Pumpkin-Vegetable Soup (Quick & Easy) image

This is a recipe for one of those busy nights when you want something hot and hearty! Easy to use ingredients, with minimal chopping! Very satisfying and delicious.

1 1/2 cups onions, chopped
2 tablespoons butter, melted
3 cups chicken stock (canned chicken broth can be substituted)
1 (19 ounce) can garbanzo beans (chick-peas)
1 cup potato, peeled and diced
1 cup carrot, sliced
1 cup frozen lima beans
1/2 cup celery, sliced
1 (16 ounce) can pumpkin
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/8 teaspoon white pepper
1 cup whipping cream

Steps:

  • Saute onion in butter in a saucepan over medium heat, stirring constantly, until tender. Add broth and next 6 ingredients; bring to a boil.
  • Cover, reduce heat and simmer for 15 minutes or until vegetables are tender.
  • Stir in pumpkin, salt, nutmeg, and white pepper. Simmer 5 minutes.
  • Stir in whipping cream; cook until heated through.

3 vegetarian sausage links, or more to taste
½ onion, minced
1 cup mushrooms
1 clove garlic
1 tablespoon Italian seasoning
1 (15 ounce) can pumpkin puree
1 quart vegetable broth
1 cup light cream
¼ cup grated Parmesan cheese
2 teaspoons hot sauce

Steps:

  • Cook sausage in a skillet over medium heat until heated through, 3 to 5 minutes. Transfer sausage to a plate.
  • Place onion, mushrooms, garlic, and Italian seasoning into the skillet over medium heat; cook until soft, about 5 minutes. Stir in pumpkin puree. Add vegetable broth. Reduce heat and simmer until flavors are blended, 20 to 25 minutes.
  • Stir in sausage, light cream, Parmesan cheese, and hot sauce; simmer 10 to 15 minutes more.

1 ⅔ pounds sugar pumpkin -- peeled, seeded and cubed
2 carrots, coarsely chopped
2 onions, cut into wedges
2 ½ tablespoons vegetable oil
1 large potato, sliced
1 quart water
3 cubes chicken bouillon, crumbled
1 cup heavy cream
1 ¼ tablespoons ground nutmeg
1 teaspoon ground black pepper
salt to taste

Steps:

  • Preheat oven to 425 degrees F (220 degrees C).
  • Place pumpkin, carrots and onions in a baking dish or roasting pan. Drizzle with vegetable oil.
  • Bake in preheated oven 40 minutes, until soft but not blackened.
  • In a large pot over medium heat, bring water and bouillon to a boil. Cook potato in simmering water until soft, about 20 minutes.
  • Combine potato and water with roasted vegetables and puree in a blender or food processor or using an immersion blender until smooth. Return to pot over low heat, and stir in cream, nutmeg, pepper and salt. Heat gently; serve.

  • Combine Pumpkin Puree with 1 cup broth. Puree with an immersion blender or regular blender until very smooth. Set aside.
  • Heat olive oil in a large pot on medium-high heat. Add onion, garlic, and carrots and sauté until soft, about 5 minutes. Add celery, zucchini, broccoli, and mushrooms and continue cooking for 3 or 4 more minutes. Add spinach, tomatoes, and remaining broth and bring to a boil.
  • If you're cooking this by yourself, you may want to chop all the veggies beforehand. If you're cooking with a friend, she can be chopping while you're stirring (or vice versa)-- so just chop things up in sequence and the timing should work out just fine.
  • After the broth comes to a boil, reduce heat so it's a slow simmer. Add the thinned pumpkin puree and continue cooking. Add the spices and simmer for at least 10 more minutes, until the tomatoes are cooked and have release their juices.
