Steps:
- Add all ingredients to bread machine in the above order, and press "dough" setting.
- When done, transfer dough to a lightly-floured counter top and shape into a ball.
- Cut ball in half, and then cut those two pieces in half and so on, until you have 16 pieces. (sprinkle more flour on your counter if dough starts to stick)
- Shape your pieces into round buns, and place in a sprayed 9 x 13 baking dish or 2 smaller dishes. Leave about an inch between buns.
- Brush buns with melted butter, and cover the baking dish with Plastic Wrap. Set in warm spot (about 80 degrees Farenheit) until buns have doubled in size - about 40 mins. (I usually heat my oven to about 200, and then turn my oven right OFF, and place the dish in there with the door open a crack.
- Once doubled, remove plastic wrap, and bake 12-15 minutes at 375 degrees.

BEST BREAD MACHINE BUNS
This recipe is easy and foolproof. It makes a soft and tasty bun with a slightly flaky crust. This is a combination of several recipes I've tried, but I've changed it to suit our tastes.

- Make a little well in the flour and add the yeast to flour.

- Shape dough into rolls when cycle is completed (my dough cycle is 2 hrs) and place dough rounds unto a lightly floured cookie sheet about 1 inch apart.
- Cover and let rise for about 45 minutes in warm draft free area (I let mine rise in a slightly warmed oven with the light bulb on).
- When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.
- Cool on cooling rack for 20 minutes, and once cooled it can be stored in plastic bag.

- Scald 1 cup milk.
- In large mixing bowl combine sugar, oil, salt and milk. Cool to luke warm.

- Let rest for 5 minutes, and cover and let rise in a covered bowl (saran wrap) for 1 hours or until doubled in size.
- After first rise, punch down dough and knead for an additional 2-5 minutes.
- Form into desired shape and let rise again for 45 minutes to 1 hours.
- When Dough has doubled in size, uncover and bake@ 350 degrees for 15 to 17 minutes or until golden brown.
BREAD MACHINE ROLLS
These are the BEST dinner rolls I've ever made. They also make great buns for sandwiches. For a festive presentation, sprinkle with poppy or sesame seeds before baking.

Steps:
- Tip the flour, yeast, sugar, salt and oil into a bowl. Pour over 325ml warm water, then mix (with a spatula or your hand), until it comes together as a shaggy dough. Make sure all the flour has been incorporated. Cover and leave for 10 mins.
- Lightly oil your work surface and tip the dough onto it. Knead the dough for at least 10 mins until it becomes tighter and springy - if you have a stand mixer you can do this with a dough hook for 5 mins. Pull the dough into a ball and put in a clean, oiled bowl. Leave for 1 hr, or until doubled in size.
- Tip the dough onto a lightly floured surface and roll into a long sausage shape. Halve the dough, then divide each half into four pieces, so you have eight equal-sized portions. Roll each into a tight ball and put on a dusted baking tray, leaving some room between each ball for rising. Cover with a damp tea towel and leave in a warm place to prove for 40 mins-1 hr or until almost doubled in size.
- Heat the oven to 230C/210C fan/gas 8. When the dough is ready, dust each ball with a bit more flour. (If you like, you can glaze the rolls with milk or beaten egg, and top with seeds.) Bake for 25-30mins, until light brown and hollow sounding when tapped on the base. Leave to cool on a wire rack.

- Be sure to whisk the flour before measuring - I soften the butter in the microwave Measure ingredients carefully, add ingredients in the order listed, ending with the flour and yeast. Choose your cycle.
- During the first mix check to be sure your dough has the right amount of water and flour - the dough should look smooth and shiny. Flours differ, you may need to add lukewarm water a teaspoon at a time if your dough is dry - sprinklings of flour if too sticky. Never add more than 3 tablespoons of either the water or flour. When cycle complete turn out on a rack to cool.
- FOR DOUGH use the dough cycle, when complete shape into bread or rolls - braided bread and dinner buns topped with sesame seed are winners at our house. Brush tops with softened butter or margarine and rise 20 to 30 minutes or until doubled in size. Bake in a 350 oven until nicely browned. Brush with softened butter or margarine just before they are done and again when you take them out. The double brushing makes for a very appealing top.
