TOMATOES STUFFED WITH BLACKFISH

Steps:
- Arrange the fish on a plate and place in a steamer. Place on the stove and bring to a boil. Steam for six to eight minutes, until the fish just flakes but is still quite moist and barely cooked. Let cool to room temperature and then flake, separating the fillets into one-inch pieces. You should have approximately two cups.
- Cut off the top third of each tomato and press each base lightly to extract a little of the juice and seeds. Using a measuring tablespoon (because it has sharp edges), remove the inside of each tomato base and top. (This flesh, and the ''lids,'' will amount to approximately one and a quarter pounds and can be used in the bean recipe instead of the plum tomatoes.)
- To make the vinaigrette, combine the mustard, red-wine vinegar, Worcestershire sauce, oil, salt and pepper in a bowl and mix well. Add the cucumber, radish, scallion and garlic to the vinaigrette and stir to combine. Gently fold in the fish and coriander so as not to break the fish too much.
- Arrange the tomato receptacles in a gratin dish and stuff lightly with the fish mixture, heaping the filling. Cover with plastic wrap and refrigerate until time for the picnic. (The tomatoes can be stuffed a few hours ahead and refrigerated, but should be eaten at room temperature for best flavor.)

- Combine the first nine ingredients in a bowl; set aside. In a small bowl, combine mayonnaise, lemon juice, salt, dill and pepper; mix well. Pour over rice mixture; toss gently. Cover and chill for at least 1 hour. , Just before serving, cut a thin slice from the top of each tomato, or scallop top with a sharp knife. Scoop out pulp and discard, leaving a 1/2-in. thick shell. - Cut off the top 1/2-inch from the core side of the tomatoes. Using a spoon, scoop out the seeds and flesh surrounding them, leaving the exterior intact in a bowl shape.
- In a small bowl, mix together the olive oil, vinegar, anchovies and garlic. Doing this will help disperse the anchovies evenly with the rest of the mixture.
- In a separate bowl, combine the tuna, cucumbers, parsley, olives, tomatoes, capers, onions and shallots. Season with salt and pepper and dress in the anchovy mixture. Add more olive oil as needed to moisten the mixture, but it should not be wet.
- Divide the filling among the tomatoes and top with some Toasted Garlic and Herb Breadcrumbs and shaved ricotta salata.
- Cut the crusts from the bread and tear it into small pieces. Place in a food processor and pulse until a coarse-crumb consistency is reached. In a large skillet, heat the butter and olive oil together over medium-high heat. Add the breadcrumbs and toss to coat and continue to cook, stirring constantly. When the breadcrumbs begin to brown, stir in the parsley and garlic, and toast until golden brown, an additional minute. Remove from the pan and cool.

- Heat oven to 350°F. Cut thin slice from top of each tomato. Remove pulp, leaving a 1/4-inch wall. Place tomatoes, cut sides down, on wire rack to drain. Turn tomatoes right side up. Sprinkle 4 teaspoons of the bread crumbs over insides of tomatoes.
- Mix 1/2 cup bread crumbs and remaining ingredients except fish; spread on fish fillets. Roll up fillets; place in tomatoes. Place each tomato in ungreased 12-ounce custard cup.

- Preheat your over to 400 degrees.
- Spray a baking dish with non-stick spray.
- Melt butter in a pan over medium heat.
- Add onion and pepper and saute until softened.
- Stir in flour, brown sugar, herbs, salt and pepper to taste, and combine well.

- Cut the tops off of the tomatoes and use a knife to cut around the inside, separating the flesh from the skin. Scoop out the flesh. Place the tomatoes in a small baking dish. - Cut the tops off 4 tomatoes and trim a thin slice off the bottoms so that they will sit upright easily. Hollow out the tomatoes with a spoon. Season tomatoes with salt and pepper. Seed and chop remaining tomato.
- In a bowl, combine chopped tomato, pimentos, onions, zucchini, jalapeno, lemon juice, oregano and cilantro. Sprinkle bread crumbs evenly over the bowl. Add extra-virgin olive oil in a slow stream. Toss mixture to combine and season to taste with salt and pepper. Fill the empty tomatoes and serve.

- A big platter of these tomatoes goes well with grilled meat or fish, or serve them as a starter with cured meats and crusty bread.
- Heat oven to 200C/fan 180C/gas 6. Toast the bread, then remove the crusts and break it up into the food processor to make crumbs. Add the thyme, chives or parsley, oil and garlic, then pulse briefly to mix.
- Halve the tomatoes and put in one layer in a shallow ovenproof dish. Spread each cut side with a little mustard, then sprinkle a little of the crumb mix on the top. Bake for 15-20 mins until the topping is crunchy and lightly browned.

- Cut a slit in steak to create a pocket that is open on one side only. In a cup, mix together 1 tablespoon olive oil and lemon juice; brush over both sides of fish. Set aside.
