GREEN GODDESS CRUNCH SANDWICH



Green Goddess Crunch Sandwich image

A salad between two slices of bread! This picnic-ready meal has major California vibes, with an herby yogurt smear, tons of feel-good sprouts, and avocado.

Number Of Ingredients 12

1/4 cup basil
1/4 cup chopped chives
1/4 cup mayonnaise
1/4 cup plain whole-milk Greek yogurt
2 Tbsp. extra-virgin olive oil, plus more for drizzling
1 lemon, halved, divided
Kosher salt, freshly ground black pepper
1/4 English hothouse cucumber, thinly sliced
4 slices multigrain bread
1 avocado, thinly sliced
8 oz. mozzarella, sliced 1/4" thick
2 cups sprouts (such as alfalfa or broccoli)

Steps:

  • Place basil, chives, mayonnaise, yogurt, and 2 Tbsp. oil in a blender. Finely grate in zest from a lemon half, then squeeze in its juice. Purée until smooth; season dressing with salt and pepper.
  • Place cucumber in a small bowl; squeeze in juice from remaining lemon half. Drizzle with oil, season with salt and pepper, and toss to coat.
  • Spread one side of each slice of bread with dressing. Divide avocado between 2 slices of bread; season with salt and pepper. Top with cucumber, mozzarella, and sprouts and close up sandwiches.

I created this steak sandwich recipe for my husband. Fried onions are a family favorite, and I thought it would be amazing to put them on a sandwich. The chimichurri-inspired mayo gives fabulous freshness and flavor. -Renee Seaman, Green Township, New Jersey

1 large sweet onion
3 cups buttermilk
2 cups minced fresh cilantro
1 cup minced fresh parsley
2 garlic cloves, minced
1/2 teaspoon plus 2 teaspoons salt, divided
1/4 teaspoon pepper
1/2 cup mayonnaise
1/2 cup plus 3 tablespoons olive oil, divided
1 beef flat iron steak or top sirloin steak (1-1/2 pounds)
1-1/2 cups all-purpose flour
3 tablespoons taco seasoning
Oil for deep-fat frying
12 slices Italian bread (1/2 inch thick)
Optional: Fresh arugula and sliced tomato

Steps:

  • Cut onion into 1/4-in. slices; separate into rings. Place in a large bowl or shallow dish. Add buttermilk; turn to coat. Refrigerate at least 4 hours or overnight., In a small bowl, combine cilantro, parsley, garlic, 1/2 teaspoon salt and pepper. Remove 2 tablespoons herb mixture; stir into mayonnaise. Refrigerate until serving. Stir 1/2 cup olive oil into remaining herb mixture. Reserve 2 tablespoons oil mixture for serving. Place remaining oil mixture in a large bowl or shallow dish. Add beef; turn to coat. Refrigerate at least 4 hours or overnight., Drain beef, discarding marinade. Grill beef, covered, over medium heat or broil 4 in. from heat until meat reaches desired doneness, 7-9 minutes on each side (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°)., Meanwhile, drain onion rings, discarding marinade. In a shallow dish, combine flour, taco seasoning and remaining 2 teaspoons salt. Roll onion rings in flour mixture. In an electric skillet or deep-fat fryer, heat 1 in. of oil to 375°. Fry onion rings, a few at a time, until golden brown, 1 to 1-1/2 minutes on each side. Drain on paper towels; keep warm., Remove steak to a cutting board; brush with reserved 2 tablespoons oil mixture. Brush bread with remaining 3 tablespoons olive oil. Grill bread over medium heat until toasted, 30-60 seconds on each side., Spread mayonnaise mixture over 1 side of each toast. Thinly slice steak. Top 6 slices of toast with steak, fried onions and, if desired, arugula and tomato slices. Top with remaining toast.

This steak sandwich is one fantastic eating experience. With fresh spinach, crunchy cucmbers, and a tasty green goddess spread, it's like a sandwich and salad all rolled into one! ; First off - choose the right bread. Use a fresh artisan loaf one that is crafted (rather than mass produced) with a crispy crust and a soft, chewy interior. Ciabatta or focaccia are ideal. Secondly, the green goddess spread - it gives the sandwich personality.:) The tarragon (not one of my favorites!) in it asserts lots of fresh herb flavor, while the scallion packs an extra "green" punch. We made two green goddess spreads one with the tarragon and one with basil - while not traditional in green goddess, the basil will still add herb flavor. : CuisineAtHome, Issue 82, August 2010 edition.

1/4 cup mayonnaise
1/4 cup cream cheese, softened
2 tablespoons sour cream
2 scallions, chopped on an angle
1 tablespoon chopped fresh tarragon or 1 tablespoon chopped fresh basil
1 tablespoon tarragon vinegar or 1 tablespoon white wine vinegar
1/2 teaspoon Dijon mustard
1/4 teaspoon anchovy paste
salt, to taste
fresh ground black pepper, to taste
1 lb rib eye steaks or 1 lb sirloin steak
olive oil
salt, to taste
fresh ground black pepper, to taste
1 loaf ciabatta or 1 loaf focaccia bread, halved lengthwise
4 cups fresh spinach (3 oz)
1 cup thinly sliced English cucumber

Steps:

  • Preheat grill to medium-high.
  • Puree mayonnaise, cream cheese, scallions, tarragon, vinegar, Dijon, and anchovy paste in a food processor.
  • Season with salt and black pepper.
  • Coat steak with oil and season with salt and lots of black pepper; set aside.
  • Grill steak covered, 3-4 minutes per side for medium rare.
  • Remove steak from grill, tent with foil, and rest 5 minutes.
  • Slice steak against the grain into thin strips.
  • Reduce grill heat to low.
  • Brush cut side of bread lightly with oil; season with salt and pepper.
  • Grill bread cut side down, covered, until lightly toasted 1-2 minutes.
  • TO SERVE:.
  • Spread green goddess on the cut side of bottom bread.
  • Layer with spinach, steak strips and cucumber, then top with remaining bread.
  • Cut into 4 serving.

Baked Flank Steak Roulade Stuffed with Bacon and Cheese image

Flank steak is tenderized and marinated, before being stuffed, rolled, and baked. Quick and easy to prepare with gourmet results.

Number Of Ingredients 10

2 (1 pound) flank steaks
2 tablespoons olive oil
1 ½ tablespoons Italian seasoning
½ teaspoon ground black pepper
2 cloves garlic, crushed
10 slices bacon
½ (8 ounce) package cream cheese, softened
½ cup shredded Italian cheese blend
¼ cup cooked chopped spinach, squeezed very dry
1 clove garlic, crushed

Steps:

  • Sandwich the flank steaks between waxed paper and pound with a kitchen mallet to tenderize.
  • Whisk olive oil, Italian seasoning, pepper, and garlic for marinade together in a small bowl. Pour into the bottom of a baking dish that's large enough to hold both steaks in a single layer. Add steaks so that one side is touching the marinade; do not flip to coat. Let sit while you prepare the filling.
  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until slightly browned and not yet crispy, about 8 minutes. Drain bacon slices on paper towels.
  • Mix cream cheese, Italian cheese, spinach, and garlic together in a bowl. Spread cheese mixture on the unmarinated side of the steaks. Place 5 bacon strips on top the cheese on each steak. Roll steaks up and pin with toothpicks to secure.
  • Bake, uncovered, in the preheated oven until an instant-read thermometer inserted into the center reads 135 to 140 degrees F (57 to 60 degrees C), about 45 minutes. Remove from the oven, cover, and let sit for 5 minutes before slicing.
