WEEKNIGHT FANCY CHICKEN AND RICE



Weeknight Fancy Chicken and Rice image

This is a truly glorious one-pot weeknight meal. Feel free to experiment with the garnish, adding dried cranberries, hazelnuts, pine nuts or your own favorites. Ghee adds a nuttiness to the dish, but if you cannot find it, you can make it with unsalted butter using the chef Asha Gomez's method. Simply melt the butter in a pot over low heat. Let it simmer until it foams and sputters. Once the sputtering stops and the milk solids in the pot turn a khaki color, remove it from the heat and skim off the foam with a spoon. Strain remaining butter into a container, leaving behind any solids in the pot. Ghee keeps for up to six months in the refrigerator.

1/4 cup ghee (or use unsalted butter)
1 large yellow onion, peeled, halved and thinly sliced
6 green cardamom pods, crushed
3 whole star anise
1 1/4 teaspoons kosher salt, divided
6 garlic cloves, finely chopped
1 1/2 teaspoons turmeric powder
1 pound boneless, skinless chicken breasts, cut into 3/4-inch pieces
2 1/4 cups low-sodium chicken stock
1 1/2 cups basmati rice
1/4 cup chopped dried apricots
1/4 cup sliced raw almonds, toasted
1/4 cup chopped cilantro leaves

Steps:

  • In a medium saucepan with a lid, melt ghee over medium-high heat. Add onions, cardamom, star anise and 1/4 teaspoon salt. Cook, stirring frequently, until onions are soft and a very deep golden brown, about 15 minutes, lowering heat if necessary to keep from burning them. Add garlic and turmeric; cook and stir for 1 to 2 minutes, or until very fragrant. Add chicken and cook for 4 minutes, stirring to coat chicken with the onion mixture.
  • Add stock and remaining salt, increase the heat and bring to a boil. Add rice, stir and cover. Reduce heat to low and simmer until the rice has absorbed liquid, about 12 minutes. Remove from heat and let stand, covered, for 12 minutes. Remove lid and fluff rice with a fork.
  • Transfer chicken and rice to a bowl, taking care to remove and discard cardamom pods and star anise. Garnish with apricots, almonds and cilantro. Serve at once.

You'll always want to rinse white rice in a sieve until the water is clear to remove excess starch that can make the rice gummy and unevenly cooked. You should also let the rice steam for five minutes before you fluff with a fork, so that the rice doesn't dry out or get clumpy. Enjoy your now-perfect rice!

1 cup long grain rice
1 ¾ cups water
1 pinch salt

Steps:

  • Rinse the rice in a sieve three times, or until the water runs clear.
  • Add the water and salt to a saucepan and bring to a boil over high heat.
  • Add the rice and stir, letting the water come to a boil again.
  • Place the lid on the saucepan and lower the heat to a simmer. Simmer for 18 minutes.
  • Turn off the heat and let the rice steam for 5 minutes.
  • Fluff the rice with a fork.
  • Enjoy!

1/2 teaspoon thyme

Steps:

  • Brown rice in 1 tablespoon of butter& 2 tablespoons of oil till toasted (light brown).
  • Bring water to a boil, add salt& toasted rice.
  • Cover and cook for 20 minutes.
  • While rice is cooking chop onion& celery.
  • Saute onion, celery& mushrooms in remaining 2 tablespoons of butter and add seasonings.
  • Add cooked rice and toss to blend.

2 (6 1/4 ounce) boxes long grain and wild rice blend (I use Uncle Ben's)
1 onion, chopped
2 cups mushrooms, sliced
1 bell pepper, chopped
1 garlic clove, minced
1/2 cup butter, divided
4 cups chicken broth
1/2 cup parmesan cheese
1 bell pepper, thinly sliced
1 cup heavy cream
salt and pepper, to taste

Steps:

  • Cook onion, chopped bell pepper, mushrooms, and garlic in 1/4 cup of butter until the onion is transparent. Add rice and herb packets and cook, stirring, until the rice begins to turn golden.
  • Add the chicken broth and simmer gently in a covered pan until the rice is barely tender and the liquid is mostly absorbed.
  • Preheat oven to 400 degrees.
  • Butter a deep casserole dish. Lightly transfer half the rice mixture to the dish with a fork. Top with half the pepper rings and half the cheese. Repeat layers. Dot with remaining butter and pour cream over the top.
  • Cover and bake at 400 degrees for 20 minutes.
