Filet Mignon Steaks with Tarragon Mushrooms image

Here's how to make perfect Filet mignon steaks at home. They are served with vermouth reduction sauce and sauteed mushrooms with tarragon. Make them for Valentines Day or a Stay at home date night. Serves 2.

1 teaspoon canola oil
2 1 ½ inch-thick filet mignon steaks, aka big sexy steaks, 12 to 14 ounces total
½ teaspoons each kosher salt and freshly ground pepper
1 large shallot, minced
½ teaspoon chopped fresh thyme
1/4 cup sweet vermouth
3/4 cup reduced-sodium chicken or beef broth
½ teaspoon corn starch or arrowroot
2 teaspoons extra-virgin olive oil
2 sliced scallions, white and green parts separated
4 cups sliced mixed mushrooms, wild, shiitake and/or white
¼ teaspoon salt
½ teaspoons chopped fresh tarragon

Steps:

  • Preheat oven to 425 degrees F.
  • Heat canola oil in a medium heavy oven-proof skillet. Meanwhile, sprinkle steaks with kosher salt and pepper. When oil shimmers, add steaks, and cook until the bottom is deeply browned, about 5 minutes. Turn steaks over, insert remote oven-proof inta-read thermometer into the center of one steak (if using) and transfer the skillet to the oven. Roast until the steaks are 130 degrees F for medium-rare 8 to 11 minutes. Transfer steaks to a plate and tent with foil to keep warm.
  • Place skillet over medium- high heat. Use caution the handle will be hot!! Add shallot and thyme to the skillet, and cook, stirring until the shallot is browned, about 30 seconds. Add vermouth and let simmer until almost reduced by one half. Stir the cornstarch into the broth and add to the skillet. Bring to a simmer, stirring. Cook until slightly thickened and reduced to about ½ cup. Remove from the heat.
  • Meanwhile while steaks roast, heat olive oil in a large skillet over medium-high heat. Add scallion whites, mushrooms and salt, and cook, stirring occasionally until the mushrooms are browning and the juices evaporate, 6 to 8 minutes. Stir in scallion greens and tarragon and remove from the heat.
  • Serve steaks with the vermouth sauce and mushrooms.

16 ounces trimmed beef tenderloin steaks (1-1/4 to 1- 1/2 inches thick)
2 teaspoons olive oil
1/4 teaspoon kosher salt
1/8 teaspoon fresh ground black pepper
2 tablespoons unsalted butter
1 garlic clove, minced
2 teaspoons chopped fresh tarragon or 3/4 teaspoon dried tarragon

Steps:

  • Rub steaks with olive oil, season with salt and pepper, and let stand at room temperature for 15 minutes.
  • Heat medium skillet over medium-high heat. For rare steak, cook filets until instant thermometer reads 130 degrees, about 10 minutes, turning once (for filets cooked to a greater doneness, turn down heat and increase cooking time). Transfer to serving plate and tent loosely with aluminum foil.
  • Place pan on medium heat; melt butter until it begins to brown slightly, scraping up any browned bits. Add garlic, and cook until fragrant, about 15 seconds. Add tarragon, swirling to blend. Pour sauce over steaks. Serve immediately.

In this recipe video, I make a Filet Mignon, which is one of my favorite cuts of steak. Filet is the most tender cut, but some complain that it lacks the flavor of some of the other cuts. I actually agree with that...but frankly don't think it's a problem at all, because there are ways to boost the flavor of the more tender cuts...and to help with the tenderness of the more flavorful cuts. For this Filet recipe, we're going to use a compound butter made with tarragon to boost of the flavor and make this steak packed with flavor. Tarragon is the main herb in a Béarnaise sauce, and goes really well with steak. However, you can use this same technique with just about any herb.   • There's come controversy whether the Filet Mignon is the "king of steaks" or not. It's certainly among the priciest cuts, and the most tender, but critics says that with that tender texture, comes a loss of flavor. I say I understand both points of view; I'd also say that having to choose a favorite cut, is like asking a mom to choose a favorite child....so, why not love them all. When I do cook filet mignon, one of techniques I like to employ, is the use of a compound (or Maitre'd) butter. In this version, I use some tarragon to create a tarragon compound butter, and smother it over the steak after it's cooked. Tarragon is the primary herb in a béarnaise sauce, and goes magnificently with steaks. Hope you enjoy it as much as I do!! RECIPE FOR FILET MIGNON WITH TARRAGON BUTTER Ingredients for Filet with Tarragon butter (for 2) 2 8oz to 10oz Filet Mignon steaks 3 tablespoons butter; at room temperature 1 tablespoon finely chopped fresh tarragon Salt & pepper Recipe Overview and Keys to Success To make the best filet mignon with tarragon butter, just make sure to do the following: Cooking the steak is easily the most important part of this recipe. I urge you to check out my Five Rules for the Perfect Steak and How to Pan Roast Steaks (of course you can do this on the grill as well). Make sure you season the filet well; use a very hot pan (or grill) to get a good sear, and watch the doneness For the tarragon butter, I think you need to use fresh tarragon. The texture and flavor of dried just isn't the same, and the compound butter really needs fresh Making Filet Mignon with Tarragon Butter You should make the tarragon butter (up to a day in advance) first Allow the butter to come up to room temperature in a small bowl Finely chop about a tablespoon worth off fresh tarragon - you don't need to be exact with the measurements Combine the chopped tarragon and the butter together and mix until incorporated If you're using immediately, you can simply leave out. If you're making it in advance you can wrap and refrigerate for up to a day, or freeze for a couple weeks; once done we cook the steak Pre-heat your oven to 425 degrees Season your steaks with salt and pepper, and allow them to come up to room temperature prior to cooking Heat a heavy bottomed pan over the burner until it is slightly smoking; or get your grill super hot Coat the steaks in oil (I use olive oil), and lay them in the hot pan; you should hear a very loud sizzle. If you don't, remove the filets and allow the pan to get hotter Allow the steaks to sear on that side without touching them for 3 - 5 minutes; depending on the thickness of the steak with the thicker filets going longer Turn the steaks over, and allow them to sear on the other side (again, no touching) for another 2 - 4 minutes; again depending on the thickness Move the whole pan (filet's and all) into your hot oven, and cook for another 2 - 4 minutes or until the steak are at the desired doneness sFor an average size filet mignon (2 - 3 inches thick) the minimum times will get you to about med-rare As the butter melts and the tarragon gets exposed to the heat from the steak you'll get that beautiful aroma wafting up. 1 large end piece beef tenderloin (about 3 pounds), tied and trimmed
Extra-virgin olive oil
Kosher salt and freshly ground black pepper
Blender Bearnaise Sauce, recipe follows
1 bunch fresh tarragon
2 shallots, minced
1/4 cup champagne vinegar
1/4 cup dry white wine
3 egg yolks*
1 stick butter, melted
Salt and freshly ground black pepper

Steps:

  • Preheat oven to 400 degrees F.
  • Take the beef tenderloin and drizzle with olive oil. Season well all over with plenty of kosher salt and freshly ground black pepper all over. Make sure it is at room temperature before cooking. Place a large cast iron skillet over medium-high heat on the stove top and sear tenderloin all over. Place the whole pan in the oven and roast the tenderloin for 15-17 minutes (depending on how thick your tenderloin is). An instant-read thermometer when inserted into the thickest part of the meat should read 130 degrees F for medium-rare. If you want it medium, cook for a further 3 minutes in the oven. Remove from the oven and tent with foil while you let it rest for 10 minutes before cutting.
  • Make the bearnaise reduction first. In a small saucepan, combine half of the tarragon, shallots, vinegar and wine over medium-high heat. Bring to a simmer and cook until reduced by half. Remove from heat and set aside to cool.
  • Blend yolks and bearnaise reduction together in a blender. With the blender running, add 1/3 of the butter in a slow steady stream. Once it emulsifies, turn the blender speed up to high and add the remaining butter. Add the remaining half bunch of fresh tarragon leaves, season with salt and pepper and give it 1 more buzz. Set aside in a warm spot to hold the sauce.

1/4 cup shallot
1 cup beef broth
1/2 cup white wine
1/4 cup brandy
1/2 cup heavy cream
2 tablespoons butter
2 cloves garlic, chopped
1 lb Baby Spinach
4 beef tenderloin steaks, 1 inch
2 tablespoons Dijon mustard
1 tablespoon tarragon

Steps:

  • heat oil in saucepan, add shallots and cook for 3 minutes.
  • add stock, wine and brandy, reduce until thickened, 5 minutes.
  • add cream, reduce until 3/4 c, set sauce aside melt butter in skillet, add garlic, saute 1 minute.
  • add spinach, cook until wilted, tossing, about 2 minutes, set aside in another skillet heat oil, add tenderloins and cook until med rare, about 5 mins per side (i like mine cooked longer).
  • divide spinach between 4 plates, top each with a filet.
  • add sauce back to pan, stir in mustard and tarragon, add salt& pepper to taste, pour over steaks.
