¼ cup chopped onion
2 cups shredded Cheddar cheese
1 cup frozen green peas
2 (5 ounce) cans tuna, drained
2 (10.75 ounce) cans condensed cream of mushroom soup
½ (4.5 ounce) can sliced mushrooms
1 cup crushed potato chips

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook pasta in boiling water for 8 to 10 minutes, or until al dente; drain.
  • Preheat oven to 425 degrees F (220 degrees C).
  • In a large bowl, thoroughly mix noodles, onion, 1 cup cheese, peas, tuna, soup and mushrooms. Transfer to a 9x13 inch baking dish, and top with potato chip crumbs and remaining 1 cup cheese.
  • Bake for 15 to 20 minutes in the preheated oven, or until cheese is bubbly.

Coarse salt and ground pepper
3/4 pound tubetti or elbow macaroni
1 cup panko (Japanese breadcrumbs)
1/2 ounce Parmesan, grated (2 tablespoons)
2 tablespoons plus 2 teaspoons extra-virgin olive oil
1 yellow onion, diced small
3 tablespoons all-purpose flour
2 1/2 cups low-sodium chicken broth
1 1/2 cups whole milk
2 cans (6 ounces each) solid light tuna packed in water, drained and flaked
1 cup frozen peas, thawed

Steps:

  • Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.
  • In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.
  • Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring frequently, until sauce is thickened, about 8 minutes. Stir in pasta, tuna, and peas and season to taste with salt and pepper.
  • Transfer tuna mixture to a 9-by-13-inch baking dish and top with panko mixture. Bake until sauce is bubbling and crust is golden, 17 to 20 minutes. Let cool 10 minutes before serving.

Steps:

  • Preheat oven to 425°.

So I am putting it on here for safe keeping :) I don't always use the potato chips, but have also used "flavored" ones sometimes. Nothing fancy, just good old comfort food.

1 tablespoon margarine or 1 tablespoon butter
1 medium onion, chopped
1 (10 3/4 ounce) can condensed cream of mushroom soup
1 1/4 cups milk
1 teaspoon Worcestershire sauce (optional)
1/2 teaspoon prepared mustard
1/4 teaspoon pepper
1 (6 ounce) can tuna, drained well
1 cup frozen peas
8 ounces egg noodles, cooked 6 minutes and drained well (about 5 cups)
2 cups shredded cheddar cheese
1/2 cup of crushed potato chips (optional)

Steps:

  • Cook noodles for 6 minutes, pour noodles and boiling water over frozen peas in colander, set aside to drain well.
  • In 2-quart saucepan melt butter over medium-high heat. Add onion; cook, stirring, 3 minutes.
  • Stir in soup, milk, Worcestershire sauce, mustard and pepper; stirring constantly, bring to a boil and then remove from heat.
  • Stir in cheese until smooth, then add tuna.
  • In 2-quart casserole combine tuna mixture, egg noodles and peas. Sprinkle with potato chips.
  • Bake in 350°F oven 25 to 30 minutes or until heated through.

7 ounces crushed potato chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch glass pie dish.
  • In a mixing bowl, combine soup, tuna, and 1/4 of the potato chips. Mix thoroughly. Pour into the prepared pie dish. Cover the top with remaining potato chips.

  • Bring a large pot of lightly salted water to a boil. Cook egg noodles in the boiling water, stirring occasionally until cooked through but firm to the bite, about 5 minutes. Drain.

1-3/4 cups uncooked wide egg noodles
6 teaspoons reduced-fat butter, divided
4 teaspoons all-purpose flour
1/4 teaspoon salt
Dash pepper
3/4 cup 2% milk
3 ounces reduced-fat cream cheese
1 pouch (2-1/2 ounces) albacore white tuna in water
2 tablespoons diced pimientos
2 teaspoons minced chives
2 slices Muenster cheese (3/4 ounce each)
2 tablespoons soft bread crumbs

Steps:

  • Cook noodles according to package directions. Meanwhile, in a small saucepan over medium heat, melt 5 teaspoons butter. Stir in the flour, salt and pepper until blended; gradually add milk. Bring to a boil over medium , heat; cook and stir for 1-2 minutes or until thickened. Reduce heat to medium-low; add the cream cheese, tuna, pimientos and chives. Cook and stir until cheese is melted., Drain noodles. Spread 1/4 cup tuna mixture into a 3-cup baking dish coated with cooking spray. Layer with half of the noodles, 1/2 cup tuna mixture and one slice of cheese. Repeat layers., Microwave remaining butter on high, stirring every 30 seconds; stir in bread crumbs. We have been eating this for years. I think I got the recipe from a very old (1960's) Campbell's soup cookbook. It is one of those that you just don't forget, because you will never have a Tuna Casserole as good as this.

Steps:

  • Cook macaroni according to package directions.
  • Drain oil from tuna in a separate bowl.

½ cup sour cream
½ cup milk, divided

¼ teaspoon garlic powder, or to taste
⅛ teaspoon seasoned salt (such as LAWRY'S®), or more to taste

2 cups shredded mozzarella cheese

Steps:

  • Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
  • Mix cooked noodles with tuna, sour cream, 1/4 cup milk, onion soup mix, Worcestershire sauce, garlic powder, seasoned salt, salt, and pepper. Taste and adjust seasonings as desired.

This is one of my family's favorite quick work night meals - I used to make this as a teen for my folks and have continued with my family. My kids (and hubby) request this one!! Fun ways to change it up are to bake crescent rolls in a ball/roll filled with cheese on top of the casserole (I like to start them out first so the bottoms cook a bit first), or top the casserole with fried onions, crushed potato chips (a great use for those old chips in the cupboard), etc. I modify the amounts depending on what I have in the pantry - but it is always great!!!
