EGG BUNS



Egg Buns image

A must try Sri Lankan bakery bun filled with eggs onions and peppers that is so good for breakfast.

Time 30m

Yield 6

Number Of Ingredients 15

250 grams all-purpose flour
4 grams Instant dry yeast
20 grams sugar
25 grams softened butter or margarine
5 grams salt
1 egg (approx 50g)
50 grams warm water
55 grams warm milk
1 egg york
2 teaspoons milk
boiled eggs cut into quarters length wise
onions
peppers
salt to sprink on eggs
any condiment of your choice such as mayo, ketchup

Steps:

  • Mix everything except butter together in a mixer for 6 mins. Double the time if kneading by hand.When everything comes together add butter and knead in the machine for another 6 mins or 12mins by hand. The dough should be soft and tacky. When it's completely kneaded, take the dough out and shape it into a ball with your hands.
  • Put the dough back into the mixer bowl back, cover with a plastic wrap and leave it in a warm place until it's doubled in size.
  • When the dough has doubled in size, punch it down and transfer to the benchtop and divide into 6 equal pieces, make them into balls, cover with a towel and let them rest for 15 mins.
  • After 15mins, take one ball at a time, make approx 6*4 inch rectangles and roll it into cylinders (approx 6 inches long). They might shrink back a little but that's okay.
  • Arrange them on a baking tray, cover with a towel, allow them to rise again for about an hour until they are almost doubled in size. Meanwhile, preheat the oven to 400F for 30mins.
  • Egg wash the buns, bake them for approx 12mins until they are golden. Take them out and let them rest for at least 30mins before you cut them open to fill with anything.
  • apply some Mayo or butter to the opening of the buns. Fill with boiled eggs, onions, and peppers. Sprinkle some salt on the eggs.

2 tablespoons butter
4 large eggs, lightly beaten
2 packages (2 ounces each) thinly sliced smoked beef
1/3 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon pepper
1 package (16 ounces) hot roll mix
1 tablespoon whole milk

Steps:

  • In a large skillet, heat butter until hot. Add eggs; cook and stir over medium heat until eggs are completely set. Stir in the beef, mayonnaise, salt and pepper. Chill. , Prepare roll mix according to package directions. Divide dough into six portions; roll each portion into an 8-in. x 3-in. rectangle. Spoon 1/3 cup of egg mixture on half of each rectangle. Fold over and seal edges. Place on a greased baking sheet. Cover and let rise in a warm place until doubled, about 30 minutes. , Brush tops with milk. Bake at 350° for 20-25 minutes or until golden brown. Serve warm.

4 tablespoons vegetable oil
1-inch grated fresh ginger
2 cloves garlic, finely chopped
2 scallions, sliced thinly
1 carrot, cut into 1-inch julienne strips
1 small red pepper, cut into 1-inch julienne strips
1 cup Napa cabbage, shredded
1/4 cup chicken broth
2 tablespoons reduced-sodium soy sauce
1 tablespoon sugar
1 to 2 tablespoons sesame oil
20 wonton wrappers covered loosely with a damp paper towel to prevent drying
10 shrimps, cooked and minced
1/3 cup lite soy sauce
1/3 cup rice vinegar
1 tablespoon honey
1 to 2 teaspoons sesame oil
Pinch of red pepper flakes

Steps:

  • In a wok or skillet, stir-fry the ginger and garlic in 2 tablespoons of oil until fragrant, about 30 seconds. Add scallions, carrots, and red pepper and stir-fry over high heat for 2 minutes.
  • In a bowl, combine the chicken broth, soy sauce, and sugar. Add the Napa cabbage and broth mixture. Bring to a boil and simmer 5 minutes, stirring occasionally, until the vegetables are soft. Add sesame oil, cool for at least 15 minutes, and strain. Fold in the minced shrimp.
  • Fill and roll the egg roll wrappers, using 1 tablespoon of filling for each roll. Working with 1 wonton wrapper at a time, place the wrapper with one corner of the diamond closest to you. Place 1 teaspoon of the filling in the center of the wrapper. Roll the corner closest to you over the filling. Brush the top corner with water. Fold in the sides of the wonton and continue rolling the egg roll up until it is closed. Press to seal, set aside, and continue with the remaining ingredients.
  • In a skillet set over moderately high heat, heat the remaining oil and saute the egg rolls until golden brown on all sides, using tongs to turn them. Serve when cool enough to eat, with dipping sauce.
  • Combine all ingredients in a bowl.
  • Wine Suggestion: Beringer White Zinfandel

1 pound ground pork
1 teaspoon ground ginger
1 teaspoon garlic powder
1 quart peanut oil for frying
2 tablespoons all-purpose flour
2 tablespoons water
2 cups shredded cabbage
2 ounces shredded carrots
8 (7 inch square) egg roll wrappers
2 tablespoons sesame seeds

Steps:

  • Season pork with ginger and garlic powder and mix thoroughly. Heat mixture in a medium skillet, stirring, until pork is cooked through and no longer pink. Set aside.
  • In another large skillet heat oil to about 375 degrees F (190 degrees C) or medium high heat. While oil is heating, combine flour and water in a bowl until they form a paste. In a separate bowl combine the cabbage, carrots and reserved pork mixture. Mix all together.
  • Lay out one egg roll skin with a corner pointed toward you. Place about a 1/4 to 1/3 cup of the cabbage, carrot and pork mixture on egg roll paper and fold corner up over the mixture. Fold left and right corners toward the center and continue to roll. Brush a bit of the flour paste on the final corner to help seal the egg roll.
  • Place egg rolls into heated oil and fry, turning occasionally, until golden brown. Remove from oil and drain on paper towels or rack. Put on serving plate and top with sesame seeds if desired.

4 cups plain flour
60 g butter
1/4 cup sugar
1/2 cup lukewarm milk
1 cup lukewarm water
30 g compressed yeast (see note)
1 egg yolk
1 teaspoon water, extra
12 tablespoons raspberry jam (approx)
1/3 cup water
1 cup sugar
125 g butter
1/2 teaspoon vanilla

Steps:

  • NOTE: 2 tsp of dry active yeast can be substituted for the compressed yeast. sift dry yeast with flour and sugar, rub in butter, add combined lukewarm milk and water, then proceed as for recipe).
  • cream yeast with 1 tsp of the sugar, add lukewarm milk, let stand 10 to 15 minutes until frothy.
  • sift flour and remainging sugar into bowl, rub in butter until mixture resembles fine breadcrumbs.
  • make well in centre of dry ingredients, add yeast mixture and lukewarm water, mix to a soft dough.
  • turn out on to floured surface.
  • knead 5 minutes.
  • put dough into lightly oiled bowl.
  • cover, stand in warm place 1 hour or until dough has doubled in bulk.
  • punch dough down in bowl.
  • turn out on to floured surface: knead 5 minutes. divide into twelve even portions.
  • knead each portion of dough into a round.
  • put rounds on well greased oven tray, allowing room for spreading.
  • set in warm place 10 minutes or until half doubled in size.
  • brush with combined beaten egg yolk and extra water.
  • bake in hot oven 10 minutes,reduce heat to moderate, bake further 15 minutes or until golden brown.
  • put buns on wire rack.
  • when cold, slit open, fill with raspberry jam and mock cream, dust each bun with a litle sifted icing sugar.
  • Mock Cream:.
  • combine water and sugar.sift over heat to dissolve sugar.bring to boil, remove from heat.
  • when completely cold, beat butter and vanilla until white and fluffy, gradually pour in cold syrup, beating constantly.

12 egg roll wraps
1/2-1 lb ground pork (or chicken or beef)
2 teaspoons chopped fresh ginger
2 garlic cloves, minced
1 teaspoon salt
1 teaspoon sugar
1/4 cup soy sauce
1 teaspoon sesame oil
1 (16 ounce) bag shredded cabbage and carrot coleslaw mix (not quite the whole bag)
4 green onions, sliced
1 egg, beaten with
1 teaspoon water
oil (for frying)

Steps:

  • Brown pork with ginger and garlic in pan; drain any grease.
  • Mix salt, sugar, soy sauce and sesame oil. Add to pork and mix well.
  • In large bowl combine cabbage mix and green onions.
  • Pour hot meat over vegetables and stir well. Let cool slightly.
  • Lay wrap in front of you so that it looks like a diamond.
  • Place 3 tablespoons pork filling in center of egg roll wrapper.
  • Fold bottom point up over filling and roll once.
  • Fold in right and left points.
  • Brush beaten egg on top point.
  • Finish rolling.
  • Set aside and repeat with remaining filling.
  • Heat 2-3 inches oil in large frying pan to very hot (350ºF).
  • Fry a few egg rolls in pan at a time, 2-3 minutes per side.
  • Drain on paper towels.
  • Serve with sweet and sour sauce, plum sauce, hoisin sauce or jalapeño pepper jelly.

0.5 cube Yeast
275 grams milk
100 grams sugar
50 grams butter
1 pinch salt
100 grams dried mixed Fruit to taste, finely chopped)
200 grams Marzipan
1 organic lemon (juiced and zested)
0.5 tsp ground ginger
200 grams powdered sugar
1 egg white
assorted Food coloring (as desired)

Steps:

  • For the egg buns, crumble yeast and stir into milk until smooth. Using a stand mixer fitted with a dough hook, thoroughly knead flour, sugar, butter, salt and yeast mixture to a smooth dough. Cover dough and let rise about 30 minutes in a warm place, such as in an oven set to 40-50°C (approximately 100-125°F) .
  • Knead dough on a floured surface and cut in half. Roll each half into a thin rope and cut each rope into 12 pieces. Roll dough pieces into balls.
  • For the filling, thoroughly knead chopped fruit, marzipan, ground ginger, lemon juice and lemon zest. Divide mixture into 24 equally sized balls. Preheat oven to 180°C (approximately 350°F). Flatten each dough ball, set a ball of filling in the center, wrap dough over filling and form each into an egg shape. Place eggs on a baking sheet lined with parchment paper. Bake eggs until golden brown, 15-20 minutes. Remove eggs from oven and let cool.
  • For the icing, mix powdered sugar with egg white and dye portions various colors as desired with food coloring. Coat egg buns with colored icing. Place remaining icing in freezer bags, cut a small corner from each and pipe icing onto eggs to decorate. Let icing dry before serving egg buns.
