8 ounces uncooked fettuccine
1 cup julienned sweet red pepper
1 tablespoon canola oil
1/2 pound boneless skinless chicken breasts, cut into 1/4-inch strips
6 green onions, sliced
1/2 pound fresh asparagus, trimmed and cut into 1-inch pieces
3/4 cup chicken broth
1-1/2 teaspoons lemon juice
1/2 teaspoon salt
1/2 teaspoon dried thyme
1/2 teaspoon grated lemon zest
2/3 cup frozen peas, thawed
2 teaspoons cornstarch
1 tablespoon water
2 tablespoons reduced-fat sour cream
1/4 cup shredded Parmesan cheese

Steps:

  • Cook fettuccine according to package directions. Meanwhile, in a 12-in. nonstick skillet, saute red pepper in oil for 3 minutes or until crisp-tender. Stir in the chicken, onions, asparagus, broth, lemon juice, salt, thyme and lemon zest. Cook for 1 minute or until asparagus is crisp-tender. , Stir in peas; saute for 1 minute or until heated through. Combine cornstarch and water until smooth; stir into chicken mixture. Bring to a boil; cook and stir for 1-2 minutes or until thickened and chicken is no longer pink. , Remove from the heat; stir in sour cream. Transfer to a large bowl. Drain the fettuccine and add to chicken mixture. Sprinkle with Parmesan cheese and toss to coat.

Just toss slices of blanched asparagus with a tangle of cooked fettuccine slicked with butter. Shower with grated Parmesan and serve.

6 fresh asparagus spears, about 1/2 pound
10 ounces fresh fettuccine or 3/4 pound dried fettuccine
2 tablespoons butter
1/8 teaspoon freshly grated nutmeg
2 tablespoons finely chopped fresh basil or parsley
1/2 cup freshly grated Parmesan cheese
Freshly ground pepper and salt to taste

Steps:

  • Bring a large pot of salted water to boil.
  • Cut off tough ends of asparagus spears. Cut each on the bias into 1-inch lengths. There should be about 1 1/2 cups. Rinse well and drain.
  • Add the asparagus to the boiling water and cook about 2 minutes. Remove asparagus with a slotted spoon and set aside.
  • Drop the fettuccine into salted boiling water. Let cook to desired degree of doneness (cooking time will range from about 2 to 2 1/2 minutes for fresh pasta to 9 minutes or more for dried). Reserve 2 tablespoons cooking water. Drain the pasta.
  • Heat the butter in the pot in which the pasta was cooked. Add the asparagus pieces and the fettuccine. Add salt, pepper and nutmeg. Add the reserved 2 tablespoons of cooking water and basil. Toss to blend. Serve hot with Parmesan cheese on the side.

1 pound fresh asparagus, trimmed and cut into 2-inch pieces
1 large lemon, zested and juiced
1 cup grated Parmesan cheese
½ cup olive oil

Steps:

  • Fill a large pot with lightly salted water and bring to a boil. Stir in penne and return to a boil. Cook pasta uncovered, stirring occasionally, for about 8 minutes. Penne will still be slightly firm.

1/8 teaspoon dried hot red-pepper flakes
1 teaspoon finely grated fresh lemon zest
1 to 2 tablespoons fresh lemon juice
3/4 lb dried egg fettuccine
1/2 cup chopped fresh flat-leaf parsley
1/2 oz finely grated Parmigiano-Reggiano (1/4 cup) plus additional for serving

Steps:

  • Cook artichoke hearts in a 6- to 8-quart pot of boiling salted water until just tender, about 2 minutes. Transfer to a bowl with a slotted spoon. Return water to a boil.
  • Meanwhile, heat oil and butter in a 12-inch heavy skillet over moderately high heat until foam subsides, then sauté onion, salt, pepper, red-pepper flakes, and zest, stirring occasionally, until onion is softened, about 8 minutes. Add artichokes and sauté, stirring occasionally, 3 minutes. Stir in lemon juice (to taste), then remove from heat and transfer mixture to a large heatproof bowl.
  • While artichokes are sautéing, cook pasta in boiling water until al dente. Reserve 1 cup pasta-cooking water, then drain pasta in a colander and add to artichoke mixture along with 1/2 cup reserved water. Add parsley and cheese and toss to combine.   • Heat butter and remaining 1 tablespoon oil in same skillet over medium-high heat. Add mushrooms, season with salt and pepper, and cook, tossing often, until tender, about 5 minutes. 2 lemons
1 (16 ounce) box penne pasta
5 tablespoons butter, divided
¾ pound asparagus, trimmed and cut into 1-inch pieces
salt and freshly ground black pepper to taste
3 tablespoons all-purpose flour
¾ cup heavy cream
1 ½ cups vegetable broth, or more to taste
4 sprigs fresh parsley, chopped
1 pinch white sugar, or to taste
2 ripe tomatoes, seeded and diced
½ cup freshly shaved Parmesan cheese

Steps:

  • Zest and juice 1 1/2 lemons. Cut remaining lemon half into wedges and set aside.
  • Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain, reserving 1 cup of cooking water.
  • While penne is cooking, melt 2 tablespoons butter in a pot over medium heat and cook asparagus until softened, 4 to 5 minutes. Season with salt and pepper and remove from pot.
  • Add remaining 3 tablespoons butter and heat until a pinch of flour sprinkled into the pot will just begin to bubble. Whisk in flour to form a thick paste the consistency of cake frosting.   • Stir lemon juice, lemon zest, and parsley into the sauce; season with salt, pepper, and sugar. Add asparagus and heat through, about 2 minutes. Add tomatoes and penne to the sauce and pour in some of the reserved cooking water. Serve with shaved Parmesan and lemon wedges.

2 lbs medium-thick asparagus, ends trimmed,cut in 1 inch pieces on an angle
8 scallions, cut in thin rounds (whites and tender greens)
2 finely grated lemons, zest of
1 lemon, juice of (about 4 Tbs.)
3 -5 sprigs fresh thyme or 3 -5 sprigs fresh savory, leaves chopped
salt & freshly ground black pepper
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
1 cup whole milk
1 cup mascarpone
1 cup parmesan cheese or 1 cup romano cheese
1 pinch cayenne
1 pinch ground allspice
3/4 cup homemade breadcrumbs
1 lb fresh fettuccine or 1 lb dry fettuccine
1/2 cup pine nuts, lightly toasted

Steps:

  • Heat the oven to 400F or 450°F (Note the slightly higher oven temperature when baking fresh egg pasta.) Lightly coat a large, shallow baking dish with olive oil.
  • Bring a large pot of salted water to a boil.
  • Add the asparagus and blanch until tender but with a slight bite left to it, about 2 minute Scoop it from the water with a large slotted spoon, set it in a colander, and run it under cold water to preserve its green color.
  • Drain well.
  • Keep the water boiling for the pasta.
  • In a large skillet, heat the olive oil over medium heat.
  • Add the scallions; sauté 1 minute to soften.
  • Add the asparagus and sauté briefly, about 1 minute Take the skillet off the heat and add half the zest, the lemon juice, thyme, salt, and pepper; mix well and reserve.
  • In a medium saucepan, heat the butter and flour over medium heat, whisking until smooth.
  • Cook for 1 min.
  • ,whisking constantly, to cook away the raw taste of the flour.
  • Add the milk and cook, whisking all the while, until it comes to a boil.
  • Lower the heat a bit and cook until smooth and lightly thickened (about the consistency of heavy cream), 3 or 4 minute.
  • Turn off the heat and add the mascarpone, the remaining lemon zest, and 1/2 cup of the grana padano, whisking until the mixture is fairly smooth (there will be a slight grainy texture from the cheese).
  • Season with the cayenne, allspice, and more salt and pepper.
  • In a small bowl, combine the breadcrumbs and the remaining grana padano.
  • Season with salt and pepper and add a drizzle of olive oil.
  • Mix well.
  • Return the cooking water to a full boil and cook the fettuccine, leaving it slightly underdone.
  • Drain well.
  • Return the fettuccine to the cooking pot.
  • Add the mascarpone sauce, the pine nuts, and the asparagus with all its juices.
  • Toss and taste for seasoning.
  • Pour into the baking dish and sprinkle the breadcrumb mixture evenly over the top.
  • Bake uncovered until bubbling and golden, 15 to 20 minute Serve right away.

I found this in Cooking Light in an article about fresh spring vegetables. This one uses two of those, baby artichokes and asparagus. Baby artichokes are tiny artichokes (usually no bigger than a large egg) that are completely edible (except the stem). For proper-sized baby artichokes, only the outer-most layer of leaves needs to be pulled off. If your artichokes are bigger than egg-sized, it is a good idea to remove the leaves until you get to the heart to avoid any bitterness. Pappardelle is a very wide ribbon pasta. If you can't find it, use the widest ribbon pasta you can find (usually fettuccine). And if you are like me and usually forget to reserve pasta water, a little chicken broth or even the soaking water from the artichokes can be used. Vegan without cheese or with a substitute.

2 1/4 cups cold water, divided
1/4 cup fresh lemon juice (about 2 lemons)
24 baby artichokes (about 2 pounds)
3 tablespoons extra virgin olive oil, divided
1 lb asparagus, trimmed and cut diagonally into (1-inch)
2 tablespoons fresh flat-leaf parsley, chopped
1 tablespoon lemon rind, grated (or more to taste)
1 teaspoon fresh thyme, chopped
1/2 teaspoon salt
1/2 teaspoon black pepper
1 1/4 cups parmigiano-reggiano cheese, grated

Steps:

  • Cook pasta according to package directions, omitting salt and fat. Drain pasta, reserving 1/2 cup cooking liquid. Set pasta aside; keep warm.
  • Combine 2 cups water and juice in a medium bowl. Working with 1 artichoke at a time, cut off stem to within 1/4-inch from the base; peel stem. Remove bottom leaves and tough outer leaves, leaving tender heart and bottom; trim about 1/2 inch from top of artichoke. Cut each artichoke in half lengthwise. Place artichoke halves in lemon water.
  • Heat 1 tablespoon oil in a large skillet over medium heat. Drain artichokes well; pat dry. Add artichokes to pan. Cover and cook 8 minutes, stirring occasionally; uncover. Increase heat to medium-high; cook 2 minutes or until artichokes are golden, stirring frequently. Place artichokes in a large bowl.
  • Place pan over medium heat; add remaining 1/4 cup water and asparagus to pan. Cover and cook 5 minutes or until crisp-tender. Add asparagus, parsley, and rind to artichokes; toss well. Add pasta, reserved cooking liquid, the remaining 2 tablespoons oil, thyme, salt, and pepper to artichoke mixture; toss well. Place 2 cups pasta mixture into each of 6 shallow bowls; top each serving with about 3 tablespoons cheese.

This simple one-pot pasta features fresh asparagus and is as lovely to look at as it is delicious to eat. Serve smaller portions of this creamy pasta as a first course, or make it a luxurious main dish.

3 large egg yolks
1 cup heavy cream
2 ounces Parmigiano-Reggiano, finely grated (1 1/4 cups), plus more for serving
1 teaspoon finely grated lemon zest, plus more for serving (optional), and 1 tablespoon fresh juice
Kosher salt and freshly ground pepper
12 ounces linguine
1 pound asparagus, trimmed and cut on the diagonal into 1-inch pieces (about 2 cups)

Steps:

  • In a bowl, whisk together egg yolks, cream, cheese, lemon zest, 1/2 teaspoon salt, and 1/8 teaspoon pepper to combine.
  • In a large pot of boiling salted water, cook pasta 2 minutes less than per package instructions. Add asparagus; cook until bright green and tender, about 2 minutes more. Reserve 1/2 cup pasta water; drain.
  • Return pasta and asparagus to pot along with egg mixture. Toss until well combined, adding a few tablespoons of pasta water at a time until sauce coats pasta. Add lemon juice; season to taste. Serve immediately, with more cheese, pepper, and lemon zest.

Fettuccine With Asparagus, Artichokes and Lemon Thyme image

I invented this when I had some asparagus and artichokes in the fridge and wondered what to do with my new pot of lemon thyme growing outside the kitchen door. It was quite a good combination, if I do say so myself.

250 g fettuccine
2 tablespoons extra virgin olive oil (or half oil and half butter)
4 shallots, finely chopped
1 -2 clove garlic
1 bunch asparagus
2 globe artichokes
2 tablespoons fresh lemon thyme leaves
50 g pecorino cheese, freshly grated
salt & freshly ground black pepper

Steps:

  • Have a bowl of water with a squeeze of lemon juice in it standing by.
  • Prepare the artichokes by first removing half of the outer green leaves.
  • Cut the top half or two-thirds off of the artichoke and discard.
  • Dip the cut artichoke into the lemon water.
  • Continue to remove any leaves that have any green colour to them as they are tough (it may look like you are wasting a lot, but you really don't want to eat the green parts- trust me).
  • Cut off the stem where it joins to the base of the artichoke (which is the flower), dip in the lemon water and set aside.
  • Once only the inner, yellow part of the artichoke remains, cut the it in half lengthwise and scrape out the hairy choke with a teaspoon.
  • Dip the halves in the lemon water again, then cut each half into three or four wedges, lengthwise.
  • Place the artichoke pieces in the bowl of lemon water.
  • They will keep there without going brown until you are ready to cook them.
  • If the stem of the artichoke was in good shape (nice and crispy, not brown and limp), cut off the outer green part, as the inner, pale part and the base of the flower are edible (and may even be the best parts).
  • Chop into pieces of about the same size as the artichoke wedges and add to the lemon water.
  • Repeat with the other artichoke.
  • To prepare the asparagus, remove the woody base of the stem by snapping at the lowest point it will break naturally.
  • Discard the tough bases.
  • Cut off the asparagus tips and set aside.
  • Cut the remaining stems into approximately 3 cm lengths.
  • Bring a large saucepan of water to the boil, add salt and cook the fettuccine according to the packet instructions.
  • When cooked al dente, pour in some cold water to stop the cooking, then drain in a colander.
  • Meanwhile, heat the oil (or oil and butter) in a medium, heavy-based saucepan over medium-low heat, then add the shallots and garlic and sauté gently until softened.
  • Add the lemon thyme leaves (just strip them straight off the stems and throw them in) and stir.
  • Drain the artichoke pieces and add them along with the asparagus pieces (but not the tips) to the pan.
  • Sauté gently until the asparagus is about half cooked.
  • Add the asparagus tips and continue to sauté, stirring occasionally, until the asparagus is tender.
  • Once the pasta and the vegetables are cooked, turn off the heat, and combine them in one pan.
  • Add the Pecorino cheese and salt and pepper to taste, and stir together.
  • Serve immediately.
