1 Tablespoon yeast

HOMEMADE BREAD

Homemade Bread image

Look no further for the BEST and simplest homemade Bread recipe made with just six simple pantry ingredients! It's the perfect white bread for sandwiches and it freezes well too!

Provided by Lauren Allen

Categories     Appetizer     side course

Time 2h45m

Number Of Ingredients 6

2 cups warm water (105-115 degrees)
1 Tablespoons active dry yeast*
1/4 cup honey or sugar
2 teaspoons salt
2 Tablespoons oil (canola or vegetable)
4 - 5 1/2 cups all-purpose or bread flour*

Steps:

  • Prepare the dough: In a large bowl or stand mixer add the yeast, water and a pinch of the sugar or honey. Allow to rest for 5-10 minutes until foaming and bubbly. (This is called "proofing" the yeast, to make sure it is active. If it doesn't foam, the yeast is no good, and you need to start over with fresh yeast).
  • Add remaining sugar or honey, salt, oil, and 3 cups of flour. Mix to combine.
  • Add another cup of flour and mix to combine. With the mixer running add more flour, ½ cup at a time, until the dough begins to pull away from the sides of the bowl. The dough should be smooth and elastic, and slightly stick to a clean finger, but not be overly sticky. Add a little more flour, if needed.
  • Knead the dough: Mix the dough for 4-5 minutes on medium speed (or knead with your hands on a lightly floured surface, for 5-8 minutes).
  • First Rise: Grease a large bowl with oil or cooking spray and place the dough inside, turning to coat. Cover with a dish towel or plastic wrap and allow to rise in a warm place* until doubled in size, about 1 1/2 hours.
  • Spray two 9x5'' bread pans generously with cooking spray on all sides. (I also like to line the bottom of the pans with a small piece of parchment or wax paper, but this is optional.)
  • Punch the dough down well to remove air bubbles. Divide into two equal portions. Shape each ball into long logs and place into greased loaf pans.
  • Second rise: Spray two pieces of plastic wrap with cooking spray and lay them gently over the pans. Allow dough to rise again for about 45 minutes to one hour, or until risen about 1 inch above the loaf pans. Gently removing covering.
  • Bake: Preheat oven to 350 F. Bake bread for about 30-33 minutes, or until golden brown on top. Give the top of a loaf a gentle tap; it should sound hollow.
  • Invert the loaves onto a wire cooling rack. Brush the tops with butter and allow to cool for at least 10 minutes before slicing.
  • Once cool, store in an airtight container or bag for 2-3 days at room temperature, or up to 5 days in the refrigerator.

FREE FORMED BREAD

Free Formed Bread image

One of the greatest pleasures in life is digging into a loaf of freshly baked bread. The smell, the warmth, and that soft texture of this Free Formed Bread is so good and comforting!

Provided by Jake

Categories     Side

Time 3h40m

Number Of Ingredients 4

3 cups of lukewarm water
1 ½ tablespoons of granulated yeast (about 2 packets - any brand/style will do)
1 ½ tablespoons of coarse salt
6 ½ cups of unbleached all-purpose flour

Steps:

  • Add the yeast and the salt to the warm water (about 110 degrees F) in a large bowl. You don't need to mix it or wait for it to dissolve.
  • Add the water. No need to sift or pack the flour. Simply scoop it up, sweep level, and add all of it to the water mixture.
  • Use a wooden spoon or your (very wet) hands to mix in the flour. It's not necessary to knead the dough. Just mix it together until it's uniformly moist.
  • Cover the bowl and allow it to rise in a warm spot until it's about twice its size. I cover it with a hand towel and put it in the sun. This will take about 2 hours.
  • It's recommended that you allow the dough to then sit in the fridge for a few hours, but if you're like me, you're ready to eat. Cut off a grapefruit sized chunk of dough and with floured hands, stretch and mold it into a ball. Again, no need to knead - this shouldn't take more than 60 seconds.
  • Place the ball of dough onto a heavily floured surface you can later use to slide the dough into the oven (like a pizza peel). Flour the top of the ball and use a knife to cut a couple of slices into the top. Allow the dough to sit and rise for 40 minutes. After 20 minutes, turn the oven on to 450 degrees F (230 degrees C) and place a baking surface on the middle rack (a baking stone works best but a cookie sheet will work).
  • After 40 minutes, slide the dough on to the baking surface. The trick is to add a pan with 1 cup of water to the bottom rack, which will help bake the bread with steam, making it soft in the middle. Bake for about 30 minutes or until the crust is golden brown.
  • Keep the rest of the dough covered or in a freezer bag in the fridge until you're ready for another loaf (it will keep for well over a week). The initial dough making is the tedious part. However, when you're ready for a loaf, cut off a chunk of dough, spend 60 seconds to roll the dough into a ball, let rise for 40 minutes and cook for 30. You'll have fresh bread for 60 seconds of work.

  • Nut Butter Bread. This recipe is super straightforward and only requires five ingredients. If you're new to the baking world, this is where to start. Since it's so simple, you can take it to the next level with a range of additions.
  • Pão de Queijo. Fear not picky eaters, the name of these tasty morsels may be complicated, but their flavor is just plain delicious. This recipe uses tapioca flour, a starch extracted from cassava root, that you may recognize from those pearls in your bubble tea.
  • Coconut Flour Banana Bread. Coconut flour is the star of the show in this recipe. It adds another dimension to the banana flavor and perfectly complements the chocolate chips.
  • Cloud Bread. It's fitting that this recipe comes in at number four on the list because it only takes four ingredients to make (including spices). These fluffy slices can be flavored with different spices and are perfect for low-carb wraps and flatbread sandwiches, or eaten fresh out of the oven.
  • Microwave Paleo Bread. Somehow, these recipes just keep getting easier and easier. This recipe can be made in under two minutes. It's the perfect alternative to keep you from reaching for that slice of white bread that has almost no nutritional value.
  • Grain-Free Sweet Potato Flatbread. The sweet potato in this recipe makes the bread incredibly moist, dense, and satisfying. The rosemary and thyme lend savory flavor to the sweet potato, creating the perfect balance.
  • Flourless Chocolate Cake. It's about time for a more decadent "bread" recipe. This flourless chocolate cake is gluten-free, dairy-free, and sugar-free, and thus, guilt-free.
  • Grain-Free Sandwich Bread. This recipe will bring you back to the basics. If you're looking to change as little as possible about your daily lunch routine, you can just switch out a slice of this paleo-approved loaf for your usual sandwich bread.
  • Herbed Focaccia Bread. Focaccia, with its light texture, bold Italian flavors, and olive oil finish, is by far my favorite type of bread. It's extremely versatile, but I personally love to dip it in soup.
  • Gluten-Free, Sugar-Free Coffee Cake. I thought it would be best to end on a sweet note... The great thing about this coffee cake recipe is that it's gluten-free, sugar-free, and dairy-free.

  • In a large bowl, dissolve the 1 TBSP of the sugar in warm water and then stir in yeast. Allow to proof until yeast resembles a creamy foam, about 5 minutes.
  • Mix remaining sugar, salt and oil into the yeast. Mix in flour one cup at a time. Dough should be tacky and clean the sides of the bowl save for a small part at the bottom. Too much flour added in yields a dry loaf of bread, so if you're worried you added too much, add a bit more hot water, until you get the correct consistency.
  • Knead dough for 7 minutes. Place in a well oiled bowl, and turn dough to coat. Cover with a damp cloth. Allow to rise until doubled in bulk, about 1 hour.
  • Punch dough down. Knead for 1 minute and divide in half. Shape into loaves and place into two greased 9x5 inch loaf pans. Allow to rise for 30 minutes, or until dough has risen 1 inch above pans.
