Steps:
- To make the pastry, combine the flour, salt, baking powder, and curry powder in a large mixing bowl. Cut the butter into small pieces and add to the bowl. Working quickly and using your fingertips, squeeze together the flour mixture and butter and toss it together by scooping under the mixture with both hands. When the mixture resembles a very coarse meal, add the water to the bowl.
- With floured hands, mix and squeeze the dough just until it forms a ball. Knead it once or twice to combine it fully (the less kneading, the better). Spread the dough into 2 pieces, flattening each into a thick pancake. Wrap in plastic and set them in the refrigerator to chill for at least 15 minutes. (The dough will keep in the refrigerator up to 5 days. Remove it from the refrigerator a few minutes before using it.)
- For filling, mix together the beef, onion, scallions, garlic, peppers, and thyme in a large bowl. In a large skillet, heat the oil over high heat until it is very hot, and add the beef mixture. Fry until the meat is brown and the moisture is evaporated, about 8 minutes. Add the curry powder, salt, and black pepper, stirring occasionally over high heat, allowing a crust to form on the bottom of the pan.
- Add the water and stir the mixture, scraping the bottom to incorporate the browned crust. Add the breadcrumbs and stir. The consistency should be like a thick stew. Add more water as needed. Cover, reduce the heat to very low, and cook for 15 minutes. Set it aside to cool.
- Preheat the oven to 400 degrees. Cut each piece of the dough into 9 pieces. Using a rolling pin on a floured surface, roll out each piece of pastry into a rectangle shape with rounded edges. Spread a large spoonful of the cooled meat mixture over one side of the dough, leaving at least 1/2- to 3/4-inch border on the outside edge. Using your finger, paint water around the border. Fold the other side of the dough over, and roll and crimp the edges. Lightly press a floured fork around the edge of the patty.
- Place the patty onto a cookie sheet and repeat the procedure with the remaining dough. The patties may be covered in plastic and frozen at this point for later use. Brush each patty with the egg wash and bake for 15 to 20 minutes, or until the patties begin to turn a golden color.
BEEF PASTIES
We had lots of leftovers when we sampled Leona's pot roast in out test kitchen, so our staff came up with this recipe for fast-to-fix pasties. Just tuck the cooked roast beef, carrots, potatoes and onion into pie pastry-your family will be amazed at the tender and flaky results!

- Preheat oven to 400 degrees F (200 degrees C). In a large bowl, combine flour, 1 1/2 teaspoons curry powder, and pinch of salt. Cut in 1/4 cup margarine and shortening until mixture resembles coarse crumbs. Stir in water until mixture forms a ball. Shape dough into a log, and cut into 10 equal sections. Roll each section into a six inch circle (approximately 1/8 inch thick). Set aside.
- Melt margarine in a skillet over medium heat. Saute onion until soft and translucent. Stir in ground beef. Season with 1 teaspoon curry powder, thyme, 1 teaspoon salt, and pepper. Cook until beef is evenly brown, stirring constantly. Stir in beef broth and bread crumbs. Simmer until liquid is absorbed. Remove from heat.
- Spoon equal amounts of filling into each pastry circle. Fold over and press edges together, making a half circle. Use a fork to press edges, and brush the top of each patty with beaten egg.
- Bake in preheated oven for 30 minutes, or until golden brown.

- Mix egg, bread crumbs, salt, and black pepper together in a large bowl. Break ground beef into small pieces and add to the bowl; mix well with your hands until beef is evenly moistened. Shape the beef mixture into four patties.
- Heat a skillet over medium heat. Cook patties in hot skillet until completely browned, 2 to 3 minutes per side; remove to a platter and drain grease from skillet.
- Return skillet to medium heat. Stir tomato sauce, green onions, brown sugar, Worcestershire sauce, and yellow mustard together in the skillet. Gently lie the patties into the sauce; bring liquid to a boil, reduce heat to medium-low, and simmer until the patties are very firm, hot, and grey in the center, about 10 minutes more. An instant-read thermometer inserted into the center should read 160 degrees F (70 degrees C).

EASY, TENDER RECESSION PATTIES
I tweaked a recipe given to me by Ken, from Lindner Bison. This is a tasty recipe that doubles in volume just by adding the potatoes - great for a family of 6-8. I'm sure you could also use very lean ground beef, too. I like mine with a good squeeze of fresh lemon. No doubt, you can think of a zillion ways to change this one - red pepper flakes come to mind - so please post your creative changes, I'm anxious to hear! Cooking time includes time for potatoes to cook...

- 1. Peel potatoes, cut in quarters and put into pan with just enough water to cover. Add to the potatoes: about 3/4 of the diced onion and all of the sliced garlic. Set on medium heat and let cook very slowly, so the onions and garlic have a chance to infuse the water. This takes about 30 minutes. Do NOT overcook - do NOT cook until potatoes are mushy. You want there to be some small pieces intact after mashing.
- 2. While potatoes/onion/garlic are on the stove, mince the remainder of the onions very finely. Crack egg into large mixing bowl and beat with a fork until well mixed. Add the celery salt, dried parsley, lemon pepper and bread crumbs. Beat well and let sit for 10-15 minutes to reconstitute parsley.
- 3. Drain potatoes when they become JUST barely done. Let sit in colander for 5 minutes. Return to pan and mash with a fork. Some small chunks are desired. Mix in the remaining onion. Let sit to cool for another 5 or 10 minutes.
- 4. Add ground meat to the egg mixture in the bowl. Using your hands, mix all thoroughly. Add in potatoes and combine thoroughly.
- 5. Put about 1/2 cup flour in a pie pan or flat bottom bowl. Season with 1/4 teaspoon salt and and 1/4 teaspoon pepper. Mix well.
- 6. Generously cover bottom of frying pan with olive oil. (I use 2 pans.) Turn on heat to medium-low.
- 7. Working quickly, form meat into small patties, about 3 inches wide by 1 inch thick - Just enough to fit into the palm of your hand. Dredge patties in the flour on all sides. Shake off excess. Set aside on waxed paper or plastic wrap until all meat is formed. If flour sinks into patties before you get them into the pan, just dredge again and shake off excess before frying.
- 8. Fry in heated olive oil over medium-low heat for about 8 minutes on the first side. Flip and cook another 6 minutes, just until done. Do NOT smash them down while cooking and do not overcook! Remove to a warmed platter lined with paper towel for a minute or so. Serve hot.
- 9. These go great with some crusty bread and a vegetable side.

- Start the patties: Heat oven to 350 degrees. Halve the butternut squash lengthwise and scoop out the seeds. Drizzle the cut squash with oil, season generously with salt and pepper, and place flat side down on a parchment-lined baking sheet. Roast until the skin is sunken and a fork passes through easily, 30 to 40 minutes.
- While the squash cools, add the cornmeal, baking powder, 1 teaspoon salt and ½ teaspoon pepper to a large bowl; whisk to combine. Scrape and remove ¾ cup squash from its skin with a fork and add to bowl (the remaining squash will keep, refrigerated, for 3 to 4 days). Add the beans, onion, sunflower butter, garlic and dried sage. Stir to combine, then transfer the mixture to a food processor and pulse until uniform. (Though a food processor yields better results, you could also simply mash the ingredients with a masher or your hands until well incorporated.) The mixture should be thick and pliable; if not, add more cornmeal, 1 tablespoon at a time, and mix thoroughly. Cover the mixture and let rest in the fridge for 10 minutes until slightly firmer.
- While the mixture chills, make the aioli: In a small bowl, combine the chopped raspberries, mayonnaise, maple syrup and sage until well mixed. (Makes 1⅓ cups.) Cover and refrigerate while you cook the patties.
- Finish the patties: Remove the cornmeal mixture from the fridge. Line a large baking sheet with parchment paper. Using 1 heaping tablespoon (with almost 2 tablespoons of the cornmeal mixture) at a time, begin to shape small 1½- to 2-inch balls, adding them to the prepared baking sheet and pushing each to flatten slightly. Continue until all the dough is used; you should have about 24 patties. Bake on the prepared baking sheet for 20 to 30 minutes, until golden brown and crisp. Allow to cool for 10 minutes before serving with aioli.
