FIESTA CORN & AVOCADO SALAD

3 ears corn, preferably yellow, shucked
Kosher salt and freshly ground black pepper
1 pint heirloom cherry tomatoes, halved through the stem
1 Holland orange bell pepper, cored, seeded, and 1/2-inch-diced
1/2 cup medium-diced red onion
2 jalapeno peppers, seeds and ribs removed, minced
1 1/2 teaspoons grated lime zest
1/4 cup freshly squeezed lime juice (3 limes)
2 tablespoons good olive oil
1 teaspoon minced garlic
1/4 teaspoon chipotle chile powder
2 ripe Hass avocados, large-diced
Juice of 1 lemon

Steps:

  • Cook the corn in a large pot of boiling salted water for 5 to 7 minutes, until just tender. Cool for 5 minutes and cut the kernels off the cob, cutting close to the cob with a sharp knife. Place the kernels in a large bowl with the tomatoes, bell pepper, onion, and jalapeno peppers.
  • In a small bowl or glass measuring cup, whisk together the lime zest, lime juice, olive oil, garlic, chile powder, 1 teaspoon salt, and 1/2 teaspoon black pepper. Pour the dressing over the vegetables and toss.
  • In a separate bowl, gently toss the avocados and lemon juice together, making sure the avocado is coated in lemon juice. Add to the vegetables, sprinkle with 1 teaspoon salt and 1/2 teaspoon black pepper, and carefully fold together without breaking up the avocados. Sprinkle with salt and serve cold or at room temperature.

1-2 pounds flank steak, sliced into 1/4-inch thick strips
1/4 cup chopped cilantro
1/4 cup soy sauce
2 tablespoons lime juice
1/2 teaspoon garlic powder
1/4 teaspoon ground cayenne pepper
1/4 teaspoon ground black pepper
1 avocado
1/3 cup plain greek yogurt
juice from one lime
1/4 cup fresh cilantro leaves
1 jalapeños jalapeño
1/4 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • In a small bowl, whisk together 1/4 cup freshly chopped cilantro, soy sauce, lime juice, garlic powder, cayenne pepper and black pepper for the steak. Add sauce to a Ziplock bag, along with the flank steak. Refrigerate and marinade for 2 to 3 hours. In the bowl of a food processor, combine avocado, Greek yogurt, lime juice, cilantro, jalapeño, salt and pepper for the sauce. Puree on high until combined. Add to a small bowl and refrigerate until ready to serve. Soak wooden skewers in a shallow baking dish filled with cold water for 15 minutes. Pat dry with paper towels. Skewer one piece of thinly sliced flank to each wooden skewer. Heat grill or grill pan to high heat. Once hot, add beef skewers and grill until cooked to desired doneness. For medium rare, grill for 2 minutes per side. Serve skewers immediately with avocado dipping sauce.

1/2 cup apple cider vinegar
2 tablespoons sugar
Kosher salt
1 red onion, thinly sliced
1 bunch cilantro, roughly chopped
1 pound flank steak, trimmed
1 clove garlic
2 tablespoons red wine vinegar
Juice of 1/2 lemon
1/2 teaspoon red pepper flakes
1/2 cup extra-virgin olive oil, plus more for brushing
Freshly ground pepper

Steps:

  • Make the pickled red onion: Combine the cider vinegar, sugar and 1 teaspoon salt in a medium bowl and whisk to dissolve. Add the red onion and 2 tablespoons cilantro and stir to combine. Cover and set aside at room temperature, 1 hour.
  • Meanwhile, soak 20 wooden skewers in warm water, at least 20 minutes. Slice the flank steak against the grain into 20 strips, about 1/8 inch thick. Thread the meat accordion-style onto the skewers and set aside until ready to grill.
  • Combine the remaining cilantro, the garlic, red wine vinegar, lemon juice, red pepper flakes, 1/2 teaspoon salt and the olive oil in a blender and puree until smooth; transfer to a small bowl.
  • Heat a grill or grill pan to medium high. Season the steak with salt and pepper. Brush the grill with olive oil, then grill the skewers until marked, about 1 minute per side. Serve with the chimichurri and pickled onion.

  • Grill flank steak in the preheated grill pan, flipping halfway through, until browned and cooked to desired doneness, about 8 minutes. Let steak rest on a work surface for 10 minutes. Thinly slice steak against the grain.

1/2 cup extra-virgin olive oil, plus more for drizzling and brushing
1 red bell pepper, cored, seeded, and quartered
1 Scotch bonnet or habanero chile, halved (seeds removed, if less heat is desired)
1/4 sweet onion, such as Vidalia, cut into 1-inch pieces (1/2 cup)
1/4 cup fresh orange juice
3 tablespoons fresh lemon juice
1 teaspoon cumin seeds, toasted
1 tablespoon packed fresh oregano leaves, plus more for serving
Coarse salt
2 pounds skirt steak, cut crosswise into 6 pieces (each about 4 inches wide)
Steamed rice and diced avocado, for serving

Steps:

  • In a blender, puree oil, bell pepper, chile, onion, orange and lemon juices, cumin seeds, oregano, and 1 teaspoon salt until smooth. (Sauce can be made up to 3 days ahead and refrigerated; remove 30 minutes before serving.) Transfer to a serving bowl; just before serving, stir and top with more oregano leaves and a drizzle of oil.
  • Preheat grill for direct-heat cooking (medium-high on a gas grill). On a work surface, lay 3 steak pieces flat in a row. Insert a long metal skewer through all 3 pieces, about 1/2 inch from one short end. Insert a second skewer through all 3 pieces, 1/2 inch from other short end. To ensure even cooking, spread pieces 1/2 inch apart on skewers. Repeat with remaining 3 pieces steak. Pat meat dry and generously season both sides with salt; let stand 10 minutes. Lightly brush grates with oil. Grill steak, flipping once, until charred in places, 7 to 9 minutes for medium-rare; 10 to 12 minutes for medium. 1/2 cup fat-free sour cream
2 tablespoons minced fresh cilantro

Steps:

  • Flatten chicken to 1/4-in. thickness; cut lengthwise into sixteen 1-in.-wide strips. In a large bowl, combine the lime juice, vinegar, chipotle pepper and salt; add the chicken and turn to coat. Cover and refrigerate for 30 minutes. , Meanwhile, for the sauce, place remaining ingredients in a food processor; cover and process until blended. Kabobs look special & you can have a party on a plate with minimum effort. After the preparation (which can be done ahead) the recipe goes together quickly and utilizes an indoor contact grill. The meatballs are soft, so cooking on an outdoor grill would require adjustments and presoaking the bamboo skewers. I don't presoak the skewers when using a foreman style grill. 30 min prep & 30 min chill time

1 lb lean ground beef
1/2 cup chunky salsa, medium
1 teaspoon cumin
1 teaspoon chili powder
1/4 teaspoon oregano
1/2 cup cheddar cheese, grated
1/2 cup panko breadcrumbs
1/8 teaspoon salt
1/8 teaspoon black pepper
1 medium zucchini, sliced into eight 3/4 ' thick sections
1 medium purple onion, cut into eight wedges
1 bell pepper (red or green)
4 bamboo skewers, 12 inches long
cooking spray
1 avocado
1/2 cup sour cream (reduced fat okay)
2 tablespoons cilantro, finely chopped
1 garlic clove, minced
1 green onion, finely chopped
1/2 tablespoon fresh jalapeno, minced (or more)
2 teaspoons lime juice
1/2 teaspoon sugar
1/8 teaspoon salt

Steps:

  • Make the meatballs. Pour all ingredients into a large bowl & mix well. Form into 16 small balls as firmly as possible. Place on plate & flatten slightly. Cover & chill at least 30 minutes. The meatballs will be soft so chilling or even flash freezing is important.
  • Make the Creme. In small bowl mash the avocado. Add remaining ingredients & stir. Chill until later.
  • Preheat indoor contact grill.
  • Assemble the skewers. The vegetables should be similar in size to the meatballs to ensure even cooking. Alternate 2 sections of zucchini, 2 peppers, 2 red onion sections and 4 meatballs onto each of four skewers. Use the curves of the vegetables to "cup" the meatballs to help hold in place. Pack the skewers tightly.
  • Spray the grill top & bottom liberally with cooking spray. Place skewers on grill & shut lid. Set timer for 7 minutes.
  • Use spatula to gently flip skewers over & rearrange position on grill from front to back. Cook for an additional 4 minutes or longer depending on your grill. The veggies should be soft & the meatballs browned.
  • Serve hot with the avocado & cilantro sauce to drizzle on top.
  • The skewers would be good served on top of rice or even in tortillas.
