Elegant Stuffed Eggs Romanoff for New Year's Eve image

Rich, elegant and delicious stuffed eggs with Roquefort, caviar, chives, butter, lemon, and a dash of cayenne! These are the perfect elegant appetizer to enjoy with a glass of champagne for New Year's eve, or other festive occasion.

12 hard-boiled eggs
6 ounces Roquefort cheese
1/3 cup black caviar
1 tablespoon chopped chives
1/4 cup soft butter
1/2 lemon, juice of
1 dash cayenne

Steps:

  • Cut eggs lengthwise; remove yolks.
  • Crush Roquefort and mix with caviar, chives, butter, lemon juice, dash of cayenne and mashed yolk of 12 eggs.
  • Fill egg whites through pastry bag. Put in refrigerator until ready to serve.

Yield Makes 24 stuffed eggs

Number Of Ingredients 5

12 hard-boiled large eggs
2 tablespoons mayonnaise
2 tablespoons sour cream
2 teaspoons fresh lemon juice, or to taste
2 ounces black caviar

Steps:

  • Cut a paper-thin slice off the ends of each egg and halve the eggs crosswise. Force the yolks through a sieve into a bowl and stir in the mayonnaise, the sour cream, the lemon juice, and salt and pepper to taste. Transfer the filling to a pastry bag fitted with a large decorative tip and pipe it into the egg whites, mounding it. The stuffed eggs may be made 1 day in advance and kept covered and chilled. Just before serving, top the eggs with the caviar.

10 eggs
¼ cup mayonnaise
1 teaspoon Dijon mustard
2 tablespoons grated Parmesan cheese
salt and ground black pepper to taste
1 tablespoon ketchup

Steps:

  • Place eggs in a large pot and cover with cool water. Bring to a boil and cook, stirring occasionally, for 10 minutes. Transfer eggs to a bowl of cold water using tongs. Peel.
  • Cut eggs in half. Slice a small piece off bottoms so halves don't tip over. Place yolks in a mixing bowl. Add mayonnaise, mustard, Parmesan cheese, salt, and pepper. Mix until creamy, 1 or 2 minutes.
  • Spoon yolk mixture into egg white halves. Garnish with a dot of ketchup on top. Refrigerate about 20 minutes before serving.
