PAN DE SAL - FILIPINO BREAD ROLLS



Pan de Sal - Filipino Bread Rolls image

The dough for this rolls are made using a bread maker. No more kneading! These rolls taste fantastic, best I've ever had. Bread improver is easy to find in some countries, but if it is not available, you may leave it out.

2 ½ teaspoons active dry yeast
3 ¼ cups bread flour
¾ teaspoon bread improver
¼ cup sugar
¼ teaspoon salt
2 tablespoons margarine
2 eggs
1 cup canned evaporated milk
1 cup canned evaporated milk
½ cup dry bread crumbs

Steps:

  • Place the yeast, bread flour, bread improver, sugar, salt, margarine, eggs, and 1 cup of evaporated milk into a bread machine in the order recommended by the manufacturer. Select the Dough cycle, and press start.
  • When the cycle has ended, remove the dough from the machine, and form into 2 inch balls. Dip each ball in the remaining evaporated milk, then in the dry bread crumbs. Place the rolls on a baking sheet crumb-side up. Cover loosely with a cloth or plastic, and let rise until doubled in size, about 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake rolls for 8 minutes, or until golden brown on the top and bottom.

This recipe is from the Philippines. It makes the best rolls ever! They are wonderful fresh from the oven, with a little butter or some jam. They also freeze very well, so don't worry about any leftovers (if there are any!). Time to prepare the dough and rising time are not included. SOURCE: WWW.

1/2 cup water
1/4 cup evaporated milk
1/2 cup milk
1 egg
1/2 cup sugar
3/4 teaspoon salt
5 tablespoons softened butter
1 tablespoon oil
4 cups flour
3 teaspoons yeast
breadcrumbs

Steps:

  • Combine the water, evaporated milk and milk and heat in the microwave for 35 seconds. Run tap water over the egg for 30 seconds to warm it.
  • Add all ingredients (except the bread crumbs) in the order suggested by the manufacturer.
  • The dough is supposed to be somewhat sticky (when I made this recipe, it was not sticky but it turned out well anyway).
  • Spray two baking sheets with non-stick cooking spray; preheat oven to 375 degrees.
  • When the dough is ready, scoop out a small amount (about the size of an ice-cream scoop) and roll in bread crumbs in an oval shape; place on baking sheet.
  • Cover and leave to rise in a warm place until doubled.
  • Bake for 10 to 15 minutes, until golden brown.

A favorite Filipino breakfast roll, this pandesal is a bit sweet and crusted with fine bread crumbs before baking.

1 teaspoon active dry yeast
1 cup lukewarm water
1 teaspoon white sugar
¼ cup white sugar
⅛ cup vegetable oil
1 teaspoon fine salt
3 cups all-purpose flour, divided
⅛ cup fine bread crumbs, divided, or as needed

Steps:

  • Pour yeast into water. Add 1 teaspoon sugar and set aside to soften, about 7 minutes.
  • Mix 1/4 cup sugar, oil, and salt together in a bowl. Add softened yeast mixture and 1/2 of the flour. Mix well. Add remaining flour little by little, mixing constantly, until dough does not stick to the sides of the mixing bowl.
  • Transfer dough to a lightly floured work surface and knead until smooth. Form into a ball and place in a lightly greased bowl. Brush surface of dough with more vegetable oil and cover with a damp cloth. Let rise in a warm place until doubled in size, about 2 hours.
  • Punch dough down and roll into 2-inch rounds. Cover rolls with 1/2 of the fine bread crumbs and let rise again, 15 to 20 minutes.
  • Preheat the oven to 375 degrees F (190 degrees C).
  • Cut rounds into 1 1/2-inch pieces and arrange on a slightly greased baking sheet, cut-side up. Sprinkle with remaining bread crumbs and let rise until doubled in size, about 30 minutes more.
  • Bake in the preheated oven until slightly brown, 20 to 25 minutes.

  • Measure your ingredients and add them to your bread machine basket in the order specified by the manufacturer. It is usually the wet ingredients first, followed by the dry ingredients.
  • Select the DOUGH cycle. This cycle tells the machine to mix, knead, and let the dough rise. It allows you to shape the dough yourself instead of finishing the bread in the machine in a loaf form. The machine will display the cycle time. Mine is 1:30. Press start.
  • Once the machine beeps after the cycle, take the dough out and place it on a lightly floured clean surface. Gently deflate the dough. Shape it into a long log and cut it into 20-21 portions.
