CREAMY SAFFRON AIOLI INGREDIENTS:
1/3 cup fat free plain Greek yogurt
2 to 3 tablespoons light mayonnaise
1 tablespoon water
1 teaspoon lemon juice
1 teaspoon oil (optional)
1 clove garlic, minced
1/2 teaspoon crumbled saffron
1/2 teaspoon paprika
CRISPY POTATO INGREDIENTS:
1 and 1/2 pounds red potatoes
1 tablespoon olive oil
3 cloves garlic, minced
1/2 teaspoon thyme, dried
1/2 teaspoon parsley, dried

Steps:

  • Place potatoes in a large pot. Cover with salted water and bring to a boil. Cook for 20 minutes, or until potatoes are tender. Drain and cool potatoes under cold water.
  • Preheat oven to 425 degrees F (220 degrees C).
  • Place potatoes on baking pan covered with parchment paper.
  • Using a potato masher or a fork, carefully flatten potatoes until they are smashed, but still in one piece.
  • In a small bowl combine oil, garlic, thyme and parsley. Drizzle mixture onto potatoes.
  • Bake potatoes for 18 to 20 minutes or until golden brown and crispy.
  • In a small saucepan, boil 1 tablespoon of water. Remove from heat and add saffron. Cover and let steep for 5 minutes.
  • Mix in Greek yogurt, mayonnaise, olive oil, lemon juice, garlic, and paprika. Cover and chill.
  • Serve with saffron aioli and enjoy!

1/4 teaspoon smoked paprika
1/4 teaspoon hungarian hot paprika
1/2 cup mayonnaise
1 tablespoon extra virgin olive oil
1 teaspoon fresh lemon juice
1 garlic clove, minced
12 small yukon gold potatoes or 12 small red potatoes, unpeeled
fleur de sel (fine French sea salt)
2 tablespoons chopped fresh cilantro

Steps:

  • Bring 1 tablespoon water to boil in small saucepan. Add saffron. Remove from heat.
  • Cover and let steep 15 minutes.
  • Mix in paprika, then mayonnaise, olive oil, lemon juice, and garlic. (Aioli can be made 2 days ahead. Cover; chill.)
  • Place potatoes in pot with enough cold salted water to cover.
  • Bring to boil and cook until just tender, about 20-25 minutes. Drain. Cool slightly.
  • Press gently on potatoes to split skins and crack open. Sprinkle with fleur de sel.
  • Place 2 potatoes on each of 6 plates.

20 to 30 small new potatoes
Extra-virgin olive oil
Kosher salt
Freshly ground black pepper
Vegetable oil, for deep-frying
2 heads garlic
Extra-virgin olive oil
1 sprig thyme
1 tablespoon water
Kosher salt

*1 jumbo egg yolk
1 lemon, juiced
Salt and pepper
1/2 cup extra-virgin olive oil
1/4 cup sour cream
Chopped chives, for garnish

Steps:

  • Preheat oven to 400 degrees F.
  • Lay potatoes out in a single layer on a sheet pan. Drizzle with olive oil and season with salt and pepper. Toss the potatoes around so they are evenly coated and pop in the oven to roast for 35 to 40 minutes until tender.
  • Cut a heads of garlic through the middle, horizontally, and put in a foil pouch with olive oil, thyme, water, and salt and pepper. Seal the pouch around the edges and roast in the oven with the potatoes - this will be used for the aioli.
  • When the potatoes are done and warm enough to handle make an X cut on 1 side of the potato and then squeeze gently from the bottom to form a flower-like shape. Heat a pot of oil for deep frying to 350 degrees F and fry the potatoes until crispy and golden. Drain on paper towels and season with kosher salt.
  • Remove the garlic from the pouch and squeeze out the flesh. Add the roasted garlic, egg, lemon juice, salt and pepper in a blender and process. Pour in the olive oil in a slow, steady stream until the aioli emulsifies. Fold in sour cream and adjust seasoning with salt and pepper. Garnish with chives.

1 shallot, peeled and thinly sliced
1/4 teaspoon ground saffron
2 pounds very small new potatoes, scrubbed
1 cup low sodium chicken stock
1 1/2 cups water
2 teaspoons salt
1/4 teaspoon smoked paprika
1 tablespoon chopped parsley leaves, for garnish
1 baguette, sliced

Steps:

  • Melt the butter in a large saucepan over medium heat. Add the garlic and shallot and cook, stirring often, until the garlic begins to turn golden. Add the saffron powder, stir and cook an additional minute. Add the potatoes and toss to coat. Add the chicken stock, water, salt and paprika and bring to a boil. Reduce the heat to low, stir and simmer for 10 to 15 minutes, until the potatoes are fork tender. Stir in parsley. Transfer the potatoes and broth to a heat safe serving bowl or chafer and serve with sliced baguettes.

  • Preheat oven to 375°. Place potatoes in a Dutch oven; add water to cover. Bring to a boil. Reduce heat; cook, uncovered, 8-10 minutes or until just tender. Drain; pat dry with paper towels. Toss potatoes in oil and minced garlic to coat evenly. , Combine the paprika, garlic powder, chili powder, cumin, salt, pepper flakes and pepper; sprinkle over potatoes. Gently toss to coat. Saffron aioli can elevate even the most basic of dishes. Serve this alongside roasted potatoes for a deliciously flavorful side.

Number Of Ingredients 7

Pinch of saffron
1 tablespoon warm water
3 small garlic cloves
Coarse salt
1/2 teaspoon Dijon mustard
2 large egg yolks
1 cup extra-virgin olive oil

Steps:

  • Place saffron in a small bowl with water; set aside.
  • Use a mortar and pestle to mash garlic and a pinch of salt to a fine paste. Add mustard and incorporate. Add egg yolks and mix well. Add saffron-water mixture and stir to incorporate. Slowly add half the oil, drop by drop at first, and then in a slow steady stream, while mixing with the pestle. (Thin with about a tablespoon of warm water if mixture is too thick.) Continue incorporating oil until all of it is absorbed. Thin with additional water if needed, and season with salt to taste.

SAFFRON AIOLI

I feel aiolis make an excellent compliment to a number of different types of appetizers and entrees. This particular aioli is inspired by the Mediterranean coastal areas of Spain and France, and was a frequent compliment to many foods during my study abroad. I like it on everything from crabcakes, fish, and even sushi to chicken and finger foods. You can put the aioli in a pastry decorating bag to create appealing appetizers and tapas. This particular recipe calls for saffron threads and saffron powder. Saffron is easy to find in most place in the thread form, but the powder can be a little more difficult to locate. If you visit a hispanic market, you can typically purchase enough pouches of saffron powder to last you over time. I use Vigo brand. Also, please consider using Hellman's original mayonnaise when making this recipe - avoid using Kraft, Miracle Whip, and sweet mayonnaises at all costs. If you use a low fat mayo, I also recommend Hellman's. Another tip - when purchasing your saffron (and other spices in general), its often $6-10 US dollars cheaper if you buy it in the hispanic/ethnic section of your grocery store. For instance, Badia Saffron runs about $3 in my grocery store, but the same amount of McCormick Saffron can cost upwards of $10. Hope you enjoy!

1 cup grapeseed oil
2 tablespoons fresh lemon juice
2 Preserved Lemons
4 teaspoons poppy seeds, for garnish
1/4 cup chopped fresh chives, for garnish

Steps:

  • Place potatoes in a medium saucepan with just enough water to cover completely. Bring water to a boil and add 1 teaspoon salt. Reduce heat and simmer gently 10 minutes. Remove from heat and let potatoes sit in water 10 minutes; drain.
  • Meanwhile, whisk together mustard, garlic, 1 teaspoon salt, and egg yolk in a medium bowl to combine. Slowly whisk in oil until mixture is thickened and emulsified. Whisk in lemon juice. Rinse preserved lemons in cold water. Remove and discard any lemon flesh and cut rind into small pieces (you should have 1/4 cup).
  • While potatoes are still slightly warm, cut in half and smear a small dollop of aioli on each cut side. Arrange on a serving platter and garnish with preserved lemons, poppy seeds, and chives.

2 egg yolks
1 small garlic clove
1 tbsp Dijon mustard
½ lemon , juiced
200ml olive oil

Steps:

  • Put the saffron in a small bowl with 1 tbsp boiling water. Leave for 10 mins to cool and for the water to turn a golden colour.
  • Meanwhile, put the egg yolks, garlic, mustard and lemon juice in a jug or a tall container with a pinch of salt and blitz with a stick blender (or in a food processor) until smooth. Slowly add the olive oil, a small drizzle at a time, keeping the blender on, until you get a thick, glossy mayonnaise. Season with black pepper, then stir in the saffron water to loosen the aïoli and turn it a golden hue. Cover the surface and chill until ready to serve. Add a splash of water or lemon juice, to serve, if your aïoli thickens up too much in the fridge.
