FAST AND EASY - FRANKS AND BEANS PASTA
It is the week between Christmas and New Year's Eve and I have very little in the house. So, I have to be creative with things I have in the cupboard. This is what I came up with tonight. It could very easily be made a lot lower in fat by using reduced fat hot dogs and cheese. I used whole wheat pasta which is also another easy way to sneak in a it of extra nutrients.

Steps:
- Put pasta into boiling water to cook for the time suggested on the packet.
- Meanwhile fry off the onions and mushrooms in a pan until the onions just start to turn brown.
- Add chopped hot dogs to the pan and cook, stirring frequently, until the hot dog bits are heated through.
- Add the beans and heat through.
- Stir in the can of soup and the spices and stir until the soup is heated through.
- Drain the cooked pasta and add to the pan. Toss until the sauce mixture has fully coated the pasta.
- Put into bowls and sprinkle with cheese.

FRANKS NOODLE CASSEROLE

Steps:
- 1. Cook noodles in boiling salted water and drain. Mix with butter and peas. Place in a greased casserole dish. Mix the franks, soup, milk and sour cream together. Pour over top noodles.
- 2. Bake at 400 degrees for 25 minutes.

Steps:
- Heat a 10-inch straight-sided skillet over medium-high heat. Add the olive oil and continue to heat. Pierce each sausage link twice with the tip of a pairing knife. Add the sausages to the hot pan and brown evenly on all sides, 6 to 8 minutes. Remove the sausages to a plate to cool slightly. When cool enough to handle, slice each link on the bias into 1/2-inch pieces. Set aside.
- Reduce the heat to medium. To the hot skillet, add the bacon. Cook until it is brown and crisp. Add the garlic and onions and cook, stirring regularly, until the onions begin to soften, about 3 minutes. Add the tomatoes and cook, stirring occasionally, until the tomatoes begin to blister and break down, about 10 minutes. Add the paprika, 1/2 teaspoon salt and the pepper and cook for another 2 minutes. Add the chicken broth, drained beans, thyme and rosemary and allow the mixture to return to a simmer. Nestle the sausages back in and add any juice that may have collected on the plate. Allow the mixture to cook until the sausages are cooked through, about 10 minutes.
- Meanwhile, in a pot of rapidly boiling salted water, cook the pasta for 8 minutes. Drain and immediately pour the cooked pasta into the bean mixture to finish cooking, about another 3 minutes.

- 1. In a large skillet, melt the butter or margarine.
- 2. Add the frankfurters, onion, and the dried basil or oregano to the skillet.
- 3. Lightly brown the franks, and cook until onions are tender.
- 4. Add the soup, milk and tomatoes; stir until well mixed and heated through.
- 5. Add the cooked noodles, and finish heating; stirring occasionally.
- 6. Sprinkle the dried parsley on top just before serving.
- 7. *Note: You can substitute hot dogs for the franks in this recipe.
