40g / 3 tbsp butter (, unsalted )
2 garlic cloves (, minced)
1 small onion (, finely chopped)
2 small carrots (, halved, cut into 0.5cm / 1/5" slices)
1/2 cup (125ml) dry white wine ((can skip))
1/4 cup (35g) flour ( (plain / all purpose))
3 cups (750 ml) milk (, any fat %)
2 cups (500 ml) fish stock, clam juice OR chicken stock, preferably low sodium (Note 1)
2 cups potato (, 1.5 cm/ 0.5" cubes (~1 large potato))
1 cup corn (, frozen or canned (drained))
0.5 tsp salt (, plus more to taste)
Finely ground black pepper
600 g/1.2 lb white fish fillets (, skinless, cut into 2cm / 4/5" pieces (Note 2))
1 cup peas (, frozen)
1/4 cup green onions (, halved and finely sliced (garnish))
Crusty bread for dunking

Steps:

  • Melt butter in a large pot over medium heat.
  • Add garlic and onion, cook for 5 minutes until translucent but not golden.
  • Add carrots and stir through.
  • Turn heat up to high and add wine. Stir then let it simmer rapidly until it's mostly evaporated.
  • Add flour and stir for 30 seconds - it will become sludgy!
  • Slow pour in broth while stirring to dissolve paste, then stir in milk.
  • Add potato, corn, salt and pepper. Bring to simmer then turn heat down so it's simmering gently.
  • Cook, stirring every now and then, for 8 minutes or until potato is almost cooked.
  • Add fish and peas, simmer for 3 minutes or until fish is just cooked (should flake easily).
  • Adjust salt and pepper to taste. If soup is too thick, add a touch of water or milk.
  • Serve, garnished with green onions and crusty bread on the side for dunking!

1 quart seafood or chicken stock
1 tablespoon extra-virgin olive oil
4 slices smoky bacon, finely chopped
1 onion, chopped
4 to 5 ribs celery hearts with leafy tops, finely chopped
2 starchy potatoes, peeled and chopped
2 cloves garlic, finely chopped
2 fresh bay leaves
2 tablespoons chopped fresh thyme leaves or 2 teaspoons dried thyme
3 ears corn, kernels removed or 2 cups frozen kernels, defrosted
2 pounds haddock
1 tablespoon seafood seasoning (recommended: Old Bay)
1 cup whole milk
2 cups heavy cream
1 tablespoon unsalted butter
2 tablespoons chopped chives, optional
2 tablespoons chopped dill leaves, optional
1 lemon, zested, optional
Salt and freshly ground black pepper
Oyster crackers, to pass at table
Hot sauce, to pass at table

Steps:

  • Heat the stock in small pot over medium heat.
  • In a large soup pot over medium to medium-high heat, add the extra-virgin olive oil, 1 turn of the pan. Add the bacon and cook for a couple of minutes to brown, add the onion, celery, potatoes, garlic, bay leaves, thyme, and corn. As you chop and add items to the pot, keep the pot covered so the vegetables sweat faster and the heat stays trapped in the pot. Once all of the vegetables are chopped and into the soup pot, add the hot stock and bring to boil, it should happen almost immediately. Season the haddock with the seafood seasoning. Add the haddock, cover the pot and reduce the heat to a simmer. Cook the fish 5 to 6 minutes then uncover and gently break up the haddock into chunks. Stir to combine, then add the milk, cream and butter. Simmer and reduce for 5 to 6 minutes more.
  • While the chowder is reducing, combine the chives, dill and lemon zest in a small bowl as an optional garnish for the soup. Taste the soup and season with salt and pepper, to taste. Remove the bay leaves, ladle the soup into serving bowls and serve with crackers, hot sauce, and the herb-lemon mixture, if desired.

1/2 large yellow onion, finely chopped (about 1 cup)
2 ears corn, kernels cut off, cobs and kernels reserved
1 tablespoon chopped fresh oregano, plus sprigs for garnish
Salt and freshly ground black pepper
1 bay leaf
1 3/4 pounds small red potatoes, quartered
2 ounces small yellow squash, sliced 1/4 inch thick
2 ounces small green squash, sliced 1/4 inch thick
1/2 red pepper, cut into 1/2-inch dice
1 1/2 pounds firm white-fleshed fish fillets, such as red snapper or monkfish, cut into 1 1/4-inch pieces
1/2 cup milk

Steps:

  • In a large saucepan, melt butter over medium heat. Add onion, corncobs, and oregano. Cook until onions are translucent. Add 6 cups water, salt, pepper, and bay leaf. Bring to a simmer, add potatoes, and cook, covered, until potatoes are tender, about 20 minutes.
  • Discard cobs. Remove half the potatoes, and puree with 1 cup of the cooking liquid until smooth. Return puree to pan, and stir well.
  • Raise heat to medium. Add corn and remaining vegetables; cook until tender, about 5 minutes. Add fish; cook 5 minutes more, until fish is done. Stir in milk; adjust seasonings. Garnish with oregano sprigs.

4 ounces bacon (3 thick-cut slices or 4-5 thin slices), chopped
1 ½ cups onion, finely chopped
3 cups red potato, skin-on, diced
¼ cup flour
2 ½ cups lower-sodium seafood broth*
2 cups whole milk
1 tablespoon fresh thyme, minced
½ teaspoon ground white pepper
½ teaspoon salt
1 cup frozen sweet corn kernels, thawed
1 pound skinless cod filets, cut into 1-inch chunks**

Steps:

  • In a large Dutch oven or stockpot over medium-high heat, cook bacon pieces until crisp.. Remove bacon from pan, placing on paper towel to cool. Keep bacon fat in pot; you should have about 3 tablespoons.. Add onions and diced potatoes, sauteing 5 minutes or until onion is tender. Stir frequently.. Add flour and stir constantly, about 1 minute. Stir in broth/juices, reduce heat to low, cover and simmer 10 minutes, or until potatoes are fork-tender. Stir in milk, thyme, pepper and salt, increase heat to medium-high, and stirring constantly, bring to a simmer (do not boil).. Add corn and fish, and cook just until fish is opaque and flakes easily with fork, about 3 to 4 minutes. Stir in cooked bacon just before serving. Serve hot.

WE were tired of the same old vegetable soup and I had on hand some fish that needed to be cooked, so this was the creation of our favorite fish chowder. Occasionally, I enhance it still further by adding another vegetable, such as corn or peas, to add to color and nutrition.

This really is old fashioned! It comes from "The Culinary Arts Institute Encyclopedia of Cooking and Homemaking" which was published in 1940. This wonderful book has been passed down through 4 generations of women in my family. Proof that some of the best stuff is the oldest and simplest.

6 scallions, coarsely chopped
2 stalks celery, coarsely chopped
2 garlic cloves, minced

2 bottles (8 ounces each) clam juice
1 1/2 pounds scrubbed new potatoes, cut into 1/2-inch pieces
1/2 dried bay leaf
1 pound cod fillet, cut into 2-inch chunks
1 cup whole milk
Coarse salt and ground pepper

Steps:

  • In a 5-quart saucepan, melt butter over medium-high heat. Add scallions, celery, and garlic; cook until tender, 2 to 3 minutes. Add flour; stir to coat. Add clam juice and 2 cups water, whisking until smooth.
  • Add potatoes, thyme, and bay leaf. Bring to a boil; reduce to a simmer. Cook until potatoes are tender when pierced with the tip of a paring knife, about 10 minutes.

1 pound cod fillets, cut into chunks

Steps:

  • Melt butter in a 5-quart saucepan over medium heat. Cook and stir onion, celery, and garlic in melted butter until onion is tender, 5 to 7 minutes.

1 large onion, chopped
5 medium potatoes, peeled and diced

Steps:

  • Place bacon strips in a large stockpot over medium-high heat. Cook bacon until crisp, then remove to paper towels to drain. Drain grease from the pot, reserving about 1 tablespoon. Set heat to medium, and fry onions in the reserved bacon grease until tender, about 5 minutes.

1 tablespoon olive oil
1/2 small white onion, minced
1/2 leek (white and pale green parts), halved lengthwise and thinly sliced
1 shallot, minced
1 garlic clove, minced
1 tablespoon peeled and minced ginger
2 cups peeled, seeded, and cubed winter squash, such as kabocha
1 carrot, sliced
1/2 teaspoon mild curry powder
Salt
1 lemongrass stalk, bruised with the side of a chef's knife and halved
1 bay leaf
3/4 cup unsweetened coconut milk
3 1/2 cups Vegetable Broth or water
Mussels
1 tablespoon olive oil
1 shallot, minced
1 garlic clove, minced
1/2 cup white wine
1 pound mussels, cleaned
1 cup diced winter squash, such as kabocha
1 cup diced potatoes
8 baby turnips, peeled and quartered
8 baby radishes, halved
1/2 pound medium shrimp, peeled, deveined, and halved
1/2 pound skinless black sea bass fillet, cut into small chunks
1 ají dulce or other small red pepper, cored, seeded, halved crosswise, and julienned
Salt and pepper
Extra-virgin olive oil
2 tablespoons minced red onion
1 tablespoon finely chopped chives
Aleppo pepper

Steps:

  • Make the chowder base. In a medium pot, heat the olive oil over medium-low heat. Add the onion and cook until softened, about 6 minutes. Add the leek, shallot, garlic, and ginger and cook, stirring occasionally, until the leek is softened, about 6 minutes. Add the squash, carrot, and curry powder, season with salt, and cook, stirring, for a few minutes.
  • Raise the heat to medium-high, add the lemongrass, bay leaf, coconut milk, and broth, and bring to a simmer. Cook the chowder base until the squash and carrots are very tender, about 30 minutes.
  • Meanwhile, make the mussels. In a medium pot, heat the olive oil over medium-low heat. Add the shallot and garlic and cook, stirring often, until softened, about 3 minutes. Increase the heat to high, add the wine, and bring to a boil. Add the mussels, cover the pot, and steam them until they just open wide, 3 to 4 minutes.
  • Using a slotted spoon, transfer the mussels to a medium bowl. Remove the mussels from the shells; discard the shells and any mussels that haven't opened. Strain the broth into a small bowl.
  • Once the squash is tender, discard the lemongrass and bay leaf. Process the chowder base in a blender until very smooth and creamy, then pass through a fine-mesh strainer into a large pot.
  • Bring the chowder base to a simmer, then add the raw diced squash, potatoes, and turnips and cook until tender, about 10 minutes. Add the radishes, shrimp, and sea bass and simmer for about 3 minutes. Stir in the mussels and red pepper. The soup's consistency should be thinner than traditional chowder-add a splash of the reserved mussel liquid, if needed. Season with a touch of salt and pepper. Serve the chowder in bowls, topped with a drizzle of extra-virgin olive oil, the red onion, chives, and Aleppo pepper.

CORN, TOMATO AND FISH CHOWDER



Corn, Tomato and Fish Chowder image

1/2 pound tiny new potatoes
1/2 pound onion
2 teaspoons olive oil
1 1/2 pounds field-ripened tomatoes
Fresh thyme
1 teaspoon ground cumin
4 ears corn
1/2 cup dry white wine
10 ounces scrod or other firm-fleshed fish fillet
1/4 teaspoon salt, optional
Freshly ground black pepper

Steps:

  • Scrub potatoes and cook in water to cover in covered pot, about 10 minutes, until tender.
  • Coarsely chop onion and saute in hot oil in a nonstick skillet.
  • Wash, trim and cut tomatoes in half. Squeeze out seeds. Roughly cut tomatoes. When onions begin to soften, stir in tomatoes.
  • Wash and chop enough thyme to make 1 tablespoon, and stir it into tomatoes with the cumin.
  • Shuck corn and remove kernels from cob with small, sharp knife. Stir into vegetables with wine, and continue to cook.
  • Wash fish and cut into large chunks. Arrange in skillet under the vegetables and cook 5 to 7 minutes, depending on thickness of fish.
  • When potatoes are cooked, drain and cut into bite-size chunks. Stir them into the skillet. Season with optional salt and with pepper, and serve. The potatoes are good mashed into the juices in the dish.

16 ounces frozen corn
3 tablespoons butter, divided
1 1/2 cups onions, diced

1/2 cup green bell pepper, diced
12 ounces chicken broth
1 1/2 cups water
4 potatoes, peeled and diced

3 tablespoons flour

Steps:

  • Rinse the fish and cut into bite-sized chunks. Remove the corn from the freezer to take some of the chill off while preparing the basic chowder. Set both aside.
  • Melt 1 T butter in a large stock pot. Saute the onion, celery and garlic until almost translucent. Add the bell peppers and continue to saute until all are soft.
  • Add the broth, water, potatoes, and seasonings. Bring to a boil.
  • Reduce heat, cover and simmer until the potatoes are tender, about 25 minutes. (If desired, mash some of the potato to additionally thicken the chowder).
  • In a bowl or jar, mix the flour and milk until smooth. Pour this and the evaporated milk into the chowder.
  • Add the fish, corn, and remaining 2 T butter. Bring to a boil, reduce heat and cook, stirring gently, another 5 to 10 minutes until fish is cooked through and chowder is thickened slightly. Remove bay leaf before serving.
  • Garnish with fresh parsley or dill. Pass Tabasco at the table.
