CRISPY POTATO PATTIES
Steps:
- Gather the ingredients.
- Mix together the mashed potatoes, beaten egg, and onion in a medium bowl.
- Add the flour, cheese, salt, and pepper, and stir well with a wooden spoon.
- In a large nonstick skillet over medium heat, heat the olive oil and butter together until the butter melts and the mixture starts to sizzle.
- Drop about 1/4 cup of the potato mixture into the frying pan, patting it into 3-inch circles that are about 1/2 inch thick. Cook the potato patties until the bottom is browned and crisp, which will take about 3 to 4 minutes.

- Remove the patties from the pan and drain briefly on paper towels.

- In 2-quart saucepan, heat water to boiling. Turn off heat. Add potatoes. Mix to combine.
- Spread potatoes onto an ungreased rimmed half baking sheet or 13x9-inch pan. Smooth top with spatula. Place in freezer about 1 hour or until frozen.
- Using cookie cutter or sharp knife, cut out stick shapes. Return to freezer until oil is heated.
- In deep-fat fryer or heavy saucepan, heat oil over medium-high heat to 350°F.
- Carefully place frozen potato sticks into oil (being careful to not crowd pan) and cook until golden. Transfer cooked potato sticks to plate lined with paper towels to absorb excess oil.
- Serve with a side of dressing.

- Prepare potatoes as per direction on package.
- Add butter to taste.
- Let potatoes cool and chill in refrigerator anywhere from four hours to overnight (for best results potatoes should very cold and a little on the dry side).
- Mix bread crumbs and Italian seasoning.
- Heat oil in medium sized frying pan on medium heat.
- Remove potatoes from refrigerator. Form patties between 3 and 4 inches in diameter and between 1/4 and 1/2 inch in thickness.
- Place patties in bread crumb mix and gently press crumbs into the potatoes on both sides.
