1 cup peeled, diced cherimoya
1 cup peeled and diced papaya
1 cup peeled, seed removed, and diced mango
1 cup pineapple chunks, grilled
1 cup peeled, pitted, diced avocado, preserved by squeezing a lime over it to prevent browning
1 cup diced star fruit
1 cup peeled, diced kiwi
1 1/2 cups small diced white onion
2 red Thai chile, stem removed, diced small
1 red jalapeno, stem and seeds removed, diced small
1/2 cup roughly chopped cilantro
3/4 cup rice wine vinegar
3/4 cup olive oil
1/2 cup chopped scallions
2 tablespoons brown sugar
3 limes, juiced
Kosher salt and ground black pepper

Steps:

  • In a large mixing bowl combine all the ingredients. Stir and refrigerate until use. Best if used the same day it is made.

This salsa has a sweet and spicy taste that compliments grilled shrimp or full-bodied fish like tuna. It also makes an unusual salad, garnished with chilled strips of grilled pork or chicken.

1/4 cup dry-roasted, unsalted peanuts, coarsely chopped
3 cloves garlic, peeled and minced
1 tablespoon brown sugar
1/4 cup Thai fish sauce, available at specialty stores
2 tablespoons grated lime rind
1/4 cup fresh lime juice
1 medium fresh jalapeno pepper, seeded, deveined and minced
1/2 cup fresh coriander leaves, minced
1 1/2 cups honeydew melon, peeled, seeded, cut in 1/4-inch cubes
1 1/2 cups cantaloupe, peeled, seeded, cut in 1/4-inch cubes
1 cup coarsely chopped parsley

Steps:

  • Preheat the oven to 350 degrees. Put the peanuts on a cookie sheet and toast in the oven until golden brown, about 10 minutes. Set aside to cool.
  • Combine the garlic, brown sugar, fish sauce, grated lime rind, lime juice and coriander in a large glass or ceramic bowl. Add the peanuts, honeydew, cantaloupe and parsley. Toss well. Cover and refrigerate for at least 1 hour before serving. Store in an airtight container in the refrigerator for up to 3 days.

1 mango, peeled and cut into 1/2-inch dice
1 papaya, peeled, seeded, and cut into 1/2-inch dice
1 pint strawberries, hulled and quartered
2 tablespoons sugar
1 red serrano or jalapeño chili, seeded and minced (wear rubber gloves)
2 tablespoons minced fresh mint leaves

Steps:

  • In a bowl stir together the mango, the papaya, the strawberries, the sugar, and the chili, let the mixture stand for 10 minutes, and stir in the mint. Serve the salsa with grilled chicken or fish.

Other combinations of fruits will also taste great in this colorful salsa. Try adding diced melon, such as cantaloupe, honeydew, or musk. Diced mango is delicious also, or, for a truly tropical and exotic salsa, add sliced star fruit (also known as carambola). 1/2 cup diced fresh papaya
1/2 cup sliced banana
1/2 cup diced pineapple
1/4 cup diced kiwi fruit
1/4 cup green bell peppers or 1/4 cup yellow bell pepper, diced
1/4 cup diced red onion (purple)
1 habanero pepper, deseeded and destemmed, minced
2 tablespoons orange juice
1 tablespoon lime juice
2 tablespoons extra virgin olive oil
2 tablespoons pomegranate arils (juice sacs)
2 tablespoons minced fresh cilantro

Steps:

  • Combine fruits in a large bowl.
  • In a small bowl, mix together the orange and lime juices and oil. Drizzle over the fruits and toss gently to mix well.
  • Allow to sit for 2 hours. Just before serving, add the pomegranate arils and toss well. Garnish with the cilantro.

Original recipe came from Relish Magazine in the newspaper; I have changed the amounts to make it more manageable for the home cook. This salsa is hot, remove seeds and inner membranes of peppers for a milder flavor or use less hot peppers. The peppers can be adjusted to your own personal taste. This is the best salsa I've ever eaten and a great way to use some of those summer tomatoes.

10 lbs tomatoes, cored, seeded and chopped (homegrown are best)
2 1/2 cups onions, diced
8 jalapenos, minced
2 bell peppers, diced
4 ounces cilantro, chopped
6 garlic cloves, minced
3 1/2 cups white distilled vinegar
2 tablespoons salt
2 tablespoons sugar
1 lime, zest and juice (can use 2 if you like lime)

Steps:

  • Combine all ingredients in a large pot and bring to a boil. Boil 10 minutes; reduce heat and simmer an additional 10 minutes.
  • Ladle into sterilized jars leaving about 1/4 inch head space and place in boiling water bath for 15 minutes. Let cool 24 hours.
