Steps:
- In a large bowl, combine cabbage, green pepper and onion. In a small bowl, combine mayonnaise, vinegar, sugar and salt. Pour over cabbage mixture and toss to coat. Cover and refrigerate at least 4 hours. Stir in bacon just before serving.

Goes with practically anything. Think of it like Coleslaw - minus the mayo dressing. Great with light foods like seafood, and refreshing with hearty foods like stews and roasts. Chop the cabbage and keep in the fridge with the dressing in a jar, lasts for up to a week! Use just cabbage, and any colours you please. Can't-Stop-Eating-It-Delicious!

Steps:
- Shake Dressing ingredients in a jar. Start with 1 1/2 tbsp sugar and adjust to taste.
- Place Salad ingredients in a large bowl. Pour over Dressing, toss. Set aside 20 minutes - mound will reduce by almost half and become juicy! Serve.

CABBAGE SALAD
Steps:
- Mix vegetables with ½ cup sugar. Let stand while making dressing.
- Measure dressing into a saucepan and bring to a boil over medium heat. Boil 3 minutes and pour over cabbage while hot.
- Cover bowl and refrigerate 24 hours before serving.
- Garnish with more fresh parsley.

- This everyday cabbage salad recipe is a perfect standby salad because the cabbage holds up so well in the fridge. You can keep zipper bags of shredded cabbage in your refrigerator with a mason jar of the homemade tangy dressing beside it, then toss it together when you need it for salad in a flash. In a large bowl mix together the shredded cabbage and scallions (spring onions); cover and chill. In another small bowl whisk together the olive oil, lemon juice and ramen noodle seasoning packet. Refrigerate until chilled. Break the ramen noodles into small pieces and blend toasted almonds and sesame seeds. To serve, combine the cabbage mixture and noodle mixture; add the dressing and toss to coat, taste and adjust seasoning with salt and pepper if needed. Variation Try substituting bok choy for the cabbage in this recipe.

- Prepare the vegetables first. Peel away the first layer of leaves off the cabbage, cut and discard the center core and any hard, fibrous leaves. Cut the cabbage into 1-inch pieces. Peel and slice the carrots; chop celery, peppers and zucchini; quarter the mushrooms.
- Clean 3 to 4 mason jars with hot water and soap and find fitting lids. Drop about 10 whole peppercorns, 1 to 2 teaspoons fresh dill and 2 sliced garlic cloves into each jar. Layer the vegetables alternating with cabbage, packing the vegetables tightly into the jars.
- Prepare the pickling juice. In a large pot, combine the water, cider vinegar, oil, sugar and salt. Bring to a rolling boil over high heat, then remove from heat. Use a ladle to pour the hot pickling juice over the vegetables, filling the jars to the brim. Cover each jar with a lid, then set the salad into the refrigerator. Allow the salad to pickle for at least 6 to 8 hours, or best if left overnight. Salad will keep well for 1 to 2 weeks.
