EASY PEACH MUFFINS



Easy Peach Muffins image

Peach Muffins with large bakery style muffin tops, full of fresh peaches and flavored with cinnamon and vanilla.

Number Of Ingredients 15

3 Cups (384 g) All Purpose Flour
1 Cup (200 g) Granulated Sugar
4 tsp Baking Powder
2 tsp Ground Cinnamon
1/2 tsp Ground Cloves
1 tsp Kosher Salt
2 tsp Maple Syrup
2/3 Cup (166 ml) Coconut Oil
2 Large Egg
1 Cup (250 ml) Whole Milk
2 tsp Vanilla Extract
1 large peach (peeled, remove pit and chopped into chunks)
1 large peach ( pit removed and sliced)
1 Tbsp Sparkling Sugar
½ tsp Ground Cinnamon

Steps:

  • Preheat oven to 350 F (176 C) and line a 6 muffin tray with paper cups.
  • In a medium bowl whisk together dry ingredients.
  • Stir together wet ingredients (except peaches) in a separate smaller bowl.
  • Pour wet ingredients into dry ingredients bowl.
  • Whisk together until a pancake batter like consistency is formed.
  • If batter seems to thick, just add a Tablespoon of milk at a time to thin. (batter should not be runny).
  • Fold in beach chunks, with a large spoon.
  • Spoon batter into paper muffin cups, dividing evenly amongst all muffin cups.
  • With a fork, stir together sugar in the raw and cinnamon in a small bowl.
  • Sprinkle cinnamon topping over each muffin. (just enough to lightly coat).
  • Bake muffins for 10 minutes.
  • Remove from oven, lay peach slices across the tops. Press very gently to stick to batter.
  • Transfer muffin tray back to the oven and continue baking for an additional 15-20 minutes or until toothpick inserted into center comes out clean.
  • Let muffins cool in tin for 10 minutes.
  • Remove paper cups and enjoy!

1/3 cup all purpose flour
1/3 cup granulated sugar
1/2 tsp cinnamon
1/4 cup unsalted butter (cold)
2 cups all-purpose flour
1 cup granulated sugar
1 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 eggs
1/3 cup plain yogurt ((or vanilla yogurt) )
1/3 cup vegetable oil (or olive oil, canola oil)
2 large peaches , cut into 1/2-in. pieces (about 2 cups) (divided)

Steps:

  • For the streusel topping:Combine the flour, sugar and cinnamon in a small bowl and stir. Add the cold butter and with your hands, rub butter and flour mixture together until crumbly. Set aside.
  • For the muffins:Preheat your oven to 375 degrees Fahrenheit and prepare a large muffin pan with 12 muffin paper liners.
  • Add the flour, baking powder, baking soda, cinnamon, salt and sugar to a large bowl and whisk together to combine. Add the peaches, reserving about 3/4 cup for topping the muffins, and stir to coat.
  • Whisk eggs, yogurt and oil in a medium bowl. Stir into dry mixture until just combined. Portion the batter out into the muffin cups evenly (about 3/4 full).
  • Top the muffins with the remaining chunks of peaches and a spoonful of the streusel topping. Bake for about 18-20 minutes until golden brown and a toothpick inserted into one of the muffins comes out clean.
  • Transfer muffins to a rack to cool. Serve warm or at room temperature.

1 tsp baking soda
1 tsp salt
1 tsp vanilla extract
½ cup oil
½ cup applesauce
½ cup milk
3 cups diced peaches
3 eggs (lightly beaten)
1 cup brown sugar
⅓ cup brown sugar
1 Tbsp flour
1 Tbsp butter, diced or shredded into small pieces
¼ tsp ground cinnamon

Steps:

  • Preheat oven to 375°F and line or grease your muffin pans.
  • In a large bowl, mix together the flour, cinnamon, baking soda, and salt.
  • In a separate bowl, mix the oil, applesauce, vanilla, eggs, sugar, and milk.
  • Stir your wet mixture into your dry mixture.
  • Add in peaches, but don't over mix! Instead, lightly fold your batter until they're fully combined.
  • Fill each muffin cup halfway with batter, then set aside while you make the streusel topping.

⅔ cup brown sugar
⅔ cup all-purpose flour
¼ cup butter, softened
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 16 muffin cups or line with paper liners.
  • Beat white sugar, vegetable oil, and eggs together in a bowl using an electric mixer on medium until creamy. Mix 3 cups flour, 1 teaspoon cinnamon, baking soda, and salt together in a large bowl. Gradually beat flour mixture into egg mixture until batter is just combined; fold in peaches. Spoon batter into prepared muffin cups.
  • Mix brown sugar, 2/3 cups flour, butter, and 1 teaspoon cinnamon together in a bowl until crumbly; sprinkle over batter.

1/2 cup butter, softened
3/4 cup sugar
1 egg
1/2 cup sour cream
1 teaspoon vanilla extract
1-1/2 cups all-purpose flour
1-1/2 teaspoons baking powder
1 cup chopped fresh or frozen peaches
1 cup chopped pecans

Steps:

  • In a bowl, cream butter and sugar. Add egg, sour cream and vanilla; mix well. Combine flour and baking powder; stir into creamed mixture just until moistened. Fold in peaches and pecans. In my hurry to use up some peaches, I came up with this muffin recipe. It turned out so good, just like peach cobbler in a muffin, that I thought I'd share it with everyone! This is also really good bread! Just increase the baking time to 1 hour at 350 degrees F and use 2 loaf pans.

1 teaspoon baking soda
1 teaspoon salt

4 Tbs. sweet butter
2 cups all-purpose flour
1 Tbs. baking powder
1/2 tsp. salt
1 large egg
3/4 cup sugar
1/2 cup milk
3/4 cup sour cream
2 large, ripe peaches (to make 1 1/2 cups chopped peaches)

Steps:

  • Preheat oven to 350 degrees F. Lightly grease a 12-cup muffin tin. Melt butter in a saucepan over low heat and set aside. Mix flour, baking powder and salt in medium bowl. In another bowl, whisk the egg, then add the sugar. Whisk until thick and thoroughly mixed. Continue to whisk, adding the milk and melted butter. Add the sour cream and stir to combine. Fold the egg mixture into the flour mixture until well combined. Add the chopped peaches and stir until just combined.
  • Drop tablespoons of the batter into the muffin tins until half full. Bake for 35 minutes or until a toothpick inserted into a muffin comes out clean. Cool muffins in tins for 10 minutes, then turn them out onto a wire rack to finish cooling. Serve immediately or store in an airtight container for up to 2 days.
