BAKED FLOUNDER FLORENTINE



Baked Flounder Florentine image

Flounder is stuffed with a mixture of spinach and herbs, creating a delicious roll for this tasty flounder florentine recipe.

2 1/2 ounces (5 tablespoons) unsalted butter, divided
1/4 cup minced onion
1 (10-ounce) package spinach, chopped, cooked, cooled, and squeezed dry
1/2 teaspoon oregano
1/2 teaspoon salt, divided
1/4 teaspoon pepper, divided
2 pounds flounder fillets
1/2 cup dry white wine
3 tablespoons all-purpose flour
1/2 teaspoon dry mustard
1 cup milk
Freshly grated Parmesan cheese, for garnish
Paprika, for garnish

Steps:

  • Gather the ingredients. Preheat the oven to 350 F.
  • In a medium skillet, melt 2 tablespoons of butter.
  • Add onion and sauté until translucent.
  • Stir in the spinach, oregano, 1/4 teaspoon salt, and 1/8 teaspoon black pepper.
  • Put about 1 1/2 tablespoons spinach mixture on each flounder fillet; roll up.
  • Put the fish rolls in a baking dish, seam-side down. Add the wine.
  • Cover and bake 25 minutes.
  • Drain and reserve 1/2 cup of the liquid. Keep the fish warm.
  • Melt the remaining 3 tablespoons of butter in a saucepan over medium-low heat; add flour, the remaining salt and the remaining black pepper, and mustard. Add the reserved liquid and milk.
  • Stir until thick and bubbly.
  • Pour the sauce over the stuffed flounder rolls. Sprinkle with Parmesan and paprika just before serving.

Flounder fillets lightly sauteed with a topping of crab meat and buttery crumb topping nestled in a bed of lightly sauteed fresh spinach and a layer of orzo.

1 1/2 lbs flounder fillets (about 4-6 fillets)
3 tablespoons butter (divided)
1/2 teaspoon garlic salt
2 teaspoons fresh parsley, chopped
2 teaspoons olive oil
1 (6 1/2 ounce) can crab, drained
3/4 cup orzo pasta, cooked and drained
3 tablespoons parmesan cheese, grated
1/2 cup Ritz cracker, crushed fine
2 tablespoons butter
5 cups baby spinach leaves
1 teaspoon salt
1 teaspoon pepper

Steps:

  • Preheat oven to 350 degrees F.
  • Cook orzo according to directions and drain. Put into a baking dish 8 X 12. Season it with a bit of the salt and pepper, sprinkle it with the parmesean cheese and 2 t. of the butter.
  • In a non stick frying pan with 1 T. butter sautee the spinach until nicely wilted. Season with a bit of the salt and pepper. Layer this on top of the orzo.
  • Lightly sautee in 2 t. of olive oil the flounder fillets (they don't have to be completely cooked at this point). Place them on top of the orzo/spinach. Top fillets with the drained crab meat. Sautee the crushed crackers in 1 T. butter for a moment, then top the crab meat with the crumb mixture and top with parsley.
  • Bake at 350 degrees F for 15 minute.

1 (3 1/2 ounce) bag boil-in-bag long-grain rice
1/2 teaspoon salt, divided
1/4 teaspoon black pepper, divided
4 (6 ounce) flounder fillets
2 tablespoons all-purpose flour
2 teaspoons olive oil
1/3 cup dry white wine
2 tablespoons fresh lemon juice
1 tablespoon drained capers, chopped
2 tablespoons butter
4 cups fresh Baby Spinach

Steps:

  • Cook rice according to package directions, omitting salt and fat. Place rice in a medium bowl; stir in 1/4 teaspoon salt and 1/8 teaspoon pepper.
  • Sprinkle fish with remaining salt and pepper. Dredge fish in flour.
  • Heat oil in a large nonstick skillet over medium-high heat. Add fish to pan; cook 1 1/2 minutes on each side or until fish flakes easily when tested with a fork or until desired degree of doneness.
  • Add wine, juice and capers to pan; cook 1 minute. Add butter to pan, stirring until butter melts. Remove fish and sauce from pan; keep warm. Wipe pan clean with a paper towel. Add spinach to pan; saute 1 minute or until wilted. Place 1/2 cup rice onto each of 4 plates. Top each serving with about 1/3 cup spinach, 1 fillet and 1 tablespoon sauce.

This is a simple way to cook any mild fish such as flounder, sole or tilapia. Easy but tasty and healthy too.

1 lb flounder or 1 lb sole fillet
2 (10 ounce) packages frozen spinach
1 (1 lb) package fresh mushroom, washed and minced (white, crimini, or baby portabello)
1 small onion, minced
1/4 cup olive oil
1 tablespoon butter
salt
pepper
paprika
1 lemon

Steps:

  • Preheat oven to 350 degrees.
  • Cook the spinach according to package instructions. Drain well and squeeze out any excess water.
  • Heat oil and butter in a large saute pan (ovenproof is good).
  • Add the minced onion and mushrooms. Saute till softened.
  • Add the spinach and stir well till heated through. Add salt and pepper to taste. If using the same pan, separate spinach into the same amounts as you have fish. Usually 4 or 5 sections if the fish is small. Or you can use a pyrex 9 X 18 oven proof dish. Place fish over spinach and sprinkle with paprika. Bake till fish flakes easily. About 30 minutes. Squeeze lemon juice over and serve.

1 (10 ounce) package frozen chopped spinach, cooked according to package directions,drained well and squeezed dry
1 lb fresh small flounder fillets
salt and pepper (to taste)
1 (10 3/4 ounce) can condensed cream of shrimp soup
2 tablespoons dry sherry
1 tablespoon flour
1/4-1/3 cup fresh grated parmesan cheese
2 tablespoons butter, cut into bits

Steps:

  • Spray a 1 1/2 quart casserole dish with non-stick cooking spray.
  • Layer spinach across the bottom of the dish.
  • Place flounder fillets evenly over the top of the spinach and sprinkle with salt and pepper.
  • In a mixing bowl, add the sherry and flour; stir until well mixed; add the soup; stir to combine.
  • Pour over the fish fillets Sprinkle cheese over the top.
  • Place butter bits evenly over the top.
  • Bake at 350° for 25 minutes.
