FLAX SEED CRACKERS

I heard that if you mix flax seeds with an equal amount of water, soak them, and spread them thin, you'll get a tasty cracker. I heard right! These have a nutty, earthy flavor. They're light, but still sturdy enough for dips and spreads. Experiment with other seasonings if you like.

1 cup raw flax seeds
¾ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon onion powder
1 pinch cayenne pepper
1 cup cold water

Steps:

  • Place flax seeds in mixing bowl. Add salt, garlic powder, onion powder, and cayenne. Pour in water. Stir. Cover with plastic wrap. Refrigerate overnight.
  • Preheat oven to 200 degrees F (95 degrees C). Line a rimmed baking sheeting with a silicone mat or parchment.
  • Transfer soaked flax seeds to prepared baking sheet. Spread out into a thin, flat rectangle, about 1/8 inch thick, using a spatula. Score the rectangle into about 32 small, rectangles.
  • Bake in preheated oven until flax seeds have darkened and contracted slightly, about 3 hours. Cool in oven with door ajar. Break into individual crackers.

These Flax Seed Cracker Crusted Baked Shrimp are crispy, crunchy, easy to make and they are gluten-free. They're a perfectly healthy baked Happy Hour appetizer!

Number Of Ingredients 8

1 pound raw shrimp (peeled, deveined, tails on)
1 4.76 ounce box of Breton Gluten-Free Original with Flax Crackers (roughly 1 and 1/2 cups) (please see note!)
2 egg whites
1 tablespoon melted butter
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
10-12 6-inch wooden skewers

Steps:

  • Preheat oven to 425 degrees F.
  • Prepare a baking sheet by placing parchment paper in the bottom of it. Set aside.
  • Rinse shrimp, drain and pat dry. Thread 3 to 4 shrimp onto each wooden skewer. Set aside.
  • Crush 1 box of Breton Gluten-Free Original with Flax Crackers. The result will be approximately 1 and 1/2 cups of crushed crackers. Season with garlic powder, salt and black pepper and mix well. Pour into a dredging bowl/plate.
  • In another dredging bowl/plate, thoroughly mix egg whites with melted butter.
  • Put each skewer in the egg white/melted butter mixture and cover on both sides. Then, for each skewer, coat them in the cracker mixture until thoroughly coated. Place each skewer on the prepared baking sheet in a single layer.
  • Bake in oven for 10 minutes. Remove from oven, turn each skewer over and place back in oven to bake another 10 minutes on the opposite side.
  • When done, remove from oven and serve immediately with your favorite dipping sauce.

These are so easy and tasty. I store them in an air tight container in the frig. They go good with butter, hummus, and other healthy spreads and dips.

1 1/2 cup(s) unbleached all purpose flour
1/2 teaspoon(s) baking powder ( no aluminum is best )
1/2 teaspoon(s) salt
4 tablespoon(s) cold margarine
1/2 cup(s) milk
1/4 cup(s) flax seed
1/4 cup(s) ground flax seed

Steps:

  • Preheat oven to 325 degrees.
  • Place in the bowl of a stand-up mixer the flax seed, ground flax seed, flour, baking powder, salt, cold margarine.
  • With the paddle attachment, mix on low speed until the mixture resembles a coarse meal.
  • Stir in milk mixing just until a soft ball is formed. Do not over mix.
  • Divide dough into 3rds. ( Chill dough in plastic wrap for 10 mins if you feel it needs it. I have not had to do this unless its hot weather )
  • Lightly flour your work area and rolling pin. Roll out 1/3 of the dough to very thin. Cut into cracker size squares. ( a pizza cutter is great ). Transfer to ungreased cookie sheet and bake for about 20 minutes. Until golden brown for best flavor. transfer to cookie rack for cooling and repeat with the remaining dough.
  • Variations : I have not tried this but you can add 1 tablespoon powdered onion soup mix, Or 1 cup grated cheese, Or 1 tablespoon oregano with 1 cup mozzarella cheese.

1 cup flax seed meal
1/3 cup parmesan cheese, grated
1 1/2 teaspoons garlic powder
1/2 teaspoon salt
1/2 cup water

Steps:

  • Heat oven to 400°F.
  • Mix all ingredients together.
  • Spoon onto sheet pan which is covered with a silicone mat or greased parchment paper.
  • Cover the mixture with a piece of parchment or waxed paper. Even out the mixture to about 1/8 inch. I find a straight edge, like a ruler, works well, though you can use a rolling pin or wine bottle too. The important thing is not to let it be too thin around the edges or that part will overcook before the center firms up. So after you spread it out, go around the edges with your finger and push the thin part inwards to even it up.
  • Bake until the center is no longer soft, about 15-18 minutes. If it starts to get more than a little brown around the edges, remove from oven. Let cool completely - it will continue to crisp up.
  • Break into pieces.

Steps:

  • Preheat oven to 300 degrees F. Line baking sheet with parchment paper.
  • Combine all ingredients and stir until a large ball of dough forms.
  • Spread dough evenly onto parchment-lined baking sheet, about 1/8" thick.
  • Score the dough to form squares.
  • Bake for 30 minutes, rotate baking sheet, and bake an additional 15-30 minutes. Baking time depends on the thickness of your crackers.
  • Crackers are done when they are crisp. Let cool and then break into squares.
