FRANKENSUSHI
When I think Frankenstein's monster I think Halloween. Give this guy a try this year they are the cutest! These rolls are so fun to make and even more tasty. I love getting creative with the different faces I can make. You can make half as Frankenstein's monster and half plain, with the nori on the outside, to cut your prep time down. Mixed up on the plate the effect looks great. Keeping this fun little appetizer veggie is a super plus. Not only do you not need to worry about raw fish sitting on a counter all night, but it keeps things veg-friendly for all of your guests.

- In a small saucepan, combine rice, water and green food coloring; let stand 30 minutes. Bring to a boil. Reduce heat; simmer, covered, until water is absorbed and rice tender, 10-12 minutes. Remove from heat; drizzle with seasoned vinegar. With a wooden paddle or spoon, stir rice with a slicing motion to cool slightly. Cover with a damp cloth to keep moist., Place half the rice on a sushi mat or clean dish towel topped with plastic wrap. With moistened fingers, press rice into an 8-in. square. Top with one nori sheet. Set aside eight carrot matchsticks. Arrange half of cucumber, avocado and remaining carrot about 1-1/2 in. from bottom of nori sheet. Roll up rice mixture over filling, using mat or towel to lift and compress; remove plastic wrap as you roll. Remove mat or towel. Using wet, sharp serrated knife, slice roll into four pieces. Repeat with second nori sheet and remaining rice, cucumber, avocado and carrot., Shred remaining nori sheet to resemble hair strands; with wet hands, press strands onto rice. Halve reserved carrot matchsticks; press two into each roll to look like bolts., Add black food coloring to prepared wasabi; pipe facial expressions on sushi pieces. Refrigerate until serving. If desired, serve with soy sauce, pickled ginger slices and additional wasabi.

His and hers Halloween shakes (one mint, one vanilla) are made in a single batch, then dressed up for the holiday in this ultimate trick-or-treat.

- For the Frankenshake: Melt the chocolate chips in a small bowl in the microwave for 30 seconds. Stir, then heat until fully melted, about another 30 seconds.
- Tip a pint glass or beer stein on its side. Using a toothpick, skewer or clean paintbrush, draw a mouth and eyes on the inside of the glass with the melted chocolate. (Add a few stitches to resemble a Frankenstein face.) Stand the glass upright and brush chocolate on the rim of the glass and about a quarter of the way down the outside of the glass in a zig-zag pattern to resemble the hairline. Press the crushed chocolate wafer cookies on the chocolate on the outside of the glass to coat. Put 2 dollops of chocolate on the sides of the glass where the bolts will be, then stick 2 of the chocolate-covered caramels on top and press to adhere. Place the glass in the freezer until the chocolate has hardened, about 10 minutes or up to overnight.
- For the Bride-of-Frankenshake: Melt the candy melts in a small bowl in the microwave for 30 seconds. Stir, then heat until fully melted, about another 30 seconds.
- Tip a pint glass or beer stein on its side. Using a toothpick, skewer or clean paintbrush, draw red lips. Draw eyes on the inside of the glass using the melted chocolate. Stand the glass upright and brush chocolate on the rim of the glass and about a quarter of the way down the outside of the glass to resemble the hairline. Press the crushed chocolate wafer cookies on the chocolate on the outside of the glass to coat. Put 2 dollops of chocolate on the sides of the glass where the bolts will be, then stick the remaining 2 chocolate-covered caramels on top and press to adhere. Place the glass in the freezer until the chocolate has hardened, about 10 minutes or up to overnight.
- Meanwhile, make the milkshakes. Blend the ice cream and milk in a blender until smooth. Pour half into the Bride-of-Frankenshake glass and chill in the freezer. Add the peppermint extract and green food coloring to the remaining milkshake in the blender and blend until just combined. Pour into the Frankenshake glass. Cover the top of each glass with the remaining crushed wafer cookies. Swirl the whipped cream on top of the Bride's glass. Serve immediately.

- Slice and carve the carrot to resemble Frankenstein's hair; boil the carrot in water and dashi broth for 5-10mins or until tender.
- Mix seasoned rice vinegar in a bowl of cooked rice.
- Sprinkle matcha powder over the rice; mix until the rice has a green tint.
- Lay a seaweed sheet over a bamboo mat; add another partial sheet to extend it; using a damp finger (dip in water) to adhere them together; approx 5"x 10" (depending on how large you want to make the head).
- Lay down the carrot as the first layer on the middle of the nori sheet.
- Place the green-tinted rice over the carrot to create the forehead.
- Wrap each of the 2 mozzarella sticks with a sheet of nori (creating a dark outline for the eyes); use a damp finger to seal the nori; and place them over the layer of rice.
- Add another layer of rice.
- Slice a cooked hot dog horizontally (the mouth); then place on top of the rice.
- Add a final layer of rice.
- Enclose with the seaweed and tighten the bamboo sheet; applying gentle pressure to seal the head/face together.
- Using a sharp knife, cut the sushi roll into 5-6 even pieces.
- Serve with soy sauce and wasabi.

Steps:
- Cook the rice according to directions of the bag. Put the kombu into the water with the cooking rice to flavor it.
- Cut the bamboo sprouts and fried tofu slices into small strips.
- When rice is done cooking, put it in a big bowl and cool it by mixing it and fanning it with a fan or magazine.
- Once the rice has cooled a bit, add the vegan sugar, vinegar, and salt and continue to mix and fan it.
- Lay a piece of the nori paper out on a bamboo sushi roller and spread a thin layer of rice out on the nori.
- Lay the bamboo shoots and sliced fried tofu in a horizontal row on top of the rice layer.
- Roll and cut into bite size pieces with a wet knife.
- Repeat steps 5, 6, and 7 with the rest of the nori. Serve with a small amount of pickled ginger on the side and enjoy!
