MIDDLE EASTERN SPICED POTATO CAKES

1 1/2 pounds russet potatoes (about 2 large)
Kosher salt
2 1/2 tablespoons granulated garlic
3 teaspoons freshly cracked black pepper
1 1/2 teaspoons ground cumin
1/2 teaspoon ground cinnamon
1/4 teaspoon fenugreek
1/8 teaspoon turmeric
5 grinds nutmeg, freshly grated on a zester
1 large egg
3 scallions, sliced
1/3 cup unbleached all-purpose flour
Canola oil, for frying
3 tablespoons chopped fresh cilantro
1 lemon, cut into wedges

Steps:

  • Preheat the oven to 375 degrees F.
  • Add the potatoes to a pot and cover with 6 cups water. Season well with salt. Bring to a rolling boil over high heat and cook the potatoes until easily pierced with the tip of a sharp knife, about 9 minutes. Drain and cool, about 10 minutes. Peel and set aside.
  • Combine the granulated garlic, 4 teaspoons salt, the black pepper, cumin, cinnamon, fenugreek, turmeric and nutmeg in a small mixing bowl. Set aside.
  • Once cooled, crush the potatoes gently; the texture should be course and crumbly. Place into a bowl.
  • Thoroughly combine the egg, scallions, 1/4 cup of the flour and the spice mix in a bowl. Add to the potatoes and stir to combine. Season the remaining flour with 1 teaspoon salt and some pepper. Form the potatoes into 2 1/2-ounce patties. Sprinkle the tops and bottoms with the seasoned flour.
  • Set a large nonstick pan over medium-high heat and add 3 tablespoons oil. Once hot, fry the patties, in batches if necessary, on the first side until golden brown, about 3 minutes. Flip and place into the oven until crispy on both sides and hot through, another 3 minutes. Remove from the oven and cool slightly.
  • To serve, arrange the patties on a serving dish. Garnish with cilantro and serve with lemon wedges.

1 lb. potatoes, peeled, quartered
1/4 cup oil, divided
2 tsp. paprika or annatto seasoning, divided
1/4 cup chopped onion
1 cup KRAFT Shredded Mozzarella Cheese
1/2 recipe Easy Peanut Sauce

Steps:

  • Bring 2 quarts water to boil in large saucepan. Add potatoes; cook 20 min. or until potatoes are tender; drain. Place in large bowl; mash until smooth.
  • Heat 2 Tbsp. of the oil in medium skillet on medium heat. Add onions and 1 tsp. of the paprika; cook and stir until onions are tender. Stir into the mashed potatoes; cool. Stir in cheese. Shape evenly into 6 (1-inch-thick) patties.
  • Mix remaining 2 Tbsp. oil and 1 tsp. paprika until well blended. Heat large nonstick skillet, griddle or cast iron skillet on medium heat. Brush a little of the oil mixture onto bottom of pan. Add patties; cook 3 minutes or until bottom is crisp and golden brown. Brush tops of patties with remaining oil mixture; turn over. Cook an additional 3 minutes or until crisp and golden brown on both sides. Serve each patty topped with 2 Tbsp. of the Peanut Sauce.

1 1/2 lbs yukon gold potatoes (yellow fleshed)
2 garlic cloves, finely chopped
1/3 cup scallion (plus extra 1/2 cup finely chopped)
6 tablespoons annatto oil, divided
1/2 teaspoon ground cumin
1 medium tomatoes, chopped
3/4 cup milk
1/2 cup crunchy peanut butter
2 cups muenster cheese, coarsley grated

Steps:

  • Peel potatoes and cut into 1 inch pieces. Cover with cold water add salt and simmer til very tender.
  • While potatoes boil, cook garlic and 1/3 cup scallions in 2 tbs of annatto oil in a small saucepan over medium heat, stirring until softened about 2 minutes.
  • Stir in cumin and 1/4 tsp pepper and cook 1 minute. Add tomato and cook stirring 2 minutes.
  • Add milk and bring to a bare simmer, then remove from heat and stir in peanut butter until well combined. Keep covered and warm off heat.
  • Drain and mash potatoes. Cook remaining 1/2 cup of scallions with 1/4 tsp salt and pepper in 2 tbs of annatto oil until softened.
  • Stir into potatoes along with the cheese. Form into 8 balls, flatten into a 3 inch patty.
  • Heat 1 tbs annato oil in a non stick pan over medium high, then fry cakes in two batches turning over once until crusty both sides (about 6 mins a side).
  • Gently reheat peanut sauce thinning with a little water to creamy consistency if needed. Serve with the potato cakes.

Steps:

Stir in cumin and 1/4 teaspoon pepper and cook, stirring, 1 minute. Add tomato and cook, stirring, 2 minutes. Add milk and bring to a bare simmer, then remove from heat and stir in peanut butter until combined well. Keep peanut sauce warm, covered, off heat.
  • Drain potatoes, then mash in a bowl.
  • Cook remaining 1/2 cup scallions with 1/4 teaspoon salt and 1/4 teaspoon pepper in 2 tablespoons annatto oil in a small saucepan over medium heat, stirring, until scallions are softened, then stir into potatoes along with cheese. Form potato mixture into 8 balls and flatten each into a 3-inch patty.
  • Heat 1 tablespoon annatto oil in a 12-inch nonstick skillet over medium-high heat until hot, then fry cakes in 2 batches, turning over once, until crusty, about 6 minutes per batch. Add remaining tablespoon annatto oil for second batch.
  • Gently reheat peanut sauce, thinning to a creamy consistency with a little water if necessary. Season sauce with salt and serve with potato cakes.

The sweet potatoes can be replaced with a winter squash, such as buttercup. Serve them warm, plain, or topped with maple syrup or a fruit chutney.

2 sweet potatoes, peeled and cut into 1-inch cubes
1 tablespoon canola oil
1 fresh jalapeno chile, seeded and finely chopped
3 green onions with tops, thinly sliced
2 cloves garlic, minced
1 teaspoon brown sugar
¼ teaspoon allspice
salt and pepper to taste
¼ cup canola oil

Steps:

  • Place the sweet potatoes in a pan, and fill with enough water to cover. Bring to a boil, and cook until potatoes are easily pierced with fork, about 10 minutes. Drain, place the potatoes in a mixing bowl, and mash.
  • Meanwhile, heat 1 tablespoon canola oil in a skillet over medium-high heat. Stir in the jalapeno pepper, green onions, and garlic. Cook and stir until the vegetables are soft, about 5 minutes. Stir the vegetables, brown sugar, and allspice into the mashed sweet potatoes. Season to taste with salt and pepper.
  • Form the sweet potato mixture into 12 slightly flattened cakes about 2 to 2 1/2 inches in diameter using your hands or large spoons. Place on a plate.
  • Heat 1/4 cup canola oil in a skillet over medium-high heat. Place the sweet potato cakes in the skillet, four at a time, and cook, turning once, until golden brown on each side, 6 to 8 minutes. Add more oil if needed.

4 cups potatoes, peeled and cubed
1/2 teaspoon salt
1 medium egg yolk
2 tablespoons cornstarch
1 large onion, chopped
2 tablespoons margarine
1/2 cup parmesan cheese, grated
1/2 cup low fat cottage cheese
3 medium aji chilies or 3 medium wax chilies, Chopped
1/4 cup olive oil

Steps:

  • Place potatoes in large saucepan, cover with water and add salt. Cook until tender about 15 minutes.
  • Drain and mash. add egg yolk and cornstarch. Mix well and set aside.
  • Saute onions in margarine until golden. Add cheeses and chile. Mix well.
  • Shape potato mixture into 10 balls putting some of the chile-cheese mixture in the center of each ball.
  • Refrigerate for 30 minutes. Flatten balls slightly and saute in hot oil until well browned on both sides.
