LEFTOVER TURKEY NOODLES
Easy noodle dinner made with leftover turkey, veggies, and cream sauce.

Steps:
- Dice carrots and slice onions thinly. Pour broth and heavy cream into the cups so it's ready to use.
- Cook noodles according to the package instructions. You can save some time by cooking noodles at the same time as preparing veggies and sauce.Once noodles are al dente, strain off water and set noodles aside.
- Preheat a large cooking pan over medium heat. Add oil to saute veggies.
- Add onion to the pan and cook until transparent. Add carrots and cook both, stirring once in a while, until onions are golden brown.
- Smash garlic and add it to the pan. Cook until garlic is fragrant.
- Add peas and cook for a couple of minutes.
- Sprinkle flour over the veggies, mix well and cook for a minute or so, while constantly stirring.
- Keep stirring and slowly pour in broth. Keep stirring to make sure the sauce is smooth.
- Pour in heavy cream while still stirring. Stir slowly as the mixture begins to thicken. Season with salt and pepper.
- Add turkey and cook for a couple of minutes.
- Add pasta and carefully mix until pasta, sauce, veggies, and turkey are all evenly combined.
- Take off heat and serve.

BUTTERED EGG NOODLES
Steps:
- Cook 12 ounces wide egg noodles in salted boiling water until al dente. Transfer 1/4 cup cooking water to a skillet. Stir in 4 tablespoons butter, one at a time. Add some chopped parsley and/or dill, a squeeze of lemon juice, and salt and pepper. Drain the noodles and toss with the sauce.
TURKEY SOUP WITH EGG NOODLES AND VEGETABLES
I was looking for a way to use up some leftover turkey - Lo and Behold I came up with this wonderful soup from the Food Network on Quick Fix Meals with Robin Miller. Seeing as the holidays are right around the corner and there will be plenty of leftover turkey in our kitchens, I thought I would share my new found treasure with you ;) This recipe is super easy and tastes great! Your family will never know they are eating leftovers. I hope you enjoy this recipe as much as I did.

- Heat oil in a large stock pot or Dutch oven over medium heat.
- Add leeks, carrots, garlic, and celery; saute 4 minutes, or until soft.
- Add turkey, bay leaves, thyme, salt and black pepper; stir to mix well.
- Add chicken broth and bring mixture to a boil.
- Reduce heat to medium-low, partially cover and simmer 10 minutes.
- Return mixture to a boil and add egg noodles.
- Cook 10 minutes, until egg noodles are just tender.
- Stir in peas and cook until peas are just heated through, about 1 minute.
- Remove from heat, discard bay leaves and stir in parsley.
- Serves 4-6.

PEKING-STYLE NOODLES

- If you are using fresh noodles, blanch them first for 3-5 minutes in boiling water. If you are using dried noodles, cook them in boiling water according to packet instructions.
- Plunge them in cold water, drain thoroughly, toss them in the sesame oil and set aside until you are ready to use them. Covered with cling film, they can be kept for up to 2 hours in the refrigerator.
- Heat a wok or large frying pan until hot. Add the groundnut oil and, when it is very hot, add the garlic, ginger and spring onions. Stir fry for 15 seconds, then add the pork. Stir well to break up and stir fry for 2 minutes or more until the pork loses its pink colour.
- Add the rest of the ingredients except the spring onion garnish, stirring all the time. Bring to the boil, turn the heat down low and simmer for 5 minutes.
- Plunge the noodles into boiling water for 30 seconds or until they are just heated through, then drain well in a colander or sieve. Quickly tip the noodles into a large bowl and pour the hot sauce over the top. Mix everything together loosely then sprinkle on the spring onions and serve.

PEKING-STYLE ROASTED TURKEY
When creating this recipe, I was thinking about the crispy Peking ducks that hang in the windows of Chinese restaurants, and how hungry they make you feel. We're going to recreate that tasty skin on the outside of our turkey, as well as the flavors that go with it: a little sweet, a little salty, nice and crunchy. (Note: plan ahead to spend two days on the brining process.)

- For the brine-2 days in advance: Roughly cut up the orange, lemongrass, and ginger into pieces. Smash garlic. Bring water to a boil and add garlic, ginger, chilies, lemongrass, orange, salt, sugar, soy sauce, and sweet soy sauce. Let it simmer until sugar and salt dissolve, about 10 minutes. Then remove from heat and refrigerate overnight.
- For brining the turkey-1 day in advance: Place turkey and turkey neck into the chilled brine. Add more water, enough to cover the turkey. Cover with lid and refrigerate, 24 hours.
- For the turkey: Preheat oven to 325 degrees F. Remove turkey from the brine and place it on a sheet tray lined with paper towels; allow it to dry and come to room temperature, 1 hour. Meanwhile, prepare the aromatics to be cooked with the turkey. Roughly chop the fennel with stems, onions, apples and ginger. Place aromatics around the turkey and inside the cavity. Next, make a compound butter by combining butter and sweet soy sauce. Rub a quarter of the butter all over the turkey. Discard the thermometer probe that comes with the turkey and replace it with a kitchen thermometer in the same spot or in the deepest part of the turkey. Roast the turkey to 160 degrees F, about 3 hours. (Note: it will continue to cook after it comes out of the oven.)
- As the turkey cooks, baste it with more compound butter every 20-30 minutes.
- When the kitchen thermometer in the turkey reads 160 degrees F, remove it from the oven and let it rest. The temperature will continue to rise slowly as it rests outside the oven. Let the turkey rest for 30 minutes before slicing and serving.

- Cook the noodles according to pack instructions, then drain and rinse with cold water. Set aside. Mix the soy, lime juice and sugar together.
- Heat the oil in a large frying pan or wok and add the garlic, chilli, turkey and spring onions, fry for around 2 mins, then tip in the noodles and the beansprouts and fry for 1 min more. Pour the sauce into the pan and toss everything together well, working quickly to coat all the vegetables and noodles. Once everything is heated through, season, and tip into bowls. Scatter over the nuts and coriander, and serve with lime wedges for squeezing over.

TURKEY-VEGETABLE STEW WITH EGG NOODLES

- In a large stock pot or saucepan, combine broth, turkey burger pieces, onion, celery, carrots, and bay leaves. Season, to taste, with salt and black pepper. Set pan over high heat and bring to a boil. Add egg noodles and partially cover with lid. Cook 6 to 8 minutes, until noodles are just tender. Remove from heat, remove bay leaves and stir in parsley.
SWEDISH TURKEY MEATBALLS WITH EGG NOODLES

- Make meatballs:
- Into a blender tear 2 bread slices and grind into fine crumbs. Transfer crumbs to a large bowl. Make more bread crumbs in same manner and transfer to bowl. Finely chop enough onion to measure 3/4 cup and add to bread crumbs. In a small bowl whisk together egg, nutmeg, allspice, salt, and pepper and add to bread crumb mixture. Add turkey and with your hands mix mixture until just combined (do not overmix).
- Form turkey mixture into 1 1/4-inch balls (about 80) and arrange on a tray. Meatballs may be prepared up to this point 1 day ahead and chilled, covered.
- Preheat oven to 375°F.
- In a 12-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and brown meatballs in 2 batches, turning them occasionally, about 4 minutes for each batch. With a slotted spoon transfer meatballs as browned to a shallow baking pan and reserve any drippings in skillet. Bake meatballs, tightly covered with foil, in middle of oven until just cooked through, about 25 minutes.
- While meatballs are baking, fill a 6-quart kettle three fourths full with salted water and bring to a boil for noodles. Finely chop enough onion to measure 1/2 cup. In a small bowl whisk together cornstarch and 1/2 cup broth. To reserved drippings in skillet add Sherry and onion and simmer mixture, stirring and scraping up brown bits, until most of liquid is evaporated. Add remaining 2 1/2 cups broth and bring to a boil. Stir cornstarch mixture and whisk into broth mixture. Boil mixture, whisking, 1 minute and remove skillet from heat. Whisk in Worcestershire sauce, sour cream, and dill and keep sauce warm, covered, over low heat (do not let boil).
- Cook noodles in boiling water until al dente. Drain noodles well in a colander and transfer to a large serving dish. Gently toss noodles with sauce and meatballs and garnish with dill. Put 1 tablespoon preserves or cranberry sauce on top of each serving.
