LEMONY GARLIC SHRIMP WITH PASTA

Lemony Garlic Shrimp with Pasta image

This is a very elegant dish good for a nice simple meal. Tasty and pretty enough for company, but my husband and I enjoy it as a nice weekend meal. The brining of the shrimp takes the longest, but is very easy and improves the taste and texture of the shrimp.

Time 2h25m

Yield 6

Number Of Ingredients 13

¾ cup kosher salt
1 gallon cold water
2 pounds peeled and deveined large shrimp (21 to 30 per pound)
1 (16 ounce) package angel hair pasta
¼ cup unsalted butter
¼ cup olive oil
3 tablespoons minced garlic
⅓ cup white wine
¼ cup lemon juice
½ teaspoon crushed red pepper flakes
1 teaspoon freshly ground black pepper
½ cup chopped fresh parsley
1 tablespoon lemon zest

Steps:

  • Dissolve the kosher salt in 1 gallon of water in a large pot. Add the shrimp, and refrigerate 2 to 4 hours. Drain and pat shrimp dry with paper towels.
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the angel hair pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through but is still firm to the bite, 4 to 5 minutes. Drain well in a colander set in the sink.
  • Meanwhile, melt the butter and olive oil in a large skillet over medium-low heat. Stir in the garlic, and cook until softened, 3 to 4 minutes. Add the shrimp, white wine, lemon juice, and red pepper flakes. Cook and stir until the shrimp is no longer translucent in the center, about 6 minutes. Stir in the black pepper, parsley, and lemon zest before tossing with the angel hair pasta.

EMERIL'S SHRIMP AND PASTA IN A SPICY TOMATO-CHILI CREAM SAUCE

Emeril's Shrimp and Pasta in a Spicy Tomato-Chili Cream Sauce image

I got this recipe through a recipe exchange with a friend and it is very good! It does have quiet a few steps and ingredients but it is definitely worth it.

Categories     Creole

Time 40m

Yield 6 serving(s)

Number Of Ingredients 17

1/4 cup kosher salt
1 lb linguine
2 tablespoons unsalted butter
1 tablespoon olive oil
1 lb large shrimp, peeled and deveined
2 tablespoons creole seasoning
1 1/2 teaspoons salt
1 cup finely chopped onion
1/4 cup jalapeno, finely chopped
1 tablespoon garlic, minced
1 1/2 cups heavy cream
1/2 teaspoon fresh ground black pepper
1 cup diced tomato
1/2 cup reserved pasta cooking water
1 cup monterey jack pepper cheese, grated
1/4 cup parmesan cheese, grated
2 tablespoons basil leaves, chopped

Steps:

  • Set a large 1-gallon stock pot of water to a boil and add the kosher salt. Place the linguine in the pot and stir the pot until the water returns to a boil. Cook the pasta until tender, but with a bit of resistance (al dente), about 12 minutes. Drain and reserve 1/2 cup pasta water.
  • While the pasta cooks, prepare the sauce. Set a 12-inch saute pan over medium-high heat. Add the butter and olive oil to the pan. Once the butter has melted, season the shrimp with 1 tablespoon of the creole seasoning and 1/4 teaspoon of the salt and add the shrimp to the pan. Sear the shrimp until well browned on both sides, about 2 minutes. Remove from the pan and set aside.
  • Add the onions and jalapenos to the pan and saute until the onions are softened and lightly caramelized, about 4 to 5 minutes. Add the garlic to the pan and saute until fragrant, about 30 seconds. Add the cream, remaining 1 tablespoon of creole seasoning, remaining 1 1/4 teaspoons of the salt and the pepper to the pan and bring to a boil. Cook the sauce until the cream is reduced by half, about 2 minutes.
  • Return the shrimp to the pan, and add the tomatoes, linguine and the reserved cooking water to the pan and cook, tossing to incorporate for 3 to 5 minutes. Remove pan from the heat and add the Pepper Jack, Parmesan and basil and toss to blend. Serve immediately.

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Seafood Recipes     Shrimp Recipes

Number Of Ingredients 16

1 pound dry buccatini pasta
4 tablespoons olive oil
3/4 cup small diced yellow onions
2 tablespoons thinly sliced garlic
2 1/2 teaspoons salt
1 teaspoon crushed red pepper flakes
4 ounces kale (about 4 cups), stemmed and rough chopped
2 ounces hot soppressata, cut into matchstick pieces
1 pound Manila clams, brushed and cleaned
1/3 cup pasta cooking water
1 1/2 cup finely chopped fresh tomatoes, or fresh tomato puree
8 ounces baby yellow Roma tomatoes, or tear drop tomatoes
1 pound 21-25's (medium shrimp)
2 teaspoons Emeril's Original Essence
1/2 teaspoon fresh ground black pepper
1/4 cup parmesan cheese

Steps:

  • Set a large, 6-quart pot with water over high heat and bring to a boil. Once boiling, season with 1/4 cup of salt. Add the buccatini to the water and stir until the water returns to a boil, about 2 minutes.
  • While the pasta cooks, set a large, 14-inch saute pan over medium-high heat and 3 tablespoons of the olive oil. Once the oil is hot, add the onions, 2 teaspoons of the salt, the crushed red pepper flakes and the garlic to the pan. Cook stirring until the onions are slightly translucent, and the garlic is fragrant, about 3 minutes. Add the kale to the pan and allow to wilt slightly, about 30 seconds. Add the Soppressata to the pan and cook for another 30 seconds. Add the clams and pasta water to the pan and cook, shaking the pan until the clams just begin to start opening, about, 2 minutes.
  • Add the tomatoes and yellow tomatoes to the pan. Cook until the clams are nearly completely opened, about 2 minutes longer. Season the shrimp with the Essence and add them to the pan. Cook until they begin to turn pink, about 1 minute.
  • Remove the pasta from the water and add it to the pan with the clams and shrimp. Stir the ingredients in the pan and drizzle with the remaining tablespoon of olive oil and reseason with the remaining salt and fresh ground black pepper if necessary.
  • Remove the pan from the heat and place on a large platter to serve. Sprinkle the parmesan cheese over top of the past and serve.
