These decadent peanut butter chocolate chip bars make for one healthy dessert! They don't use any flour, dairy or oils, and have a light, tender, fluffy and cake-like texture!

1 cup creamy peanut butter (preferably unsalted)
1/2 cup mashed banana (about one large banana)
1/2 cup coconut sugar
2 large eggs (beaten)
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
1/4 teaspoon sea salt
1/4 cup dark chocolate chips

Steps:

  • Preheat the oven to 350ºF and line a 9x9 baking pan with parchment paper.
  • In a large mixing bowl, combine the cashew butter, coconut sugar, banana, eggs, baking soda, cinnamon and salt, and stir well to create a smooth, runny batter. Fold in the chocolate chips.
  • Pour the batter into the baking pan and bake the bars for about 20 - 24 minutes, until the top is firm and lightly golden. Cool completely before slicing and serving. Store leftovers in an airtight container in the fridge for up to 1 week.

1.5 cups natural peanut butter (creamy or chunky)
3/4 cup coconut sugar
1/2 cup coconut oil
1.5 cups almond flour
1/2 cup coconut flour
1 tsp baking powder
3/4 cup unsalted roasted peanuts (chopped)

Steps:

  • Preheat oven to 350F and line a 8x8 pan with parchment paper.
  • Combine peanut butter and coconut sugar with a hand mixer in a large mixing bowl until well combined.
  • Add the coconut oil, almond flour, coconut flour, baking powder, and 1/2 cup of the chopped peanuts and stir until combined.
  • Pour mixture into the baking pan and top with the extra 1/4 cup of chopped peanuts.
  • Bake for 25-30 minutes, until top is browned and edges are crispy.
  • This is crucial - you need to let the bars cool completely before cutting or they will fall apart.

  • In a medium bowl, mix the peanut butter, sugar, vanilla and egg until well combined. Spoon 1 tablespoon of the mixture about 1 inch apart onto ungreased baking sheets. Flatten the mounds with the tines of a fork, making a crosshatch pattern on the cookies. Sprinkle coarse salt on top of the cookies.
