CHOCOLATE CHIP PEAR DROP COOKIES
Steps:
- Pre-heat oven to 350F (180C). Line a large or 2 medium cookie sheets with parchment paper.
- In a large bowl whisk together the flour, sugars, baking powder and salt. Add the eggs and butter and beat on medium speed to combine.
- Fold in the chopped pear and chocolate chips. Drop by spoonfuls on the prepared cookie sheet and bake for about 15-18 minutes or until lightly golden. Let the cookies cool on the cookie sheet then move to a wire rack. Enjoy!

DEEPLY CHOCOLATE GELATO
Steps:
- Heat the milk, cream, and 1/2 cup sugar in a 2-quart saucepan, until the sugar dissolves and the milk starts to simmer. Add the cocoa powder and chocolate and whisk until smooth. Pour into a heat-proof measuring cup.
- Place the egg yolks and the remaining 1/4 cup sugar in the bowl of an electric mixer fitted with the paddle attachment and beat on high speed for 3 to 5 minutes, until light yellow and very thick. With the mixer on low speed, slowly pour the hot chocolate mixture into the egg mixture. Pour the egg and chocolate mixture back into the 2-quart saucepan and cook over medium-low heat, stirring constantly, until thickened. A candy thermometer will register about 180 degrees F. Don't allow the mixture to boil!
- Pour the mixture through a sieve into a bowl and stir in the coffee liqueur, vanilla, and salt. Place a piece of plastic wrap directly on top of the custard and chill completely.
- Pour the custard into the bowl of an ice cream maker and process according to the manufacturer's directions. Stir in the roughly chopped chocolate, if using, and freeze in covered containers. Allow the gelato to thaw slightly before serving.
CHOCOLATE-PEANUT BUTTER GELATO
The original recipe called for heavy cream and egg yolks. This is my attempt to lighten it a little. The photo is of the gelato base.

- Combine milk, half-and-half, and cocoa powder in a pot over medium heat. Cook until heated through, reaching about 130 degrees F (54 C) but not boiling. Stir occasionally to break up lumps and prevent a skin from forming on the surface.
- Meanwhile, combine egg substitute and sugar in a separate bowl. Whisk until sugar is incorporated. Pour in a little of the hot milk mixture to temper the eggs; mix well and add back to the mixture on the stove. Reduce heat to medium-low. Stir until mixture reaches 185 degrees F (85 C) and thickens enough to coat the back of a spoon, but do not let boil.
- Turn off the heat. Add peanut butter, vanilla extract, and salt. Stir until melted and combined. Let ice cream base cool, stirring occasionally, until steam stops rising, at least 20 minutes. Place pot over an ice water bath if desired. Cover and refrigerate, 8 hours to overnight.
- Pour base into an ice cream maker and freeze according to manufacturer's instructions until texture resembles soft-serve, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

- In a small bowl, combine the flour and sugar. Cut in butter until mixture resembles coarse crumbs. Press into a greased 9-in. square baking pan. Bake at 350° for 25-28 minutes or until golden brown., In a small bowl, beat the eggs, brown sugar and vanilla. Combine the flour, baking powder, salt and ginger; stir into egg mixture just until moistened. Gently stir in pears and coconut. , Spread over warm crust. Bake 20-23 minutes longer or until golden brown. Cool on a wire rack. Cut into bars.

Basic Gelato Recipe...from my Italian mother-in-law. This recipe may be used as a base for your favorite flavors. Try adding vanilla, shaved chocolate or your favorite fruits. Experiment with desired flavors!

- In a medium saucepan, mix milk and cream. Warm until foam forms around the edges. Remove from heat.
- In a large bowl, beat the egg yolks and sugar until frothy. Gradually pour the warm milk into the egg yolks, whisking constantly. Return mixture to saucepan; cook over medium heat, stirring with a wooden spoon until the mixture gels slightly and coats the back of the spoon. If small egg lumps begin to show, remove from heat immediately.
- Pour the mixture through a sieve or fine strainer into a bowl. Cover, and chill for several hours or overnight.
- Pour the mixture into an ice cream maker, and freeze according to the manufacturer's instructions. Transfer to a sealed container, and freeze until firm. If the gelato is too firm, place it in the refrigerator until it reaches the desired consistency.

AMARETTO PEAR GELATO

Prep time includes the time needed to poach, heat, and chill liquid. Cooking time is the time needed in the ice cream freezer. Time will vary depending upon your ice cream freezer.

- In a large saucepan, combine the pear or apple juice, amaretto, and 1/2 cup sugar. Heat the mixture over medium heat, stirring until the sugar is dissolved. Add the pears and poach for 35 to 40 minutes, or until tender but not falling apart. Using a slotted spoon, transfer the pears to a plate. Reduce the cooking liquid for 20 minutes, or until slightly thickened. Set aside to cool. Stir in the cream. Cover and refrigerate the pears and liquid separately until needed.
- In a medium saucepan, combine the milk and salt. Heat over medium heat until bubbles form around the edges. Remove from heat and cover to keep hot.
- In a blender or food processor, blend the 2/3 cup sugar and the egg yolks together until very thick and smooth. With the machine running, gradually add the hot milk.
- Return the mixture to the saucepan. Cook over medium heat, stirring constantly with a wooden spoon, for 6 to 8 minutes, until the mixture thickens slightly and coats the back of the spoon, Remove the pan from heat and set it in a bowl if ice water. Stir for 2 minutes to cool the mixture. Cover and refrigerate for at least 2 hours, or until thoroughly chilled.
- Chop 6 of the pear halves, refrigerate the remaining 6 for serving. In a blender or food processor, puree the chilled custard and the chopped pears until smooth. Freeze in an ice cream maker according to the manufacturer's instructions.
- To serve, arrange a pear half on each plate. Reheat the reduced cooking liquid. Scoop gelato on top of each pear half, spoon some of the reduced cooking liquid over, and garnish with chopped hazelnuts. Makes 1 1/2 quarts, serves 6.

- In a small heavy saucepan heat sugar and water, stirring until sugar is dissolved. Cool syrup. Peel and pit peaches and in a food processor purée until smooth. Transfer 2 cups purée to a bowl, reserving remainder for another use, and stir in syrup and lemon juice. Chill peach mixture until cold and up to 1 day.
- Stir in egg white and freeze in an ice-cream maker. Serve gelato immediately or transfer to an airtight container and put in freezer to harden no more than 3 hours.
PEAR GELATO WITH CHOCOLATE PHYLLO COOKIES
Steps:
- For the Gelato: Using a spoon, scoop the flesh from the peel of the pear into a medium bowl preserving all the juice. Stir in the lemon juice, mashing up any larger pieces of pear. Set aside. In a heavy 3-quart saucepan, bring cream and vanilla beans to a boil over medium heat. Meanwhile, in a large bowl, with a mixer on medium speed, beat sugar and eggs. Mix in a bit of the hot cream mixture. Then, slowly pour the egg mixture back into cream mixture in saucepan. Cook over medium heat, stirring constantly, just until mixture coats the back of a spoon (do not boil, or it will curdle). Remove from heat and allow to cool for about 5 or 10 minutes. Then, stir in the pear mixture and refrigerate for about 20 minutes. Once good and cool, transfer to your ice cream machine and follow the manufacturer's instructions. For the Cookies: Preheat oven to 350F. Line a baking sheet with a piece of parchment. Brush a sheet of phyllo with butter and lay it butter side down on the parchment. Then, brush the top, from the inside of the sheet out to the edges. Add another sheet of phyllo and brush lightly with butter. Repeat with the remaining sheets. With the top sheet, give the edges a bit of an extra coating. Cover with another sheet of parchment paper, and top with another baking sheet (this will help the phyllo to stay flat). Bake for 15 to 20 minutes, or until it's golden brown. Remove from the oven, and allow to cool for about 5 minutes. Then, cut into strips or any desired shapes (triangles make nice cookies too). In a medium saucepan over medium-low heat, warm the chocolate until just melted, stirring constantly to keep it from burning. Remove from heat. Using a pastry brush, coat the tops of the phyllo strips with a thin layer of chocolate. Allow it to set, at room temperature, or in the refrigerator.
