FREEZER MEATBALLS FOR MEAL PREP

Number Of Ingredients 8

300 g frozen chopped spinach
3 lbs lean ground beef
1 1/3 cups bread crumbs *see note
3 eggs
2 tbsp beef bouillon paste (I use the Better Than Bouillon brand)
1 tbsp basil
9 cloves garlic (minced)
1 tsp salt

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
  • Prep two baking sheets by lining with tin foil and (if available), top with an oven safe cooling rack.
  • Defrost the chopped frozen spinach in a large bowl. Drain away most of the resulting moisture.
  • Add the remaining ingredients. Mix well. I recommend taking off those rings and getting in there with your hands!
  • Shape into balls, about 1 inch in diameter. Place on the prepared baking sheets.
  • Bake for 15 minutes. Rotate pans and bake another 5 minutes. If you made larger meatballs, they will likely need to bake longer.
  • Allow to cool on the pans then transfer to medium sized freezer ziplock bags. I like to freezer by the two dozen (yes, that means you'll have 4 leftover... don't worry... you're going to want to taste a few when they come out of the oven anyway!)
  • If you want to keep all the meatballs in one large bag (or other freezer safe container), then freeze on the sheetpan so that they don't stick together, then transfer to the bag/container for freezer storage.

A wonderful all-purpose meatball to use in a variety of recipes! Easy to make, and with ingredients usually on hand. The yield is based on 1-1/2" meatballs, but you can make them smaller. I get about forty-eight 1" meatballs out of this same recipe.

1 egg, beaten
3/4 cup soft breadcrumbs (about 1 slice bread)
1/3 cup milk
1 teaspoon Worcestershire sauce
1/4 teaspoon onion powder
1/4 teaspoon salt
1/4 teaspoon garlic powder
1 1/2 lbs ground beef (I prefer 90% lean or higher)

Steps:

  • Combine all ingredients except beef.
  • Mix in beef well, and shape into meatballs.
  • Place all on single layer in pan.
  • Bake 20 minutes at 350.
  • Remove and drain on paper towels, and let cool 15 minutes.
  • Put in freezer bag or freezer container or use immediately.

  • In a large skillet, heat avocado oil on medium heat. Then add the onion and celery. Sauté for 4-5 minutes, until the onions are a little translucent. Add the garlic for 1 minute to cook and remove from heat.
  • In a large bowl combine the beef, egg, onion mixture, oat flour, Worcestershire sauce, sea salt, pepper, and allspice. Mix well and form meatballs with your hands (about 2-3 tbsp mixture for each meatball).
  • To freeze meatballs, line a baking sheet with parchment paper, and as you roll the balls out, place them on the parchment-lined baking sheet, making sure that they do no touch. Freeze the meatballs, and when fully frozen, transfer them into a freezer bag. Label it and date it, and your meatballs are good for up to 6 months!
  • To cook from frozen: Frozen meatballs go great from the freezer into a crockpot. Top with your favorite sauce and cook on low for 5-6 hours. I find frozen meatballs actually hold together better in the crockpot than fresh. You can bake them for 30-35 minutes at 375 degrees F until fully cooked as well.

  • Add all ingredients to a large mixing bowl. Using your hands (you can use gloves), combine everything together until just mixed. Cover and place in the fridge for 20 minutes to an hour.
  • Preheat the oven to 375F if cooking in the oven. Line a sheet pan with aluminum foil. Use a 2 tablespoon volume cookie scoop to form the meatballs and place the amount you want to cook directly on the sheet pan, about one inch apart (I usually cook half and freeze half). If you use a smaller scooper, reduce cooking time by a couple minutes.
  • Place fresh meatballs into the oven and cook for 20-23 minutes, or until the internal temperature reaches 160F.
  • Place fresh meatballs into the air fryer basket in a single layer, not touching each other. Air fry for 9-12 minutes, or until the internal temperature reaches 160F.
