Bourbon-Glazed Coffee Cake with Fig Preserves image

Bursts of flavorful fig complement this sour cream coffee cake with a cinnamon-crumb top and bourbon glaze.

Provided by Food Network Kitchen

Time 2h

Yield 8

Number Of Ingredients 17

3/4 cup all-purpose flour
2/3 cup packed light brown sugar
1 teaspoon ground cinnamon
Pinch of fine salt
5 tablespoons unsalted butter, at room temperature
1 stick (8 tablespoons) unsalted butter, at room temperature, plus more for the pan
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon fine salt
1 cup granulated sugar
2 large eggs
2 teaspoons vanilla extract
1 cup sour cream
2/3 cup fig preserves
3/4 cup confectioners' sugar
2 tablespoons bourbon

Steps:

  • Combine the flour, brown sugar, cinnamon and salt in a small bowl and mix well. Add the butter and mix thoroughly with your fingers or a fork until all of the butter has been evenly distributed and incorporated into the flour. Form into small to medium clumps with your fingers.
  • Preheat the oven to 350 degrees F. Butter an 8-inch square cake pan.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat together the butter and granulated sugar in a large bowl with an electric mixer on medium-high speed until light and fluffy, about 3 minutes. Add the eggs 1 at a time, beating well after each addition. Beat in the vanilla. Reduce the speed to low and add the flour mixture in 3 batches, alternating with the sour cream, beginning and ending with the flour, beating until just incorporated.
  • Spoon half of the cake batter (it will be very thick) into the prepared pan and smooth with an offset spatula. Dollop the fig preserves on top and carefully smooth with the spatula. Spoon the remaining cake batter on top and smooth the top. Sprinkle on the crumb topping.
  • Bake until the cake and topping are golden brown and a toothpick inserted into the center of the cake comes out clean, about 1 hour. Let cool in the pan 20 minutes, then invert onto a plate; invert again onto a rack to cool completely.
  • When the cake is cool, whisk together the confectioners' sugar and bourbon in a medium bowl until smooth. Drizzle the glaze over the cake and let set.

Time 40m

Yield Makes 2 x 500ml jars

Number Of Ingredients 4

1kg ripe figs , quartered
1 large orange , zested
400g granulated sugar
1 lemon , juiced, plus strips of zest, to serve (optional)

Steps:

  • Put the figs and 150ml water in a large heavy based saucepan. Bring to a simmer and gently bubble for 5 mins or until the figs have softened and released their juices. Add the orange zest, sugar and lemon juice. Bring to a boil and cook, stirring regularly for around 5-7 mins or until thick, skimming off any skum that rises to the surface. Remove from the heat and leave to sit for 10 mins.
  • Ladle the mixture into sterilised jars. Seal with the lids and leave to cool completely. Will keep for six months unopened and 2 weeks in the fridge once opened.

  • Prepare the Cake: Preheat oven to 350°F. Grease (with butter) and flour a 10-inch, 12-cup light-colored metal tube (angel food) pan. Sift together flour, nutmeg, allspice, cinnamon, and salt into a large bowl.
  • Beat eggs in bowl of a stand mixer fitted with paddle attachment on medium speed until foamy, about 1 minute. Gradually add sugar, beating on medium speed until mixture is thick and pale, 2 to 3 minutes. Gradually add oil, beating until well combined. With mixer running on low speed, add flour mixture alternatively with buttermilk, beginning and ending with flour mixture, beating until just combined after each addition.
  • Stir together water and baking soda in a small bowl until dissolved; add to batter with jam and vanilla. Beat on low speed until just combined. Gently fold in walnuts. Pour batter into prepared pan; spread into even layer. Bake in preheated oven until a wooden pick inserted into center of cake comes out clean, about 1 hour and 10 minutes. Cool on a wire rack 15 minutes. Invert and remove cake from pan to wire rack, and let cool completely, about 1 ½ hours.
  • Meanwhile, prepare the Glaze: Stir together sugar, cornstarch, buttermilk, butter, corn syrup, cornstarch, and baking soda in a medium saucepan over medium; bring to a boil, stirring occasionally. Cook, stirring occasionally, until sugar is dissolved and is light golden brown, about 5 minutes. Remove from heat; stir in vanilla, and let cool 30 minutes. Drizzle slightly warm glaze over cooled cake.
