BACON AND GORGONZOLA CORNBREAD SLIDERS WITH CHIPOTLE MAYO
Cornbread muffins baked with crumbled Gorgonzola and bacon are split like buns for these beefy sliders with spicy chipotle mayo.

- Heat oven to 400 degrees F. Spray 2 cast iron straight-sided muffin pans (6 cups each) with no-stick cooking spray. Stir together cornbread mix, flour, milk, sour cream, and egg in medium bowl until well blended. Stir in chives, bacon, and cheese. Fill prepared muffin pans 3/4 full. Bake 10 to 12 minutes or until golden brown. (Any remaining batter may be made into additional muffins.)
- Melt butter in a 12-inch Lodge cast iron skillet over medium-low heat. Add onions. Cook until onions are translucent, 8 to 10 minutes. Remove onions and set aside.
- Combine ground chuck, egg, bread crumbs, garlic, salt, and pepper in large bowl. Blend well. Divide into 12 equal portions. Pat out into thin burgers. Cook in skillet over medium to medium-high heat until done. Top each burger with slice of cheese.
- Combine mayonnaise, chipotle pepper and adobo sauce. Slice cornbread to make buns. Spread thin layer of chipotle mayo on top and bottom. Place burger on bottom halves. Top with onions. Place top on burger.

- For the Chipotle Mayonnaise:.
- Mix together ingredients until combined.
- For the Burgers:.
- Divide the ground beef into four 1/3 pound burgers. With a light hand, shape into patties. Season both sides with a salt, pepper and garlic powder. Set aside until ready to grill. May, also, be pan fried.
- Heat grill (or pan) to medium - medium-high heat and grill for a 4-7 minutes on each side until desired doneness. During the last minute of cooking , add a slice of cheese over each burger and close cover until cheese begins to melt. While the burgers are cooking, add the onion slices and allow them to char a bit on each side and begin to soften. Remove burger and onions from grill and allow to rest for 2-3 minutes before serving.
- Place a burger on each toasted bun bottom, topping with 2 slices of bacon and 4-5 jalapeno slices. Slather some of the chipotle mayo on the top bun and place a grilled onion round on top. Add lettuce, if so desired, and top with the top half of the bun.

- Preheat an outdoor grill for medium-high heat and lightly oil the grate. Butter each half of hamburger buns.
- Place bacon in a heavy skillet and cook over medium-high heat, turning occasionally, until crisp, 10 to 12 minutes. Drain bacon slices on paper towels. Set the skillet aside, reserving grease.
- Mix ground beef, Worcestershire sauce, and steak seasoning together in a large bowl; do not overmix. Form into 4 patties. Make a thumbprint in the middle of each patty to keep it from shrinking as it cooks.
- Grill patties on the preheated grill until preferred doneness, about 6 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (71 degrees C). Top each burger with 2 slices bacon and a Cheddar cheese slice; close the grill lid until cheese is melted, about 1 minute. Remove patties from the grill.
- Place buns on the grill, buttered-side down, and cook until browned, about 1 minute. Remove from the grill. Place 1 patty on the bottom half of each bun.
- Reheat the bacon grease in the skillet over medium-high heat. Crack eggs into the hot skillet and fry until whites are cooked but yolk is still runny, about 4 minutes. Immediately place 1 egg on top of each patty. Top with lettuce, onion, avocado, and remaining buns.

Chipotle peppers are smoked jalapeños. They usually come in cans and have a vinegar based sauce. You can omit the egg if you serve your meat rare or medium-rare.Ole'.To add as note re: the burger patties not holding together, after reviewing all of the reviews, it is my descision not to change the recipe. I make these often and have never had the problem. If recipes like meatloaf, etc.and this one don't hold together, more breadcrumbs are needed. If too dry, add some more liquid such a a few drops of water.

- Mix in large bowl.
- Shape into 4 even burgers. Place the mayonnaise and chipotle chile in blender. Cover and blend until nice and smooth.
- Grill or broil burgers, turning once, until desired doneness. Serve on buns topped with chipolte chile mayonnaise and choice of toppings.
- Serve with your favorite corn tortilla chips.

- Combine the ground beef or turkey, onion, jalapeno, salt and pepper in small bowl. Mix and shape into two hamburger patties. Press thumb into the top of each patty and make small indentation to keep the burger from swelling in the middle. Preheat the grill to medium high and cook burgers for about 5 minutes on each side. Place 1 piece of cheese on each burger in the last minute of cooking. Remove from heat and loosely cover.
- Spray skillet with nonstick cooking spray. Add 2 eggs and cook over medium low heat until whites are firm. Remove from heat. Cover and keep in pan to stay warm.
