OMELETTE WITH AVOCADO, BACON AND MONTEREY JACK

- Preheat the oven to 350 degrees F.
- Crack the eggs into a medium mixing bowl and pour in the cream. Add the chives, tarragon, salt and pepper and whisk until well incorporated and foamy.
- Preheat an 8-inch skillet over medium heat. Add the butter and turn the heat down slightly. With a 4-ounce ladle, add one ladle of eggs to the pan. Immediately begin stirring with a spatula. (Cook's note: This is to heat the eggs through so they set like a custard. Keep swirling them around so the eggs aren't in one spot long enough to burn.)
- Once the eggs begin to set, stop stirring. Transfer the pan to the oven for 1 1/2 minutes; the omelette should still have a soft custard touch
- Top the omelette with the bacon, avocado and Monterey Jack. Return it to the oven for 30 seconds, just so the cheese begins to melt. Using an oven mitt to grip the handle, tip the pan sideways and roll the omelette onto a plate with the help of a spatula. Garnish with more chives and tarragon, and chervil.
CANADIAN BACON OMELET
A tasty omelet that we have enjoyed in our house. Make sure that you use a skillet that can be used on the stove top as well as the oven, as the omelet finishes up in the oven.

Steps:
- Combine eggs and 1/3 cup of the cheese.
- Melt butter in a skillet.
- Add potato, bell pepper, onion, bacon and garlic then saute 5 minutes.
- Stir in egg mixture and spread evenly in bottom of skillet.
- Cook over medium heat for 5 minutes or until almost set.
- Place skillet in preheated 450 degree oven for 5 minutes.
- Sprinkle with remaining cheese then bake until cheese melts.
- Cut into wedges and serve with a dollop of sour cream.

FIDDLEHEAD AND BACON OMELETTE
When choosing fiddleheads look for bright green, tightly wound fronds. Great for a hearty breakfast or for lunch.

- Carefully wash each fiddlehead, remove all of the brown papery cover, and trim the ends.
- Add an inch of water to the bottom of a steamer basket and heat on high until the water is boiling. Place fiddleheads into the top of the steamer basket and cover with a lid. Steam for 10 minutes. Fill a medium bowl with ice chips and water and set aside.
- Meanwhile, place bacon bits into a small nonstick skillet and add 2 teaspoons water. Cook on medium heat until crispy, about 5 minutes. Drain bacon on a paper towel-lined plate.
- Plunge the steamed fiddleheads into the icy water to stop the cooking progress. Remove after 5 minutes and pat dry.
- Break eggs into a medium bowl and season with salt and pepper. Add milk and 1 tablespoon water; whisk until smooth.
- Melt 1 teaspoon butter in a 10-inch nonstick skillet over medium heat. Pour in 1/2 the egg mixture let partially set. Lift 1 section of the omelette with a spatula and tilt skillet, allowing liquid egg to run underneath. Add 1/2 the bacon and fiddleheads to the lower section and carefully fold the uncovered section over the bottom. Add 1 slice Gruyere cheese; let melt, about 2 minutes more. Repeat with the other half of the ingredients.
