lemon zest and juice. Combine flour, baking powder and salt; gradually stir into creamed mixture alternately with milk, beating well after each addition. , Pour into a greased 8x4-in. loaf pan.
