Steps:
- Rinse and dry fruit. Remove the zest (the colored part of the skin, not the white pith underneath) using a vegetable peeler. Add zest to vodka and let steep at room temperature for at least 3 days while inverting once or twice a day to mix flavors.
- Citrus Vodka- Grapefruit/Orange/Mandarin/Tangerine/Lime/Lemon Vodka *** Soak zest (the peel with the white removed) for three hours. Remove peel and chill. You can also add a small amount of grated peel for texture and a drop or two of food coloring.
- Pepper Vodka *** Add 2 tbs crushed peppercorns to the vodka. Let stand overnight. Strain through cheesecloth and chill. Again, you may want to leave some of the pepper in the bottle for effect.
- Anise Vodka *** Add 1 tsp anise seeds to the vodka. Let stand 2 hours. Strain through cheesecloth and chill.
- Fresh Ginger Vodka *** Peel a (1 inch) square piece of fresh ginger. Cut 8 thin slices and then cut them in half. Add them to the vodka and steep from 5 to 10 days. Strain if desired.
- NOTE: In the case of simply flavoring the vodka rather than exposing it to heat, you may want to use a more expensive vodka since these are made for sipping slowly and require a smoother alcohol base.

Steps:
- Using a vegetable peeler, remove peel from lemons in large strips, making sure not to remove any of the white pith. Reserve lemons for another use.
- Place lemon peel in a large jar with a lid; add vodka. Cover and let stand at room temperature at least 3 days and up to 1 month. Strain before using.
FLAVORED VODKAS
There are three cardinal rules of drinking in Russia. The first is that you NEVER drink alone. To sit by yourself in front of an open bottle is considered abnormal and antisocial. Even the self professed drunkard abides by this rule, coming together as a small group (na troikh - for three) and chipping in for half a liter and some sausage or a bite of herring. The second cardinal rule of Russian drinking is to NEVER drink without eating something immediately after. The zakuska or "little bite" takes on a literal meaning. The "little bite" should be salty (to incourage more drinking!) such as pickles, olives, or herring. The third rule is to NEVER sip your vodka, and NEVER add ice or tonic. Although you can purchase commercial flavored vodkas, it's more fun to make your own, which you can do so in just a few minutes. I prefer to use a real Russian vodka, such as Stolichnaya. In a pinch I will use Absolut. Make at least two or three flavors and serve in cut crystal or glass decanters. A 750 ml bottle of vodka makes about 16 1 1/2 ounce drinks.

- Strawberry Vodka. Capture the essence of sweet strawberries in a delicious vodka. This infusion should take a little over a week and it's perfect for a variety of cocktails like the sparkling strawberry rosé recipe, pairing the vodka with pear, basil, and sparkling wine.
- Watermelon Vodka. Perfect for summer, watermelon vodka is too much fun. Use it to accent cocktails like the summertime fruit punch lemonade. If you want something a little more dynamic for your barbecue, try a drunken watermelon.
- Pear Vodka. While you can mix up a peartini with store-bought pear vodka, this infusion is easy to do at home. You can use any variety of pears and the finished flavor works really well with other autumn and early winter flavors.
- Lemon Vodka. Lemon vodkas are not very common. When you have a cocktail that calls for it, it may be easier to make it yourself. A recipe like the lavender lemon drop martini is a perfect use for it.
- Apple-Pear-Cinnamon Vodka. This is a fantastic infusion for autumn and can be used in many of your favorite vodka cocktails. It was created for the autumn spiced tonic recipe though you'll quickly find other uses for it as well.
- Spiced Pumpkin Vodka. When those autumn cravings for all things pumpkin set it, consider making your own pumpkin vodka. It's a great use for the meat after carving the year's jack-o-lanterns.
- Tomato Vodka. A unique ingredient, tomato vodka is rather interesting. While one popular vodka brand once made it, it is no longer available. However, it did inspire a DIY version, and you can use that to taste the tempting tomojito.
- Cucumber Vodka. Cucumber vodka is another flavor you might want to take on yourself because it can be hard to find. It's one of the easiest infusions due to the nature of this garden staple and can be ready in just a few days.
- Kumquat Vodka. Not only do you get kumquat-flavored vodka with this infusion, you also get drunken kumquats to eat! This is a fun one to ease the transition from winter to spring and kumquat pairs perfectly with berries.
- Bacon Vodka. Bacon vodka is a thing and it can make some fun cocktails. It's not a true infusion, but more of a bacon fat-washed vodka instead. It is a little more involved and the bacon me angry cocktail proves that your efforts were not wasted.
