RASPBERRY NUTTER BUTTER BARS



Raspberry Nutter Butter Bars image

Reminiscent of a classic, a peanut butter and jelly sandwich minus the bread, these bars hit the spot with a little youthful nostalgia. A glass of cold milk is a great accompaniment. One 16-ounce package of Nutter Butter sandwich cookies pulsed in a food processor makes 4 cups of crumbs, which is exactly enough for one recipe.

2 1/2 cups/280 grams Nutter Butter sandwich cookie crumbs
4 tablespoons/60 grams unsalted butter (1/2 stick), melted
1 tablespoon brown sugar
3/4 teaspoon kosher salt
1 1/2 cups/170 grams Nutter Butter sandwich cookie crumbs
1/2 cup/40 grams old-fashioned oats
2 tablespoons all-purpose flour
1/2 teaspoon kosher salt
3 tablespoons/45 grams unsalted butter, at room temperature
3/4 cup/240 grams raspberry jam

Steps:

  • Heat oven to 350 degrees. Line a 9-inch square pan with parchment paper, leaving a 2-inch overhang on two sides.
  • Make the crust: In a medium bowl, combine cookie crumbs, butter, brown sugar and salt. Spread mixture evenly over bottom of prepared pan and press down into an even layer. Bake until fragrant and a shade darker, 10 to 12 minutes.
  • Meanwhile, prepare topping: Combine cookie crumbs, oats, flour and salt. Knead in butter with your fingers until the crumbs are evenly moistened.
  • Spread jam over top of baked crust. Sprinkle topping evenly over top of jam. Bake until topping is deep golden brown and jam is bubbling, 25 to 30 minutes. Transfer to rack to cool completely.
  • To serve, use a sharp knife to release edges. Using parchment overhang, lift and transfer to a cutting board and cut into 16 or 20 squares.

Many of my treasured recipes have come from a group of moms I used to meet with for tea and coffee when our children were small. I adapted this recipe from a friend who made it with strawberry jam. I use raspberry jam and fresh berries from my big raspberry patch.

1 cup butter, softened
1 cup sugar
2 egg yolks
2 cups all-purpose flour
1 cup finely chopped walnuts
1/2 cup seedless raspberry jam

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Beat in egg yolks. Gradually add flour and mix well. Stir in walnuts., Pat half of the mixture into a greased 8-in. square baking pan. Spread with jam. Crumble remaining crust mixture over jam. Bake at 350° for 35-40 minutes or until lightly browned. Cool on a wire rack.

2 1/4 cups all-purpose flour
1 cup sugar
1 cup chopped pecans
1 cup Land O Lakes® Butter softened
1 large Land O Lakes® Egg
Filling
3/4 cup raspberry preserves *

Steps:

  • Heat oven to 350°F. Line 8- or 9-inch square baking pan with aluminum foil, extending foil over edges. Grease foil; set aside.
  • Combine all crumb mixture ingredients in bowl. Beat at low speed, scraping bowl often, until mixture resembles coarse crumbs. Reserve 2 cups crumb mixture; set aside.
  • Press remaining crumb mixture on bottom of prepared baking pan. Spread preserves to within 1/2 inch of edge. Crumble reserved crumb mixture over preserves.
  • Bake 40-50 minutes or until lightly browned. Cool completely; cut into bars.

1/3 cup packed brown sugar
1/4 cup sugar
1 egg

1/4 teaspoon salt
3/4 cup chopped pecans
2/3 cup raspberry jam
2 tablespoons lemon juice
GLAZE:

1/2 cup light brown sugar, firmly packed
1/4 teaspoon salt
1 (12 ounce) package semisweet chocolate morsels, divided
1 (14 ounce) can sweetened condensed milk
1/2 cup nuts, chopped
1/3 cup seedless raspberry jam

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 13 x 9-inch baking pan.
  • In a large bowl, beat butter until creamy.
  • Beat in flour, sugar, and salt until well mixed.
  • With floured fingers, press 1 1/4 cup crumb mixture onto bottom of prepared pan; reserving remaining crumb mixture.
  • Bake for 10 to 12 minutes or until edges are golden brown.
  • Combine 1 cup semi-sweet chocolate morsels and sweetened condensed milk in a small heavy duty saucepan.
  • Melt over low heat until smooth.
  • Spread over hot crust.
  • Stir nuts into reserved crumb mixture; sprinkle evenly over chocolate filling.
  • Drop teaspoonfuls of raspberry jam over crumb mixture.
  • Sprinkle with remaining semi-sweet chocolate morsels.
  • Continue baking for 25 to 30 minutes or until center is set.

Number Of Ingredients 7

200g plain flour
200g porridge oat
250g pack butter , room temperature, cut into small pieces
175g light muscovado sugar
finely grated zest of 1 lemon
100g pack pine nut
2 punnets raspberries (total weight 250g/9oz)

Steps:

  • Preheat the oven to fan 170C/ conventional 190C/gas 5. Butter a shallow 23cm square tin. Tip the flour, oats and butter into a mixing bowl and use your fingers to work the mixture together to make coarse crumbs. Mix in the sugar, lemon zest and three quarters of the pine nuts using your hands, then press the mixture together well so it forms large sticky clumps.
  • Drop about two thirds of the oat mixture into the base of the tin, spread it out and press down very lightly - don't pack it too firmly. Scatter the raspberries on top, sprinkle the rest of the oat mixture over, then the rest of the pine nuts and press everything down lightly.
  • Bake for 35-40 minutes until pale golden on top. Cut into 12 bars with a sharp knife while still warm, then leave to cool in the tin before removing. Will keep for 2-3 days.

2 cups nestle toll house miniature semisweet chocolate chips
1 cup chopped slivered almonds
1 cup sifted powdered sugar
1 -2 tablespoon milk

Steps:

  • PREHEAT oven to 350°F Line 13 x 9-inch baking pan with foil; grease foil.
  • COMBINE flour and sugar in large mixer bowl. Cut butter into mixture with pastry blender or two knives until mixture is crumbly. Add egg and almond extract; stir with a fork until moistened (mixture will still be crumbly). Reserve 1 cup of the crumb mixture. Press remaining mixture in bottom of prepared pan. Spread preserves over crust, leaving 1/2-inch border.
  • COMBINE reserved crumbs, morsels and almonds in same bowl. Sprinkle chocolate mixture over preserves layer, pressing lightly.
  • BAKE for 30 to 35 minutes or until top is golden brown. Cool slightly in pan on wire rack. While still warm, score into 4 dozen bars. Cool completely in pan.
  • COMBINE powdered sugar and enough milk in small bowl to make drizzling consistency. Drizzle over bars; let stand until set. Cut bars along scored lines.
