CRISPY SHEET-PAN BROCCOLI

Three heads of broccoli spread across two sheet pans may seem like a lot. But when broccoli is this tender, crispy, and caramelized, it's hard to stop eating it right off the pan.

3 large heads broccoli (3 ½ to 4 pounds total), trimmed, cut into florets with some stalk attached (cut the florets in half if large)
½ cup olive oil
Kosher salt
Freshly ground black pepper

Steps:

  • Set the racks in the upper and lower thirds of the oven and preheat it to 425°F.
  • Line two large rimmed baking sheets with parchment paper. Divide the broccoli between the sheets, arranging them in a single layer. Drizzle each sheet of broccoli with ¼ cup oil, then season each with ½ teaspoon salt and a few grinds of pepper. Roast, stirring once and rotating the sheets halfway through, until the broccoli is crispy and charred in spots, 35 to 40 minutes. Taste and adjust the seasoning, if desired.

1 bunch broccoli, cut into pieces
1/4 cup olive oil
2 -4 garlic cloves, smashed and diced
1/4 teaspoon red pepper flakes (optional)

1/4 cup parmesan cheese, grated

Steps:

  • Preheat to the oven to 400°F.
  • Mix together the oil, garlic, red pepper flakes, salt and pepper.
  • Toss together the broccoli and the oil mixture in a large bowl.
  • You may have to adjust the oil a bit if your bunch of broccoli is smallish.
  • You don't want it swimming in oil on the cookie sheet.
  • Put broccoli on cookie sheet.
  • Place in the oven for about 10-15 minutes.
  • Be sure and check often to make sure it's not burning, you want it to caramelize but not burn.
  • If you don't like al dente broccoli, cook a little longer.
  • I usually remove after 10-15 minutes.
  • When the broccoli is as done as you like remove from the oven and toss with the cheese.

2 tablespoons olive oil
sea salt and freshly-cracked black pepper

Steps:

  • Heat oven to 450°F. Line a rimmed baking sheet with parchment paper* or mist with cooking spray.
  • Spread the broccoli florets out evenly on the baking sheet and drizzle evenly with olive oil. Toss until the florets are evenly coated. Season with salt and pepper.

3 tablespoons water
1/4 teaspoon salt
1/8 teaspoon pepper (I used garlic pepper blend)
2 tablespoons vegetable oil
1 1/4 lbs broccoli, separated into small florets, and stems, sliced (about 5 cups florets and 3/4 cup stems in total)

Steps:

  • Stir water, salt, and pepper together in small bowl, til salt dissolves.
  • In a large skillet, heat oil over medium high then add the broccoli stems in an even layer.
  • Don't stir for about two minutes until they get light browned.
  • Add the florets and toss to combine and don't stir for another two minutes, until they just begin to brown.
  • Add water spice mixture and cover pan with lid, cooking for two minutes.
  • Uncover and cook until desired doneness.
  • Note: I eyeballed my broccoli measurements and it worked fine. I did add a little water to mine.

PAN ROASTED BROCCOLI RECIPE

Red chili powder 1 tsp
Coriander powder 1 tsp
Turmeric powder 1 tsp
Grated ginger 1 tsp
Curry leaves a sprig
Urad dal 1 tsp
Mustard seeds 1 tsp
Vegetable oil 2 tbsp
Salt to taste

Steps:

  • Heat a deep pan with about 3 cups of water.
  • Once the water comes to a rolling boil, switch off the flame. Place the broccoli florets in the hot water. Make sure all of the florets are covered completely in water.
  • Cover with a lid and let sit for 3 to 5 mins.
  • Once done, remove lid and drain water completely. Please note that this step is key to making good pan roasted broccoli.
  • Heat a pan with 2 tbsp of oil.
  • Once hot, pop the mustard.
  • Quickly toss in the curry leaves, urad dal, ginger and turmeric powder.
  • Reduce flame to medium.
  • Once the dal turns brown, add the blanched broccoli florets to the pan and stir gently making sure that oil coats the florets evenly.
  • Now let the florets roast slowly on medium flame. This may take anywhere between 7 to 8 mins.
  • Make sure you keep stirring and tossing them in between to avoid burning.
  • Once the florets turn golden, add the chili powder, coriander powder and salt and give a good but gentle mix.
  • Take off flame and serve hot with rice and rasam.

  • While the broccolini is roasting, prepare the breadcrumb mixture.
  • Add the pancetta to a medium saute pan and cook over medium heat, stirring frequently, until it is browned and slightly crispy and the fat is rendered. About 4 minutes.
  • Add the breadcrumbs to the pancetta and cook for another 4 minutes, until the mixture becomes fragrant.
  • Then, add the garlic, thyme, and lemon zest. Cook for 1 more minute. Remove from heat and set aside.
  • Lay the roasted broccolini out on a large serving platter and drizzle with the lemon juice.
  • Then, sprinkle lightly with about 1/3 of the total breadcrumb mixture.
  • Serve, with the remaining breadcrumb mixture in a bowl for adding to individual servings as desired.

1 large head broccoli (about 1 3/4 pounds or 2 small broccoli crowns)
2 1/2 tablespoons extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon granulated sugar
¼ teaspoon ground black pepper
Pinch red pepper flakes (optional)
Toppings of choice: Parmesan (balsamic glaze, or a squeeze of lemon)

Steps:

  • Place a rack in the center of your oven (if baking the broccoli on one sheet pan) and preheat the oven to 425 degrees F. For easy clean-up, line a large, rimmed baking sheet with parchment paper. (If you will be using two sheet pans, place the racks in the upper and lower thirds of the oven and line two baking sheets.)
  • Prep the stem: Cut the broccoli stalk away from the head with florets. Place the stem on your cutting board, and trim off the outer edge along one of its long sides (you want to cut away about ¼ inch). Turn the cut side down onto your cutting board and trim off the next side. Repeat with the remaining two sides. You should be left with a rectangular-shaped piece of the stem's core (and it is delish!). If your remaining stem is large, cut it into pieces that are about 2 or 3 inches long and ½-inch wide. Place the cut pieces on the prepared baking sheet. Discard the outer parts of the stem you chopped away.
  • Cut the crowns into large, flat florets: If your crowns are small (about 3 or 4 inches in diameter), cut them into 8 wedges. If they are larger, cut them into 10 wedges. You want the florets to be roughly 1 1/2 to 2-inches wide at the top and 1/2 to 3/4-inch or so thick. These will be a bit larger than the florets you are used to seeing, but TRUST ME, it works. Add them to the sheet with the stems. (See photos in the blog post for guidance).
  • Drizzle the broccoli with the oil and sprinkle with the salt, sugar, and pepper. Toss to combine and evenly coat.
  • Spread the broccoli into an even layer on the prepared baking sheet, ensuring that the pieces have plenty of room for air to circulate. If the broccoli is crowded, divide it between two sheets. Flip the florets so that the largest cut side is touching the pan.
  • Bake the broccoli for 20 minutes, then flip. Rotate the pan 180 degrees and continue baking for 5 to 10 additional minutes, until it is tender and the tips of the florets are turning dark and crispy (if baking on two sheet pans, switch the pans' positions on the upper and lower rack when you flip). Add any toppings of choice. Enjoy immediately.

Easy 10 Minute Pan-Roasted Broccoli image

This recipe for pan-roasted broccoli is SO easy and delicious that it's guaranteed to be your new go-to side dish! You only need 4 ingredients and it's ready in 10 minutes!

2 Tbsp olive oil
2 full heads broccoli (stems too, not just the crown)
1/2-1 tsp salt
1/4-1/2 tsp pepper

Steps:

  • In a cast iron skillet or heavy-bottom pan, heat olive oil over medium-low heat for 2-3 minutes.
  • Meanwhile, prepare the broccoli by cutting entire head of broccoli in half. Laying the flat side down, cut off each floret from the base of the floret all the way down to the bottom of the stem.
  • When the oil is hot, add all the broccoli to the pan, arranging so that as many pieces as possible are touching the bottom of the pan. Season with 1/2 tsp salt plus pepper to taste and allow to cook for 5 minutes, undisturbed.
  • After 5 minutes, stir and rearrange the broccoli so that the sides that were down are now facing up. Season again with salt and pepper and cover with a lid. Allow to cook for 3 more minutes.
  • Stir before serving. Best when served hot.

1 pound broccoli florets or broccolini
2 tablespoons olive oil
1 tablespoon lemon juice
1/2 teaspoon salt
1/4 teaspoon pepper
2 garlic cloves, minced
1/2 teaspoon grated lemon zest
1/4 cup freshly grated Parmesan

Steps:

  • Preheat oven to 500 degrees F. BROCCOLI: trim florets into uniform size. BROCCOLINI: trim the bottom 2 inches off the broccolini stems and cut any thick stems in half so the broccolini stems are roughly the same size.
  • BROCCOLI: Line a regular size baking sheet with foil and spray with cooking spray. BROCCOLINI: Line a large jelly roll baking sheet with foil (or use two baking sheets) and lightly spray with cooking spray.
  • Add broccoli(ni) to pan and drizzle with olive oil, lemon juice and sprinkle with salt and pepper. Add garlic and toss until evenly coated. Line in a single layer.
  • Roast for 12-15 minutes OR until broccoli(ni) reaches desired crisp-tenderness. Remove from oven and toss with lemon zest and additional lemon juice if desired (taste first). Spread back into an even layer and sprinkle with Parmesan. Broil until Parmesan is melted, approximately 2 minutes. Continue to broil if desired for crispier or more charred florets. Season with additional salt and pepper to taste if desired.

6 cups broccoli florets
4 slices of bacon (cooked and chopped)
2 Tablespoon extra virgin olive oil
2 cloves garlic (minced)
1/2 teaspoon sea salt
1/2 teaspoon black pepper

Steps:

  • Wash and cut broccoli in medium florets
  • In a bowl combine 2 Tbsp extra virgin olive oil, 2 minced cloves of garlic, 1/2 tsp black pepper and 1/2 tsp sea salt. Add broccoli and toss well until all florets are covered in the olive oil mixture.
  • Spread broccoli on a foil lined baking sheet and roast at 400 F for about 12 minutes until tender.
  • While the broccoli are roasting in the oven, cook bacon and cut in small pieces.
  • When broccoli are ready, mix in bacon and serve warm.

Steps:

  • Preheat the oven to 425 degrees.
  • Line a large, rimmed baking sheet with foil and spritz lightly with nonstick cooking spray.
  • Toss the broccoli in the olive oil until all of the florets are lightly coated.
  • Arrange the broccoli in a single layer across the pan.
  • Season with salt and pepper.
  • Place in the oven and bake for 9 to 10 minutes.
  • Remove from the oven, stir gently, and return to the oven, baking for an additional 9 to 10 minutes or until softened as desired.
