EVERYTHING PARKER HOUSE ROLLS
There's nothing better than a warm Parker House roll, except maybe one with a salty, seedy everything-bagel topping. While there are a million subtle variations of the classic roll, this recipe keeps the shape simple (just basic rounds) for the most buttery, fluffiest results. You can purchase everything-bagel seasoning in the spice section of some supermarkets, but it's also easy to make your own.

- Prepare the rolls: In a medium pot, heat the milk and 4 tablespoons butter over medium until the mixture is just warm to the touch (about 95 degrees) and the butter is melted, 1 to 2 minutes.
- In the bowl of an electric mixer fitted with a dough hook attachment, combine the flour, milk powder, sugar, yeast and salt with 1 egg and the warmed milk mixture. Mix on low for 3 minutes, then increase the speed to medium and mix until the dough is smooth, about 3 minutes.
- Transfer the dough to a lightly greased bowl, cover with plastic wrap, and let rise in a warm place for 1 1/2 hours. The dough may not double in size, but it should be noticeably puffy.
- Divide the dough into 12 even pieces (about 71 grams each). Gently round into balls: Cup your hand and fingers around a piece of dough then roll it on your work surface until it forms a tight ball. Repeat with the remaining pieces.
- In a lightly greased 9-by-13-inch pan, arrange the balls in three rows of four. Cover the rolls with plastic wrap and let rise in a warm place until noticeably puffy, 45 minutes to 1 hour.
- Heat the oven to 350 degrees. Prepare the everything-bagel seasoning: Toss together the sesame seeds, poppy seeds, dried garlic, dried onion and kosher salt.
- In a small bowl, beat the remaining egg. Brush the surface of each roll with the beaten egg and sprinkle each generously with everything-bagel seasoning (about 2 teaspoons per roll).
- Bake the rolls for 10 minutes, then brush the surface of the rolls generously with the melted butter. Bake until the rolls are evenly golden-brown, 15 to 20 minutes. Brush the baked rolls generously with the remaining melted butter. Let cool 10 to 15 minutes before serving. Store leftover rolls at room temperature in a resealable plastic bag. - In 1 1/2-quart saucepan, mix 1/2 cup water, the milk, butter and sugar. Heat just to simmering over medium-high heat. Cool until instant-read thermometer inserted in mixture reads 120°F to 130°F. In large bowl, mix flour, salt and yeast. Add water mixture and 1 egg to flour mixture; stir until just combined.
- Sprinkle flour lightly on work surface. Place dough on floured surface. Knead by folding dough toward you, then with heels of your hands, pushing dough away from you with a short rocking motion. Move dough a quarter turn, and repeat. Continue kneading about 5 minutes, sprinkling surface with more flour if dough starts to stick, until dough is smooth and springy.
- Spray large bowl with cooking spray. Place dough in bowl, turning dough to grease all sides. Cover bowl loosely with plastic wrap; let rise in warm place about 1 hour or until dough has doubled in size. Dough is ready if indentation remains when you press your fingertips about 1/2 inch into dough.
- Spray bottom and sides of 13x9-inch pan with cooking spray. Gently push your fist into dough to deflate it. Divide dough into 32 equal pieces. Shape each piece into a ball; place in pan.
- Mix beaten egg and 1 tablespoon water; brush dough with egg wash. Sprinkle with seasoning. Lightly spray sheet of plastic wrap with cooking spray; cover pan loosely with plastic wrap, sprayed side down. Let rise in warm place about 40 minutes or until dough has doubled in size. Remove plastic wrap.
- Move oven rack to low position so top of pan will be in center of oven. Heat oven to 375°F. Bake 15 to 18 minutes or until golden brown. Remove from pan to cooling rack. Serve warm or cooled.
- Make Ahead: After dough has risen in bowl, cover tightly with foil; refrigerate 4 to 24 hours. Before baking, remove foil and cover loosely with plastic wrap. Let rise in warm place about 2 hours or until dough has doubled in size. If some rising occurred in refrigerator, rising time may be less than 2 hours. Shape and bake as directed.

- In a small bowl, mix together the cream cheese, lemon zest and juice, salt, and McCormick® Freeze-Dried Chives until smooth.
- Pour 1 inch of hot water into a large, shallow dish. Dip a rice paper sheet in the hot water for 5-8 seconds, until slightly softened. Transfer to a flat surface and spread a thin layer of the cream cheese mixture over the center, leaving a 2-inch border around the edges. Place a Bibb lettuce leaf in the center of the rice paper and top with 1 ounce of smoked salmon slices, 2 tomato slices 3-5 cucumber sticks, 2-3 red onion slices, 1-2 avocado slices, and a sprinkle of McCormick® Everything Bagel All Purpose Seasoning. Fold the sides of the rice paper wrapper inward over the filling, then roll to seal. Place the roll, seam-side down, on a serving platter and cover with a damp towel to prevent it from drying out while you repeat with the remaining ingredients.
- Sprinkle McCormick® Everything Bagel All Purpose Seasoning in a line down the center of each spring roll. Serve immediately.

- In stand mixer, combine water and instant yeast. Let sit 15 minutes to activate. Add in warm milk, melted butter, egg and 1 tsp of everything bagel seasoning. Stir together, then add one cup of bread flour. Mix using a paddle attachment on stand mixer (affiliate) until combined to a wet, sticky dough. Change to dough hook attachment and add remaining bread flour gradually. Dough is ready when it's sticky and barely pulling away from the sides.
- Knead dough in stand mixer for 5 minutes on medium-high speed. Dough should form a smooth, elastic ball that pulls cleanly from the sides of the ball. When it's done, transfer to a lightly greased mixing bowl and cover with a towel. Let rise for 90 minutes, or until doubled in size.
- Transfer rolls to a lightly floured surface. Press lightly to deflate and form a large rectangle. Using a bench scraper, cut rolls into evenly sized squares, about 2 inches wide. Cover again with a paper towel and let rise 30 more minutes.
- Preheat oven to 375°. Brush melted butter over top of rolls. Dip buttered side in remaining everything bagel seasoning to season tops. Place seasoned-side-up on a greased baking sheet. Bake in center of oven for 15-20 minutes, until golden brown. Remove and let cool 15 minutes before serving.
